Three Things

Good morning bloggie babes! Thank you for all of the sweet comments on my last post, I love you guys like you wouldn’t believe:) If you haven’t had a chance to look yet, I highly recommend it. The discussion going on in the comments is highly uplifting, you all are so beautiful!

This morning’s post is a tribute to my girl Janae who requested that everyone do a tangent of three random/awkward/weird things about themselves on their blogs.

Here we go!

  1. I eat straight hummus and raisins mixed together. A LOT. (I make my own hummus because I can’t stand the saltiness of packaged business, you could never eat a whole cup of that stuff straight, now could you?)
    It tastes good, don’t knock it till you try it;)

  2. When I listen to music on my own time, it’s always something slow and relaxing like Michael Buble, Norah Jones, you get the idea. I’m a bit of a sap. But when I work out, I listen to hard-core rap. When I run, don’t be surprised if you hear me singing about gettin’ Arab money.

  3. I drink tea. A LOT. I have a thermos that is SO cute that I carry around 24/7 with my collection of tea bags that goes on forever and ever (and a bag of Stevia that semi-looks like an illegal substance when I put it in my tea).

The Lies We Tell Ourselves

I had a different post in mind for this morning (an update on my de-chipmunkingWinking smile), but a sermon I recently listened to at church has been on the brain and needs to let loose!

In all truthfulness, every single one of us has a lie that we tell ourselves.

Sometimes it comes from the media: “5 Tips to Lose 5 Pounds!” “Be skinny, beautiful, and happy!” A picture or a commercial creates a precedent in our minds.

Sometimes it comes from a loved one, a friend, or a rumor. “You would have been better off if you had done this instead.” “You should be more like your sister.” Someone spreading a rumor that you’re too fat, too skinny, stupid, or not good enough.

The worst ones come from ourselves. From self-doubt, self-pity, and words that be beat ourselves up with.

See something in common? All of these lies convince us that we are not good enough.

Not good enough to enjoy a beautiful meal with people we love.

I’m crying as I type this because we all have had our own journey to where we are today, and sometimes that journey takes us places that are darker than others.

Some of us lie to ourselves in more hurtful ways than others, but today we are going to end that. Today we are going to know how worth it we are.

This morning I read aloud from Kris Carr’s book,

Please help me open my mind. Ignite my child-like curiosity and anything-is-possible attitude. Tap me on the shoulder if I act like a cranky old bat. The voices that hold me back are thoroughly misinformed. Grant me the wisdom to release them now. – Page 184

I know this sounds cheesy, but we all need to remind ourselves how beautiful we are.

It’s easy to forget what we did do, and what we did accomplish, when what others and ourselves focus most on is what we didn’t or couldn’t do.

Take a moment to think today:

How can you change that lie into something positive that will allow you to grow, be stronger, and live more beautifully?

The Stylish Last Supper

Good evening all! Hope everyone’s had a relaxing day:)

Mine was jam-packed with schoolwork and my econ paper. I didn’t have class until noon, but I went to the library anyway and CRANKED OUT a lot of my paper and a ton of the work I’ll be missing while I’m de-chipmunking Winking smile

I had planned on going to the gym after school, but my stomach was NOT agreeing with me! I think the ibuprofen I’ve been taking has made my stomach all messy, but I’ve been eating anyway. Did you know that eating is not as fun when you’re not hungry?:(

Alrighty tighty, here are my 7 Things!

  1. I get really excited about little things. I love it when the marshmallow melts perfectly in hot cocoa, or something awesome happens like Dennis Quaid being on the Ellen show;)
  2. When I was an itty bitty child, probably two or three, I lived in Minnesota where mud comes to visit a LOT during the spring. So, being the little kid that I was, I fell flat on my face and ended up with a mouthful of mud. And I have the picture to prove it. I guess mud doesn’t taste good or something?
  3. I’ve been wearing rings since I was five. Currently, I wear a claddagh and a peace sign ring (soooo 2010..I need a new one;) I remember the day I got my first ring:) I was at an arts fair with my Mom in New Hampshire, and I saw this ring that was knotted into a “forget-me-knot” (ha). She got it for me, and I had to save it for my birthday but it was SO worth it! It was sterling silver and I wore it until I outgrew it around age ten or eleven.
  4. I’m organized…in a disorganized way. Although I tend to be a neat freak and keep things spotless all the time, eventually things get messy. And honestly, you would look at my mess and think “dang, how does this girl find anything?!”, but I know where everything is. Don’t touch my stuff, ya hear?! 😉 (I heard that most geniuses are “organized” this way..maybe that says something about me? 😉
  5. I eat grapes on my pizza. No, I don’t cook it with the grapes on top. When I’m about to take a bite, I plop a grape on it. You probably are thinking about how gross it sounds but IT IS SO GOOD. The sweet and tartness of the grapes PERFECTLY compliments the saltiness of cheese (in my case, Daiya;). If you don’t believe me, try it out. Do it. Now. (p.s. this also semi-works with apples and other such fruits, but none can compare to grapes. none.)
  6. I’m kind of a dork. Okay, that you probably already know but know this: in the sixth grade I single-handedly read 3 books in one day. Let’s just say it was rainy and the books were goooood. I still love me some books, but somehow blog-reading always takes precedence over my leisurely reading time. Any recommendations?? I need to get back on that bandwagon:)
  7. I make weird noises. When I’m tired or really happy, I sometimes make this pterodactyl noise. Other times, I just make my own sound effects. You will often hear superfluities of onomatopoeias in my everyday jargon. Like when I’m on the treadmill, I occasionally will blurt out zooooom! When I turn off the shower, I do a “raspberry” but with just my lips. So it’s like pppppphhhh! Okay, if the grapes didn’t freak you out, that one definitely did.

Onto another note, I’ll be pureeing all of the food I usually eat and having it as “soup”. I can tell it’s going to look incredibly nast, but a girl’s gotta do what a girl’s gotta do;)

So, to celebrate my last night before what will probably be a week of non-solid food, I made some yummy goodness that didn’t end up as a plated picture. Let’s just say I was more excited to eat real food than to take a picture of it:)

FREAKING Out.

Good morning lovies! Hope everyone had a good Monday Smile

But as for the title of this post, I am actually FREAKING OUT for at least 3 reasons.

1. I am getting my wisdom teeth out tomorrow!! AHHHH

I hate needles and all things surgical, especially the thought of people I don’t know poking around in my mouth…

Slash I won’t be able to eat or drink anything after midnight tonight which will be REALLY hard for me, since I eat all the time and I’m always a ravenous beast when I wake up in the morning. So, surgeons, if you get a growl or two don’t freak out, it’s just my poor tummy:(

Double slash I’m going to have chipmunk cheeks and do crazy stuff that I’m making my padre record on video…get excited to pee yourself.

Triple slash I have a college interview Saturday and let’s just pray to GOD that I still do not look like THIS by then:

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

2.  My Econ term paper is due tomorrow.

Any paper is a good reason to be fuhhhreakin out, especially when it’s a term paper. All-nighter, anyone?

And to be serious, the thought of going under the knife tomorrow (okay, it’s a teeth pulling, but it’s STILL SURGERY) is semi-distracting. But tomorrow was the only time when I could get my toothies out before midterms, and I canNOT wait a whole ‘nother month to get these babies extracted.

In my mind, I know I would turn into Dracula.

Stand back, this girl needs her ibuprofen!

3. I have a Lit paper due Friday.

Hopefully my chipmunky condition won’t impair my essay-writing skills (skillz? hollla). Slash I will be bloggy blogging while I’m stuck on the couch with chipmunky cheeks and up on vicodin. I’ll be relying on you all to entertain me. And my dog, Lilly – I think she has dog ADHD? If that’s possible, she’s the poster dog for it. I love her:)

 

So, tonight I’ll be prepping loads of smoothified-food for myself to slurp tomorrow. Basically anything that I usually eat will be slurped in pureed form. Sounds gross, but maybe if I eat it with a spoon it will be like soup?

My dinner last night was a BEAST of quinoa, hummus, and raisins with a salad, but I didn’t snap a picture because I was STARVING after my run. Slash I actually wasn’t that hungry, but my runner self just wanted food and knew my muscles would like it.

You’re welcome, muscles.

So, here’s a picture of dinner from a couple nights ago, times two and plus a banana with almond butter..and an Orange-Cranberry cookie😉

IMG_3266That would be dal (dhal? dahl…?) made by yours truly, with red quinoa. I LOVE this stuff, it tastes and smells like Grape Nuts cereal which I used to scarf when I was an itty bitty child while all the other little girls were eating lucky charms. Healthy eating starts young:)

You Spin Me Right Round

Good morning bloggies! I hope everyone has had a good weekend:)

When I woke up this morning I was HANGRY (despite my late-night noshing..almond butter, anyone?). So, I started my morning with this GLORIOUS bowl of oats. Nom nom nom.

  • oats
  • Unsweetened Vanilla Almond Breeze
  • an itty bitty banana
  • mixed up with Vega Sport vanilla protein powder (after cooking)
  • topped with: almond buttah and LOTS of berries. I was craving them, can you tell?

Roooooarrr I love how green the Vega makes my oats:) It’s like a pop of color in my morning!

IMG_3243Thankfully, it’s a beauuutiful sunny day! It makes up for the obnoxious amount of work I have to do today.

During breakfast, I read another two chapters or so of Crazy Sexy Diet. I’m addicted! It is SO good, and it’s encouraging me to try out more raw foods. Did I mention that Kris Karr is hilarious? I love a girl with spunk!

IMG_3248I highly recommend it to anyone interested in a healthier life, being vegetarian, vegan, raw, preventing disease, or trying to cure disease.

Slash I recommend this book to EVERYONE. It’s like The China Study in layman’s terms, which is what our country (and our world) needs.

Did you know more than two-thirds of Americans are overweight or obese? The stats are even scarier for kids under the age of FIVE. Something needs to be done. Kris to the rescue! 🙂

Since my wisdom teeth have been KILLING me as of late (I’ve been needing to get them out for, what, 2 months now?), I’ve been up on the ibuprofen. I woke up at 4am to drilling pain in my mouth and sprinted downstairs to get the bottle.

The on-call surgeon offered to prescribe me narcotics but I didn’t want to get loopy. Instead, he’s letting me up the ibuprofen and add Tylenol, but I’m just sticking with the regular dose of the ‘profen. Less chemicals in my body = the better.

So, oatmeal, quinoa flakes, and soft fruit have been my food of choice. And sweet potaters. I can never get enough;)

Last night I tried to make a pizza-like quinoa flakes combo, but it tasted AWFUL. I added nooch, tomato paste, and italian seasoning, hoping for a pizza-like flavor.

Smelled awesome, tasted foul. Too much tomato paste! Lesson learned: a little goes a long way.

That’s avocado and beans for healthy fats + more protein. I was sad when all of the ‘cado was covered in my nasty concoction. Boooo, at least that was most of what I scarfed down!

To make up for my experiment, I cooked up another pot of quinoa flakes and added my mama’s pear-sauce, raisins, and beans. Ahhh, much better:)

Before that, I took an AMAZING spin class. I’m addicted to spinning, and it’s been my favorite group class along with Body Pump since last year. The teacher was adorable, must have been in her fifties or sixties, and she was a POWERHOUSE. From a little lady, you would not expect such spunk. Love it.

Among the benefits of Spinning are:

  • It’s calorie-torching
  • Improve your cardiovascular endurance and health
  • Time flies
  • It’s low impact
  • You can take it at your own pace
  • Leg tonage Winking smile
  • Lowering your body’s workout breaking point (becoming more efficient, and releasing endorphins more quickly)
  • It works your core
  • Group mentality – it’s fun!
  • Improved mental stamina
  • Improve overall strength

If you haven’t tried spinning yet, I highly recommend it! It’s so much fun, and it makes me feel like supawomannnnn;)

That’s all for now! Time for me to go to church:) Today’s a rest day (at least that’s the plan), and I didn’t bother to shower this morning. At least I did my makeup and put on a cute oufit, right? Sorry God, it’s not you, it’s me.

On another note, one of my New Year’s rezzies is to improve my relationship with God. During this trying time, I’ve been finding a lot of comfort in prayer and in the prayers of others. I’m hoping to read the Bible this year, from cover to cover:)

Gluten Free Orange-Cranberry Cookies

Good morning bloggie babes! I have a busy day ahead of me, so this post is going to be a quickie.

First of all, you all should know how much of a messy eater I am. I’m talking food drippage in my hair, on my clothes (one of the many reasons I wear scarves..but then it just gets on those?), on my face, and on all of my class notes.

Anywho, this morning I devoured a delicious [jar] of protein oats! Unforch, I forgot to take a picture (still getting back into the blogging thing..I was hungry). Into the jar went:

  • 1/2 cup GF rolled oats
  • 1 1/2 cups unsweetened vanilla almond breeze
  • 1 melted banana
  • ~ 1 scoop Vega Sport vanilla protein powder (I am OBSESSED. Turns your oats green! Roarrr green power)
  • Topped with: blueberries, raspberries, and a good 2 tbsp. or so of almond buttah from the jar

Same oat-USVAB-banana combo as above, just with a toonnnn of PB and cacao nibs. Wassup, Elvis bowl!

Besides that, I’ve been snackety snacking on micro muffies. A microwaved muffin! Doesn’t get any better than that:)

Micro Muffie

In a normal bowl, mix:

  • 3 tbsp. flour, oats, oat bran, etc.
  • a pinch of sea salt
  • 1 tbsp. applesauce or oil
  • 1 tbsp. plus 1 tsp.  liquid (water, milk, etc.)
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. baking powder
  • your choice of sweetener (I use stevia)
  • handful of mix-ins (raisins, chocolate chips, cacao nibs)
  • spices if desired (I used about 1/4 tsp. or so of cinnamon)

Mix it all together and nuke in a greased mug for 90 seconds, then pop out and let it cool, bottom side up (bottums up, bottums up…). It will firm up and not be so gooey, I promise:)

Top with nut butter or whateva you’re feeling, and devour! Nom nom 🙂

Okay, now for the cookies! I’ve been gluten-free since about September or October. It gives me awwwwful migraines and digestive and muscle pains, and since I’ve been off  of it, my symptoms have gone away. So, I’ve been experimenting with gluten-free baking as of late, and recently came up with these babies!

Gluten-Free Orange Cranberry Cookies

Makes about 14 cookies (it can easily be doubled)

Ingredients:

  • 1/3 cup almond flour (almond meal)
  • 1/3 cup quinoa flour
  • 1/4 cup quinoa flakes
  • 1/2 cup applesauce
  • 1/4 cup NuStevia baking blend (or sweetener of choice)
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 tbsp. vanilla extract
  • 1/2 tbsp. orange extract
  • about 3 tsp. orange zest
  • 1/2 cup dried cranberries (I used dehydrated Whole Foods brand cranberries and soaked them in hot water for about 5-10 minutes)
  • about 2-3 tbsp. Unsweetened Vanilla Almond Breeze (eyeball this based on dryness/wetness of the batter)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients together in one bowl (except cranberries), and wet ingredients in another.
  3. Mix wet and dry together thoroughly, then fold in cranberries (if you followed my method of dehydrated-and-soaked, make sure you drain the water out well).
  4. Drop by the tablespoon onto greased cookie sheets, and flatten with the palm of your hand.
  5. Bake for about 7 to 12 minutes, or until the cookies are slightly golden on the edges.
  6. Try to not burn your tongue by eating one fresh outta the oven.

These were perfectly moist and delicious🙂 I froze about half of them so that I can pop one in the microwave every night and have a cookie “fresh out of the oven”. Soooo good! Last night I needed a snackety snack and topped one with almond butter…do it. Now.

I’m off to work on my Econ paper! I’ll be squeezing in a workout a bit later. Hopefully it’ll be a bit more organized than my hodgepodge from yesterday!

I think I have workout ADD…I kept going from elliptical to stair climber to treadmill and back around. Maybe today will be a spinning class🙂

I’m a Nutjob

Disclaimer: If you’re not into reading a long (semi-uplifting) story, skip to the pictures 🙂

Yeah, I am. I mean, what have I been doing all this time…college apps, or something?!

Seriously, though. Every day, I read every blog post that pops up in my Google reader like the good creeper bloggie I am, and always think to myself… “I so have to blog about this!”. But I don’t.

Why?

Senior year. College apps, loads of homework, and a family crisis I’ll be talking about in another post. Long story short, my life has been nothing short of rough.

So, every day I work to keep myself focused on school and not let the bad take over the good. I’ve had the amazing support of my friends, family, and teachers.

But lately, during all of this craziness and feeling totally out of sync, I just wanted to write. To blog again. I’ve always been a journal-keeping kind of girl, but for some reason I end up waning off of it for months. Blogging has been my journaling; my outlet. And I’ve been craving it.

So how did I end up sitting here, writing a blog post during my usual exercise hour?

Well, I went to the gym. I got on a treadmill to run, since I try to run every other day and cross-train on in-between days or rest.

The second I got onto that machine, I knew I wasn’t feeling it. I told myself, just try a few minutes. If you still aren’t feeling it, do something else.

But honest to goodness, I stopped dead on that treadmill and looked around at all the people working out. Why am I here? I thought to myself. I couldn’t stop thinking about what I wanted to write about. For days, I’ve been thinking up ideas for blog posts during my workouts, never having enough time to write one at the end of the day.

You see, one of my New Year’s goals is to take more “me” time. I’ve usually considered exercising my “me” time, or cooking, going to a yoga class, etc. But I realized when I was working out, I was craving me-time, and exercising at that moment wasn’t it.

So I came home after five minutes on the treadmill and here I am typing up this obnoxiously long post that you can read, scan, or simply ignore – I’ll understand. Long rants ain’t everyone’s thang 😉 I just hope y’all can understand my absence and not knock me off of your Google readers for being totally sporadic and well…just not posting very much!

I’ve posted previously about being “back in the game”, but clearly I have not been. I need to keep myself blogging, because it is so good for me. And I love all of the beautiful bloggies I have met through this page. You guys are amazing, truly, and every day your posts lift me up and ignite my passions a little bit more.

Hopefully this hasn’t been too much of a long drag for you readers! However, I felt like I had to let that out.

Ahhh, I feel better now 🙂

Anywho, you’re going to be seeing some changes around the bloggy. I’ll still be posting recipes and food goodness, but I want this blog to be more about daily shenanigans, which will include such yummy foods, workouts, and health tips. I just don’t want this page to be all about food.

Lately, I’ve been feeling back to my old (read: normal) self through reading Janae’s blog at hungryrunnergirl.com. She probably thinks I’m a total stalker (it’s fine, I mean I am…jokes), but her spunkiness and love for life (and incredible energy) has helped me to identify with the girl I once was and feel a little bit more like that. If you’re into spunk and fun, check out her blog! It always makes my day 🙂

Back to my point, my “normal” self will be shining through in these new posts, which means a bit more spunk, energy, and randomness…so if I use some rediculous phrase, do something weird, etc…get used to it.
