OIAJ & Time to De-Stress

This morning, I had Oats In a Jar.

And they were good.


Post-stirrage goodness..nom nom nom 🙂

Into the pot went:

  • 1/2 cup oats
  • 1 cup unsweetened vanilla almond milk
  • melted banana mixed in 🙂

Into the jar went:

  • steaming oats
  • 2 tbsp. almond buttah from the jar
  • a handful of raisins
  • cinnamon (obv)

I can’t get enough of the banana-nut-butter oats combo. I’ve been having it every morning for the last week, and it has not once gotten old (way to have some variety, Katelyn!). It’s fine.

If you haven’t tried Katie’s melted banana trick, hon, you are missing out. Try it. Now. (not to be bossy or anything 😉 )

Time to De-Stress:

You know that feeling where there’s just so much to do, but somehow not enough time in the day to do it? Or that weighted-down feeling you carry around when you’re just stressed?

Hello, high school!

I’ve been feeling ultra stressed lately, so I’ve been looking for some ways to de-stress. Such as:

Tea 🙂


Yoga (especially Power Vinyasa! still have to try hot yoga)



(yes, I know it’s not a yoga picture, but it came up in my Bing search and it made me laugh! 😉 )

Hot chocolate 🙂 The reason for the season, lovies!



Runnin’ runnin 🙂 And spinning!



Eating peanut buttah noodles while catching up with friends..



…and more tea.



I am such a tea girl. I always have some tea in my favorite thermos! My favorites currently are Yogi teas and Tazo teas – especially their Refresh, Honeybush, and Vanilla Rooibos varieties. Keeps me nice and warm 🙂


And baking! Especially these Oatcakes:

Expect a recipe soon! They were to die for – reminiscent of my childhood and perfectly moist. They were delicious by themselves (I scarfed them down, notabigdeal), but I discovered they were even more out-of-this-world with some good pb and apple butter. Mmm 🙂

What really goes on in a classroom

Every Tuesday night, I spend two hours of my valuable time in Driver’s Ed lecture. From 7 to 9 at night. Awesome.

Sure, you’d think this class is super important and we’d talk about important things such as: how to not crash your car, what road signs mean, and how to, well…drive. But not so much. We spend maybe 15 or 20 minutes actually talking about important things, the rest we spend talking amongst ourselves. I spend it doing my schoolwork that I’ve learned to call “busywork”, but you know, that’s a different story 🙂

When we are talking as a class, it usually goes along the lines of this:

  • How much you can get away with drinking and still not crash your car
  • How to manipulate car salesmen into giving you cheaper prices
  • The easiest place to take your road test
  • How to make a paper airplane
  • How to get away from a designated driver that isn’t so designated anymore
  • Why technology is slowly ruining our society
  • What BAC you can legally get away with
  • Your BAC after using mouthwash
  • The meaning of life

Okay, scratch that last one. But you get the idea.

And in regards to my AP Bio class (which I love to death – go Doc Smith! 🙂 ), today included a similar (but not quite as extensive) list. It went along the lines of:

  • “Doc Smith, can men have babies?”
  • “Doc, can a baby be born with like..girl parts and dude parts?”
  • “So even though I’m a guy, I could be born looking like a girl?”
  • “So you’re telling me my balls could shrivel up?” (followed by uncomfortable squirming)

That’s what happens when our class talks about genetics. Totally entertaining, though it makes our class sound super smart 😉

The one in Bio today definitely is at the top of my list at the moment; definitely one of the more light classes of the day.

We have a mouse problem.

This is not a joke. I repeat, this is not a joke.

I may love animals and think that itty bitty mice can occasionally be cute, but we have mice that are taking my Mary’s Gone Crackers out of the box…through the front panel.

I think I may have a freaky genius on my hands.

Yep, total freaky genious.

Then, during my run two days ago, I spotted an itty bitty baby mouse on a glue trap we had set out (I was not happy with my parents for this), and it was still breathing. I was nearly in tears, lovlies 😦 I couldn’t handle it. Then, I saw another one on the other side of my basement! Let’s just say it was a rough morning.

Plus, we learned that we have a family of mice in our house! Later that night, CKMom found another our trash can! And caught it by hand (accompanied by some screaming, but it’s notabigdeal). What a champ 🙂

But despite all that, this morning was loooovely. I was hungry right when I woke up (I usually never am), and all I wanted was peanut butter and bananas. Nothing else. So I whipped up this bowl of yum 😉


Peanut Buttah and Banana Oats



  1. Bring liquid to a boil, then reduce to medium heat and add oats. Cook for about 5-10 minutes, stirring occasionally.
  2. When oats are about to be done cooking, mash up the banana and microwave for 15-30 seconds, until hot, mushy, and smelling really good 🙂
  3. Add banana to oats before they are fully cooked, and combine.
  4. When oatmeal is done cooking, cover and remove from heat for a few minutes.
  5. Serve and top with peanut buttah! 🙂

IMG_3079This was too good. And super simple. Sometimes simplest is best 🙂 I enjoyed this as breakfast in bed (while reading VegNews, obvs), which was so nice considering I’ve been feeling under the weather and had to stay home today.

Not too long after, I got hungry again and decided it was time to lose my Green Monster virginity. (gasp!)

Honestly, I don’t know why I’ve never made one before, but it was time. Plus, I felt like I needed some greens!

Of course, I had to roll In-A-Bowl style. I don’t do smoothies in a glass – as I’ve mentioned before, it would be gone in about T-minus .049712301 seconds.

IMG_3084I enjoyed mine straight outta the bowl, as per usual. And as you can see, it was slightly overflowing..just the way I like it 🙂

IMG_3083Sometimes my favorite foods are the ugliest ones 🙂 I love how the seeds in the berries add a yummy crunch to the smoothie. This was the perfect snackety-snack!

It got in mah belly.

Brunchfest of Champions

This morning I woke up to the smell of (nothing) cooking, and thought to myself..I want pancakes today! But not just any pancakes..

Brownie Batter Pancakes.




In the words of Austin Powers,

Yeahhhhh baby!

Brownie Batter Pancakes

Adapted from Chocolate-Covered Katie



  1. Mix your dry ingredients, then heat your pancake-makin’ pan on medium.
  2. Add in wet ingredients and mix mix mix!
  3. This is a good time to add in whatever else you want in your pancakes: hunks of chocolate, chocolate chips, cocoa powder (more if you already used it!), cinnamon, extracts of your choice, raisins, cacao nibs, chopped dried fruit, chopped up apples, berries…the list goes on and on!
  4. Then, pour your batter into pancakes sized to your liking and flip when little bubbles appear.
  5. Enjoy with whatever toppings you like!

I had mine topped with loads of peanut butta, apple spread (of course, the apple spread has to go on last for ultimate pb-spreadage), cacao nibs, and my usual mix of bluebs, rasps, blackburries, and chopped strawbs.

Aka, Reese’s Berry Brownie Batter Pancakes! Well, isn’t that a mouthful 😉


Then, since CKMom slept in a little, I offered to make her a lovely Sunday Brunchfest too! Since she loves bananas, this was what came immediately to the CKBrain:


Banana Peanut-Butter-Cup Oats



  1. Bring oats and milk to a boil, then reduce to a simmer and stir occasionally.
  2. When oats are about done cooking, mash banana and microwave for about 15 seconds. Mix in with oats immediately, while still cooking. (p.s. this is CCK’s amazeballs melted banana trick! Thanks, Katie Smile)
  3. Continue to cook for another minute or two until milk is almost completely absorbed, then cover and remove from heat.
  4. In about 2-3 minutes, serve and top with peanut butter and a few sprinkles of cacao nibs.
  5. Stir everything together, and devour 🙂

If you like, you can even add: chocolate chips, cocoa powder, Chocolate Amazing Grass, or even some chocolate syrup! (woo, Ah!Laska!) Peanut butter and chocolate is definitely my favorite combo..I even put pb on my Endangered Species 88% cacao chocolate squares 😉


CKMom absolutely loved this concoction. She was skeptical about “mixing it all together”, but as soon as she did a few “mmm!’s” came from her direction.

Gotta love them oats!

In other notes, I found this baby at my grocery store today:


I believe this monster is called an Asian/Chinese grapefruit, but I’m probably wrong. However, this sucker was huge! Like, ginormous. I don’t know how someone could eat this, it was as big as a basketball.

Then, the winter farmer’s market was a slight disappointment. Too much bread and soap, too little veggies! My heart was hurting. I did manage to snag some yummy sauerkraut, however, and some golden delicious apples – they are definitely my favorite at the moment, closely tied with cameos. But pears, grapefruits, and berries will always have my heart at breakfast 🙂

I also went to my favorite co-op and picked up some cashew butter, buckwheat soba noodles (I may be gluten intolerant – more on that in another post), and Larabars! I finally found the Banana Bread and Carrot Cake flavors!! I don’t think anyone quite knows how happy I am..I’ve been searching for these forever and can’t believe I haven’t seen them at the co-op! Better late than never 😉


Mmmm, I cannot wait to try this tomorrow! It’ll make my Monday just a little less Monday-ish 😉

Okay, time for me to snap back to reality! I’m all caught up 🙂 Now if I had all my schoolwork done already I would be really caught up..well, tomorrow is a new day. I’ll do it tomorrah 😉

I hope everyone’s been having a lovely evening! I had a home-cooked dinner with my Mama, just us girls – it was so nice, and it’s always so fun to catch up with my Mom on a more friend-type level.

I sauteed some halved and quartered brussels in EVOO, lemon juice, and thyme – sorry lovelies, I was so caught up (ha!) with getting caught up (strike two!) with my mama that I didn’t snap a picture 😦 But dinner was beautiful and the brussels tasted amazeballs this way – you HAVE to try it!

I also stir-fried some baby bella mushrooms, roasted a sweet potater (my faves – getting my beta carotene!), and had my new favorite quick-dinner combo:

Combine leftover (or freshly cooked, if you roll that way too!) grains and hummus.

That’s it.

Stir and stir! I combined about 1 cup leftover quinoa with 1/2 cup Prince Omar original hummus (I love this stuff!). It was the definition of Happy Tummy.

In other notes, in the earlier part of our mother-daughter girl’s day, we stopped at the Public Market and snagged these gorgeous scarves; and they were only five bucks!

IMG_3046If that’s not a sweet deal, I don’t know what is 😉 I am SUCH a scarf queen..I literally wear one every single day. Not only does it keep me warmer, but they’re adorable and make my outfits way more exciting.

Question: Are you a “scarf” girl too? Is there something you seem to always wear/bring with you in your purse?

For me, it’s obviously scarves, but in my bag I always have my Palmer’s Cocoa Butter chapstick – it looks like a glue stick, but it’s the best (and cheapest!) chapstick you will ever buy. Plus, it smells like chocolate – what more could a girl want? I mean, besides real chocolate..

chocolateLooks like it’s time for me to dig into my 87% cacao Endangered Species chocolate..again! Honest to goodness, that stuff is more than addictive. But I’d say my Dagoba 100% cacao is even more addictive..especially after the first bite.

Nom nom.

Time for me to hit the hay, lovlies! I still have yet to decide what workout to do tomorrow..running, body pump, yoga, or pilates? I am so terrible with making decisions!

Snappin’ Back to Reality

I’M BACK! No, I didn’t fall off the face of the Earth – but I bet it seemed that way. You can thank early-admissions applications and AP’s for that business.

I’ve been driver’s ed-ing, doing loads of schoolwork, and of course, participating in lovely senior year activities such as homecoming and pep rallies 🙂

But hey, there’s been some cooking too! There’s just never time to photograph my foodin’s anymore, unfortunately.

By the way, this is purely a segway post! Aka, I’ll be back in the normal-posting game soon enough (hopefully). I might try a few vlogs a la Meg once in awhile. Would that be something you guys would like? Let me know! What do you guys want to see on the blog?

Also, this blog is going to become much more about lifestyle, health, and everyday happenings – but don’t you fret, there will be plenty of food! Like vegan pizza..

IMG_3026And refueling like mad after spinning class yesterday! I hadn’t stepped into a spinning class in maybe six months, but I said to myself, “Girl, something’s gotta give!”. Besides, I was getting the itch to get back into the class-taking game. What can I say? It’s utterly addictive 🙂

So, I said thank you to my legs for not being torn apart by class (which I honestly thought they would) with this motha:

IMG_3039That’s what I like to call a Berry High-Protein Smoothie (in a bowl). Get it? Berry high protein? HA I’m laughing at my own joke..wait, that was a joke.

You see, I can’t drink smoothies from a cup, or anything tasty with a straw. It’s gone in about 5 seconds, and I’m thinking to myself, now what sneakster drank my smoothie! So, into the bowl they go. Every yummy spoonful 🙂

Berry High Protein Smoothie

Into the blenda went:

  • 1 cup (approximately) of berries of your choice. I used strawbs, bloobs, raspberries, and blackburries
  • 1 scoop Vega Sport vanilla-flavored protein powder (SO good)
  • 2 tbsp. peanut butter (give or take..more is better for me!)
  • a splash of unsweetened vanilla almond milk
  • 5 ice cubes
  • 1 tsp. xanthan gum

And then blend, baby, blend! The xanthan gum gives it the spoonable texture that I love so much. No runny smoothies for me!

Paired with half a grapefruit and an apple, this was the perfect brekkie. Class was amazing, and I was speedy! Despite the fact that I only work out a few times a week and I hadn’t taken spinning since like..the spring..I kicked serious a$$. In a class where I used to die and sweat bullets and barely be able to breathe, it’s almost effortless. Barely sweating, breathing perfectly, legs spinnin’ like a spinna. (ew, Katelyn, stop trying to make up your own words…)

The instructor also was amazing. I had never taken her class before, and she was so cool, chill, and played the best music. Plus, she was completely enjoying teaching the class..she was kicking even more a$$ than I was!

My gym is also getting new spinning bikes come January – we only have one so far, and it is beee-EAU-tiful my friends! Sleek, silver, and has a computerized screen with which you can change the resistance level about a million times easier than with the dinky ol’ dials. I can’t even contain my excitement.

My next class to get back into? Body pump! Despite how bored I got doing it 3 times a week, every week, for a whole year…I’m actually beginning to miss supersets of squats and triceps…and the crazy muzak they use (aka, fake versions of all the songs you hear on the radio). But we love it anyway.
