Say a Prayer + Owl House Eats!

Good evening all! Hope you’ve had a lurvely and restful Sunday🙂

The first part of today’s post will be a little emotional and sappy, but I feel that this is a topic that I need to address because it really hit home with me today.

This morning after I posted a gluten-free pizza-for-one recipe, I headed off to church where I listened to an unexpectedly profound service.

It started with a meditation on the “goodbyes” that will be said at the end of the year (leaving for college), as well as a highlight on the goodbyes that will be said to the graduates that leave to go to war.

As I sat with eyes closed, I imagined my “goodbye” with my family with both excitement and incredible sadness. I will be leaving my comfortable house filled with the people I love most (and my stove), but entering into a new place that will have so much to offer: a life of my own, creativity in the kitchen, and the many excitements of college life (pursuing my passions and partying..obv).

But then, my mind shifted to how I would feel if I were leaving my parents to go to a place where I would be killing human beings, for the sake of “freedom”.

I am not in any way saying that there cannot be justifications for war, but instead I would like you to put yourself in that eighteen-year-old’s position for a moment. Imagine saying goodbye to your parents, knowing your next destination would be a foreign country with a bunch of soldiers you’ve never met, to a place where no one can be trusted.

Then, put yourself in the position of the parents saying goodbye to their child. The fear that their baby wouldn’t come home, or wouldn’t come home all in one piece. The fear that their little girl or little boy wouldn’t be the same person they said goodbye to, but instead someone they don’t recognize.

Many soldiers return home only to commit suicide. Over one thousand have survived suicide attempts, and most will come back from war with Post Traumatic Stress Disorder.

Whether you support war or not, please support our troops. These are our friends’ boys and girls, our neighbors, and the person who sat next to us in elementary school.

Say a prayer for these soldiers and their families tonight, and remember that our soldiers do not always believe what they are doing is right, but they feel that it is right to fight for our country and the lives of their loved ones.

Though I do not believe in the killing of any human being, I support the humanity of the people who lay down their lives every day, no matter whether that directly or indirectly protects us.

The reading and sermon that followed the meditation will be covered in tomorrow’s post. Here’s a hint: it has to do with your passion, your life, your career, and your heart. Any guesses?

If you pray, please also include my family in your prayers. Today had an abrupt turn for the worse, and we need your prayers as we nurse a family member back to health. You all are beautiful, and I know with the love of us all, we can all get through the tough times!

Also, please drive safely. You never know when one choice in a vehicle could change your life.

Now onto a less emotional topic………FOOD!

This afternoon (after the awesomely moving church service and a nice jaunt around the neighborhood with the puppers), we headed off to The Owl House.

I cannot rave enough about this place, it is delicious, has copious vegan and gluten-free entrees (this place even has gluten-free bread made with teff, can I get a hell yeah?!), and every dessert is vegan.

I got the Garden Salad (Field Greens, Farmers Market Vegetables, Lemon Vinaigrette), topped with a Lentil Burger, sans the Vegenaise and Onion Roll (not gluten free).

It was delicious, I scarfed it down in 0.26 seconds and loved every bite. I haven’t had a grilled burger in much too long, and a reunion was well overdue. Hello, smoky flava!

It made me incredibly skippidyy happy to find that the waitress was very accommodating to my vegan– and gluten-free restrictions (last time I came I was not on a gluten-free diet).

I always end up feeling like “that girl” who pesters the waitress.. “Can I have the blah blah blah but with no blah and with blah blah on the side? Oh, and no blah blah, either, can I get blahty blah instead?”

I would feel bad, but I like my food, and I like it my way:)

Which takes me to dessert! I absolutely could not resist this son-of-a-gun even though the burger left me sufficiently stuffed.

There is always room for chocolate.

Just you wait kiddos, this will be the most decadent thing that ever hit the bottom of your endless stomach.

I literally could not stop making “mmm!” noises while I was licking this off of my spoon, it was too good and I was getting some funny looks but I could care less.

And then I looked in the mirror and there was tons of chocolate in my teeth.

But as before, I could care less. It’s a small price to pay for chocolatey deliciousness🙂

Then, we headed across the street to one of my favorite co-op’s to explore fun foods and get free samples (wooo for Sundays!). There was free chocolate, chocolate-covered almonds, and organic blueberries! Uh, chocolate and fruit fo free? Get at me!

That’s all for now lovies! I’m off to make some din din, do my homework, get excited for my first day of psych tomorrow (new semester, hollllla!), and go to sleep EARLY.

I am making a vow to myself to go to bed NO LATER than 10 every night, and I am telling all of you because that will make sure I am more accountable for my own rebelliousness. It is now your job to keep me in line. Good luck, people!

It’s a Pizza Pie! [Gluten-Free Pizza for One]

So I know I promised y’all a pizza recipe for last night, but let’s just say I had a stat project (due today at noon, how does that even happen?), then I spent way too long stalking the college I got into yesterday, and there was pizza involved. Oh, and cookies…and marzipan. Have I ever mentioned my obsession with marzipan? Yeah, I could eat the stuff for breakfast.

After my amazing morning, I skipped off to the gym and took an amazing spin class with this teacher who said he is 61 years old but I do not believe him because this guy was jacked and had way too much spunk to be grandpa-age.

No offense if you happen to be 61 and a dude and reading this. My apologies:)

But this spin class – I cannot even describe. It was an endurance spin that I came in late to (I caught the last hour or so), and my gym got NEW SPIN BIKES!! Ahhhh I was peeing basically. But then the first three bikes I tried were either squeaking, had wobbly handles, or were behind a really tall sweaty guy (I don’t exactly dig that sort of thing).

So once I got on my bike, the sweat started pouring and the windows were so fogged up that I actually thought that it might start raining in the spin room.

That’s what I like to call a hard core group of spinee’s.

Once I was done kicking some surrious spinee ass, I headed home and made the most glorious pizza that has ever entered my belly.

And yes, I was given permission by the Universe to eat copious amounts of pizza because it was VEGAN PIZZA DAY!! Ahhh I love holidays dedicated to food🙂

The pictures look icky because of flourescent lighting. Someone want to send me a light box for my birthday? I would love you forever:)

Amy’s Low-Sodium Marinara (because I’m cheap and don’t make my own), sliced baby bellas, 1/4 of a chopped red onion, and nooch. Cheesy, creamy, mushroomy, delicious.

Git in mah belly.

Since you guys are SO kind to me and don’t judge my fugly food, I will give you the recipe for the best single-serving pizza I have ever made in my life (and it took me approximately 2.54 seconds to mix together, I know I am supawoman).

Again, please do not judge the ugliness and blurriness of the photograph. You are all blessed souls and I will pay you all back in love and unicorns when we all meet in heaven (okay that sounded really morbid, let’s make it easier and have a bloggy meetup in real life and eat lots of pizza and cookies:)).

I don’t know quite what to say, except just make this. You can thank me later.

Plus, it’s redonkulously high in protein and fulfills both carbs and protein for your din din. Check, and check.

Gluten-Free Pizza for One

Adapted from CleanEatingChelsey

Ingredients:

  • 1/4 cup buckwheat or quinoa flour
  • 1/4 cup garbanzo bean flour
  • 1/4 tsp. salt
  • 3/4 tsp. xanthan gum
  • 1 tsp. active yeast
  • 1/4 tsp. stevia
  • 1/2 tsp. olive oil
  • 1/2 tsp. apple cider vinegar
  • 1/4 cup warm water

Directions:

  1. Preheat oven to 400 degrees Fahrenheit and lightly grease a cookie sheet with EVOO.
  2. Combine dry ingredients, then add wet ingredients and mix thoroughly.
  3. Spread out with wet hands to your desired shape/thickness, and then cook without toppings for 5 minutes.
  4. Add toppings and cook for an additional 10 minutes.
  5. Slice and enjoy!

I topped mine with marinara, baby bellas, spinach lettuce, and nooch. If you dig cheese, load it with that but I’m good with my shrooms and lettuce:)

Then I got hungry again and had a ton of cookies, a banana with almond butter, and some quinoa/lentil/raisin mixtures in my Robin Hood mug. Yes, it does exist, and no I was not joking when I tweeted about this.

I Love College + Raspberry Amaretto Cookies!

Can I just say I REALLY miss being tan? Now I am paper-white, and I used to be Africano. I’m not joking.

Anywho, the title of this post is due to the fact that I’ve had a redonkulously awesome day.

This morning I woke up to a SILENT house (I am a morning freak and I love having the wondrous morning hours to myself, aka talking to my dog and eating copious amounts of cookie dough). Then, I checked my Droid (aka my baby) to find that I had won a cookbook that I cannot WAIT to review for you guys!! Slash I don’t think you guys understand how big of a deal this is…I never win anything. I am so excited for this one, I had been dying to buy it but now it is mine fo free:)

Then, after my glorious morning, I had a college interview with the sweetest lady in the world and we talked for hours and hours (okay, an hour and a half) about public health, nutrition, the food industry, the U.S. government and all of the stupid lobbyists, hiking, and hot chocolate. Love. Her. During said interview, I sipped on a delicious cup of tea from sbux and I don’t even know what kind of herbal tea it was but I don’t ask, I just drink (okay that sounded bad).

As soon as the interview ended, my Dad was waiting for me with a big ol’ smile and said he had an email he wanted me to read that would make me very happy. Did Grandma send me money? Uh, no, he said. Instead, it was an email announcing my first college acceptance! Holllllaaa at me girls! I am so happy because this school is one of my top choices. However, I will not disclose the name of the school until further acceptances and decisions have been made:) Until then, I will tell you that it will be SUPER easy for me to go for a jog on beautiful trails, hike a mountain (or three), get some yummy veg (and raw!) eats, and buy groceries from local co-ops and natural food stores so I can cook for myself. Oh, and I would be majoring in nutrition and doing lots of undergrad research.

Any guesses?! I might just tell you if you’re right;)

So, why did I tell you about my awesome morning, loot, and college acceptance? Not only because I love to talk about myself:) but also because I believe that everything in life happens for a reason, with a plan, and is also greatly determined by karma. One of my favorite mantras is:

I’m a strong believer in karma. What goes around comes around. Be graceful and wise in all that you do, and the world will return the favor.

And in case you were wondering, yes I did make that up, and I know I am a genius. Okay maybe not a genius, but I live by this principle.

And I’m pretty sure my day has been amazing so far because I had an indulgent Indulgence Friday🙂

It started off with a Cookie Dough Bowl (recycled photo, I’m lazy I know).

Continued with Ethiopian food, which is served on a giant piece of bread. It is called Injera and is addictingly delicious, we brought home approximately 12 rolls of it, I kid you not. By the way it is amazing with almond butter and jam, it is like a sweet and sour delicious sticky mouthful (get your mind out of the gutter people!). Oh, and you eat the food with your hands. I love permission to make even more of a mess than usual:)

Chickpeas, lentils, collard greens, cabbage, and a small salad of tomato and onions atop a hugh jass piece of injera. Oh and we had two baskets of the stuff. Did I mention we have a lot of injera in our fridge?

What goes around comes around? I completely agree. Especially when it comes around in the form of Gluten-Free Raspberry Amaretto Cookies.

I guess it’s true that you really do make your own happiness.

Gluten-Free Raspberry Amaretto Cookies

Adapted from my Gluten-Free Orange-Cranberry Cookies

Ingredients:

  • 1/3 cup almond flour (also called almond meal)
  • 1/3 cup quinoa flour
  • 1/3 cup + 1/4 cup garbanzo bean flour
  • 1/4 cup quinoa flakes
  • 1/2 cup applesauce (unsweetened, natural)
  • 1/4 NuStevia Baking Blend (or your sweetener of choice)
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 tbsp. vanilla extract
  • 1 tbsp. almond extract
  • 1/4 cup slivered or chopped almonds (I used slivered)
  • 1/4 cup chopped raspberries
  • 3 tbsp. or more Unsweetened Vanilla Almond Breeze (or milk of choice)

Directions:

  1. Preheat your oven to 350 degrees Fahrenheit and grease a cookie sheet.
  2. Mix wet ingredients in  a small bowl, dry ingredients in a larger one.
  3. Pour wet into dry and mix thoroughly. Dough will seem dry but keep stirring! If it is still too dry, add milk or liquid of choice by the tablespoon until it reaches a doughy consistency.
  4. Gently fold in almonds and raspberries.
  5. Scoop by the tablespoon onto your cookie sheet and flatten slightly with your hand (running your skin under water first usually helps to avoid sticking).
  6. Bake for 7-10 minutes, or until the outside is dry enough to touch. I prefer these still squishy on the inside when leaving the oven. It allows for a firm outside with a doughy, moist filling.

Ingredients? Word.

All I have to say is that this has to be the most scrumdiddlyumptious recipe I’ve ever concocted. I would describe to you every delicious flavor in this doughy deliciousness, but that would take too long so I am just going to tell you to make these. Don’t even question it, just do it.

If you need further persuasion, know that I ate four and a half of these babies last night, then had to freeze the rest or else they would have been gone.

I am the COOKIE MONSTA🙂 Do not get me near a cookie jar or it will be empty in approximately 2.41 seconds flat. Don’t look so surprised. There’s a reason I cook so much!

Uh, by eating food with my hands off of a giant piece of bread, and then eating a lot of cookies. Indulgence Friday = celebrated.

Indulgence Friday

Good morning bloggie babes! And Happy Indulgence Friday🙂

This is going to be a new tradition on CK, inspired by the dear Mama Hall (my lit teacher, I love her and she is my idol). You can thank the chocolate gods for this woman, she told me about how Friday is her “indulgence day”, and I knew I had to spread the love!

So, I’ll be starting off the day right with a hugh jass bowl of cookie dough (go have some, I swear to goodness you will never turn back). Because I’ll be getting my sweat on in a few minutes and then meeting with Mama Hall herself about an essay on Frankenstein (which is the best book ever, beeteedubs), I will be much too busy/sweaty/hungry to take a picture so here is a recycled picture of said deliciousness:

This deserves a giant “holy yumsky”. I cannot get enough of cookie dough bowls, and once you try one, neither will you. I literally have to restrain myself every morning to not eat the whole thing in two seconds flat (not to say it hasn’t happened). It’s that good.

I had it classic-style with Amazing Grass Chocolate Superfood, my fave protein powder, maca, and tons of cacao nibs. Plus tons of berries, obv. It adds volume and therefore takes longer to eat, maximizing the deliciousness and duration of the bowl.

It’s science.

I only wish I looked that good after a spinning class – instead I am a deliciously sweaty mess who is happy off endorphins but on the hunt for cookie dough. I’m serious, this stuff is like healthy protein deliciousness for my tummy!:)

As you can see, my workout ADD was flaring up and the Today Show was not up to par in the entertainment department. Hoda and Kathy Lee are toomuch:)

So, I watched How to Lose a Guy in 10 Days most of the time on my iPod because nothing good was on, which is disappointing considering I don’t have cable and my gym has every channel known to man.

Today I’ll (hopefully) be running, and most likely using the spin bike/stair stepper. My hammy has NOT been happy with me lately, so I’ve been taking it easy and kicking toosh on the spin bike instead:) Injuries = no bueno, so I’ll see how it feels.

I should probably get a foam roller…anyone know where to get an inexpensive one? I’m a cheapo:)

Slash send me these ones, it is almost my birthday (okay not really, it’s in July), and these are pretty:) I will be your best friend forever and ever if you send me anything actually, especially if it is 100% dark chocolate or one of those new Blueberry Muffin Larabars that I can’t wait to get my hands on! (hint hint)

Oh, and next time after my long run, an ice bath might be a good idea! I refuse to risk an injury, even if it means soaking in freezing cold water in the dead of winter (anyone want to send me some sunshine?! much appreciated:)). Of course, once I’ve gotten sick of the ice I’ll blast the hot shower and vow to never take an ice bath again – but then I will:)

In other notes, my awesome uncle is flying in from New Joisey midday, so we’ll be having a riotous old time showing him the (cold) sights of Upstate New York while trying to not freeze:)

Slash we will most likely be going out for Indian food tonight which makes me obnoxiously happy because I am needing my chana masala fix, and FAST! I do not kid when it comes to food.

Double slash I will be sure to indulge in something delicious, I just do not know what yet. Should I roll with pancakes for lunch? Or perhaps a bit of banana soft serve with my bowl of melted chocolate? Maybe I should roll with some cookies, I am craving chocolate chippage! We will see:)

Study Party!

You’re probably wondering about this party a la studyudying that I’m talking about.

Having just finished my last midterms and finals of senior year, I thought I should share some super-handy study tips I’ve learned over the years so you can throw your OWN study party…with your textbook!

Anywho, grab your textbook, snackage, and here we go!

Chef Katelyn’s Study Tips:

  1. Organize your study space.

    I know that when I see clutter, my brain is cluttered. I can’t focus for the life of me if there’s a stack of laundry sitting on my desk (or on the floor..cough). Make the space yours and fit for focus (how’s that for alliteration?).


    Turn off your computer monitor, put the magazines away, and throw away that plate that is now covered in pretzel crumbs. Which brings me to number two!

  2. Get some serious snackage.

    I’m talking crunchy, delicious, and munchable. When it comes time for me to study, I can’t focus much since it involves sitting still, which is no bueno for a girl with boundless energy. My favorites are carrots/crudités with hummus, pretzels or an apple with almond butter, or just anything crunchitizing. It keeps me awake, keeps my mouth busy, and keeps my tummy happy! Over the past week, I’ve been enjoying loads of hummus with raisins and Cookie Dough Bowls🙂


    I also like to sip on a green smoothie every now and then. It’s a giant boost of energy (GREEN!), and is the perfect vehicle for my favorite protein powder, almond butter, or some fruit all of the fruit in my house. (Beeteedubs, I’ll be doing a how-to post on Green Smoothies in the near future! Many of you are wondering how to make one, and make one taste GOOD. Never fear, CK is here!)

  3. Exercise!

    Not just for your booty, but for your happiness and general sanity. I’m somewhat of a perfectionist, and I get SUPER stressed out about tests (probably more than I should). A girl’s gotta let that stressful energy out somewhere! Enter the Dreadmill. Or circuit training. Or ellipticizing, or whatever it is that you do to GET YOUR SWEAT ON:) Plus, exercise is clinically proven to boost energy and ability to focus, so go and Just Do It!

    Orange you glad we don’t dress like this any more? If you do, I’m very sorry to disappoint you, but it looks like you’re wearing your underpants on top of your body suit. Just sayin’.

  4. Skip the caffeine.

    Yeah yeah yeah, I hear your groans. I used to be a java queen, drinking coffee like it was my J-O-B back in the seventh grade (I kid you not). I could not function without my daily cup of brown stuff or else I would be a terrifying monster. Centuries later, the only caffeine I get in my diet is from chocolate. Lots and lots of chocolate. So instead of the $5 espresso, why not double-fist some delicious holiday tea? Or even better, Yogi Tea’s Gingko Clarity.

    I sip this non-stop when I’m studying! It’s specially formulated to enhance your memory and help you focus (score!) and tastes REALLY good (double score!).

    But, if you REALLY can’t go without caffeine and turn into a shuddery wingnut, try some Yerba Mate on for size. The caffeine won’t send you on a spin/crash cycle; instead, it contains antioxidants, vitamins A, C, E, and B vitamins, as well as fatty acids, chlorophyll, flavanols, and polyphenols (the reasons why red wine, chocolate, and berries are so fantabulous for you!). It is said that Yerba Mate contains "practically all of the vitamins necessary to sustain life" (you can read more on Yerba Mate here). You can hardly say as much for coffee, which in fact is highly acidic and causes cortisol levels to rise, decreasing your body’s ability to burn fat or gain muscle. Yowza!

    Even better, munch on some chocolate. It’s a gift from God, so eat it and don’t feel guilty at ALL because you are a butt-whoopin study fiend!

  5. Keep it interesting.

    Change locations every hour, and your brain will process the information better. A change in environment can enhance your brain’s alertness, allowing the information you read to be remembered more efficiently when it is associated with different memories in your brain.

    To step it up a notch, switch subjects every hour. This is mainly for the reasons above, but also because it’s boring to study the same subject for hours on end. You’ll get more done (and enjoy it more!) if you have variety.

    Now that you’re keeping variety, take a break for a few minutes every 20 minutes to a half hour. Your brain needs breaks in order to stay alert! No wonder you’re falling asleep on your textbook;) Stretch, do some jumping jacks, grab a snack, go to the bathroom, whatever. Just get off your toosh!

  6. Determine what is most important.

    Dedicate yourself to what you know is going to be tested, especially parts that you don’t understand. Skim the rest, and you’ll be fine. Short on time? Use a review book or write down the most important sections, and study only that. I’ve found the Princeton Review and 5 Steps to a 5 books especially helpful!

  7. Don’t cram!

    Do NOT cram and end up in a jam (that rhymes:)). Instead, space your studying out for a few days, a week, or two weeks ahead of time. It sounds like it takes a ton of work, but it’s really not. You’ll thank yourself when you aren’t freaking out the night before!

  8. SLEEP.

    In all truthfulness, the most useful and important tip of all. Set a “cut-off” time for yourself, and make sure you close the books at that time and get to bed. You’ll want to stay up late and read those last few chapters of notes, but when it comes down to it, none of that is going to matter if you’re tired while you’re studying or falling asleep on your test the next day. Your reasoning skills will be way sharper with a good night’s rest! Plus, you’ll probably be a lot more cheerful:)

  9. Rewrite your notes.

    Make flashcards, redraw drawings, or simply copy over your notes. Writing or drawing it over again will help to cement it in your memory. Plus, flash cards are great for quick reference and quizzing yourself! Hollaa

My Healthy Dose of Awkward

Okay so before I get to my recap of the SCRUMDIDDLYUMPTIOUS raw brunch, I must let this out.

Three awkward things I did today:

  1. In the shower, I accidentally put conditioner on my face, thinking it was face wash. No bueno. I mean, how does that even happen? Maybe it was because I was singing Raise Your Glass at the top of my lungs and hair was the last thing on my mind? Oh, and I was singing it just like this:

  2. After said musical distraction, I proceeded to blast that very song as well as Hey Baby and Like a G6 (somehow I never get sick of either of those songs). And I danced. My hair is now dry, THANK YOU awesome dancing skills of mine. I wish I had a picture of this but no one on the internet needs to see me pop lock and droppin’ it!
  3. I licked my plate clean. Which caused some of my lovely new friends to laugh hysterically and announce they need to take a picture IMMEDIATELY!

    Why am I so pale? Summer, please come back!! I don’t believe in paying for skin cancer so I refuse to use tanning beds. Bronzer is no longer sufficient. Anyone want to go someplace obnoxiously sunny and warm? It is cold in New York and I would like some sun.

  4. Okay, I lied. Number four is that I am typing this while still in my bathrobe because I absolutely had to write this post right now. Face it people, rambling just can’t wait!

Okay, now onto WHY I was licking my plate!

Firstly, I have to thank Christine, the owner of Wellness Within, for hosting this awesome event! She is a sweetheart, I can’t wait to work with her more!

She has such a great business going, and is expanding soon! If you are in the area, definitely take the snowy drive out to her store on the beautiful (and hoppin’) Park Avenue. I wish I could get out there more! (p.s. if you’re in the area and want an awesome restaurant, GO TO PARK AVENUE!)

Onto the FOOD.

Despite my full belly from breakfast, I was more than happy to stuff my face with raw goodness.

Above is the apple crepe with peaches, blueberries, and a vanilla crème. And a cinnamon roll🙂

Both were delicious, I scarfed this down in about 0.2 seconds, along with a small bowl of fruit, resulting in this:

And green juice. This was absolutely amazing, I wish I wasn’t so cheap and would buy a juicer but hey at least my birthday is coming up soon! (aka this summer, not soon, but EVERY DAY is my birthday in my mind since every day is awesome)

I might be wrong, but I believe this was romaine, celery, cucumber, and parsley. SO good, I love veggies, this was sweet enough it didn’t even need anything else:)

Next up was the banana crepe con a chocolate hazelnut crème sauce, banana slices, cacao nibs, and chocolate hazelnut milk.

If I could eat pancakes every single day of my life I SO would. In math class two years ago on Pi Day (yes it’s an actual day), we had pie WEEK and every single day someone brought a pie or some amazingly delicious dessert that somehow turned into my lunch every day that week.

In honor of Pie Week and my love for pancakes, we should have a national blogger pancake week with crazy creative pancake recipes for ALL meals! Who’s in?

Please say a prayer for me, I might not make it through the sea of heavy textbooks, notebooks, and flashcards that I am currently drowning in. I HATE midterms week. Did you know that teachers hate it as much as we do? Yeah, let’s abolish it.

I licked my plate clean. Shoo, I do that every day! Except it’s usually a bowl because I hate plates, bowls are awesome and can be filled high with lots of delicious goodness.

What’s your take on raw food?

I’m in love. Raw food has made me feel even more energetic than usual and everything tastes better than it used to!

Slash I may have eaten a king’s sized meal (read: this brunch plus snackage) and then attempted to bust out an awesome work out but totally failed with an achey tummy. Too much fat and protein all at once, my stomach is not happy with me. But it was so good that I don’t even curr, I’d take food over exercise any day:)

p.s. I have eaten 100% raw so far today, I am super pleased with myself.

Cookie Dough in a Bowl

Good morning lovies! Hope everyone’s had a bright and shiny start to their daySmile

I have discovered the ULTIMATE in breakfast foods.

Usually I roll with cooked oats, oats/oat bran mixtures, quinoa flakes, buckwheat, you get the gist, but I haven’t tried overnight versions since the summer.

Which turned out nast.

I couldn’t handle the texture of the overnight oats, it made me feel slightly sick, so I tried a mixture of ground oats and oat bran that rocked my world!

This morning: Berry Chocolate Cookie Dough in a Bowl.

Why do I not call this “overnight oats”, you may ask? It’s because I make them with ground oats/oat bran and mixed with very little water, allowing for a very chewy, dough-like texture. Major yum.

Mine may be green, but it is green with PRIDE.

Berry Chocolate Cookie Dough in a Bowl

Ingredients:

  • 1 serving ground oats, oat bran, or a mixture
  • 1 scoop Vega Sport Vanilla protein powder
  • 1 tsp. Navitas Naturals raw maca powder
  • 1 scoop Amazing Grass Chocolate Superfood powder
  • 1/3 cup unsweetened vanilla almond milk or other liquid (water, milks, etc.), adding more as necessary to liquify just slightly (you still want it to be relatively thick)
  • Topped with: homemade raw almond butter (pictures to come!), cacao nibs, blueberries, raspberries, and blackberries.

Directions:

  1. Mix dry ingredients in your brekkie bowl.
  2. Add liquid slowly, stopping just as the liquid is no longer absorbed into the dry ingredients. You still want the texture to be thick, but have some unabsorbed liquid that will allow the mixture to expand and thicken over night.
  3. Cover and refrigerate overnight (or for 1-2 hours, I checked on mine after a little over one hour and it was already all thickenedSmile)
  4. Top to your liking and devour!

This is seriously JUST like cookie dough! I meann, if you add berries to your cookies Winking smile And, the cacao nibs were a perfect chocolate chip-like addition, sans the sugar!

 

IMG_3379You could add anything here, including more chocolate powder (cocoa or raw cacao), chocolate chips, fruits, nuts, other nut butters, flax seeds, chia seeds (for a “pudding”, etc.! Go crazy.

Best part, is this breakfast is completely raw. I’ve been going as raw as possible lately, and it makes me feel so good and have so much more energy!

Usually I make it sans chocolate, which tastes like regular cookie dough. You can certainly omit the maca and use other protein powders, those are just my preferences and are by no means required for cookie dough-ness Smile
