Chef Katelyn

Hi! Thanks for dropping by:)

As you can see, my name is Katelyn. I’m not exactly a chef, but I really like making food (and eating it), so I guess that kind of makes me one? Bee tee dubs I lick my plate. Get used to it, it is a compliment to your handiwork. (p.s. feel free to send me baked goodies any time I will gladly accept:))

Since this is the place where I tell you all about me, I should probably start off by telling you that I am not your typical girl. I love experimenting with cookie dough batters, doing crazy fitness classes like Kettlebells, and going to the Farmer’s Market early on a Saturday morning. And in case you were wondering, I don’t eat packaged junk that is loaded with ingredients you can’t pronounce. I’d rather make my own food, thanks. Oh, and I’d rather it not come from a cow’s boobies. Or its quads. Just saying. (if you would like to read more about my philosophy, you can click here)

But I want to make this clear: this is not a food blog. Yes, there is tons of food that you will see popping up around here (prepare to drool), but there is so much more than food going on here. This is a place for me to talk about healthy living, which includes self-image, happiness, fitness, food, and yes, talking about myself on occasion:) For instance, To-The-Nines Tuesday always calls for mirror pictures. Something to embrace, people:)

Around the bloggity blog, you will see my crazykins vocab, my daily shenanigans, and some really good eats. Oh, and soon you will be seeing my coming college adventures. Well, most of them anyway:)

Most of the time I talk about the randomness in my life, as well as things I’ve seen around the web, fresh recipes, workout routines, reviews on my favorite movies/books/cookbooks, and the occasional product review. If you are a company interested in having me do a review or giveaway of your products, you can feel free to e-mail me here and I will consider your offer.

This is a space for honesty, growth, and love. I write as an outlet for myself, as well as a space to connect with others that have as much of a spice for life as I do. To me, it’s about the now, and loving everyone and everything with everything in your heart. Having almost lost both of my parents three times (you can read more about that here), I have learned the importance a day, or even a moment, makes. Lesson: Love everyone as much as you can, and most importantly, love yourself.

My goal is for you to leave this blog every day feeling a. Uplifted, b. Happier, c. Thinking about things you didn’t before, and d. Laughing. Lezzbehonest people, I am a bit of a crazykins so don’t be surprised if you leave this page wondering why the heck this girl is talking about having cookie dough for breakfast. No, not that kind of cookie dough:)

I love to run, spin (whaddup my awesome spinnee’s!), do yoga, walk in the sunshine, and crazy classes like Kettlebells, BodyPump, Cardio Kick, and Cardio Hooping. Yup that is a class where you hula hoop the whole time. Just TRY and tell me you are not intrigued.

Currently, I am training for my first Half-Marathon. Any tips from seasoned runners would be greatly appreciated!:)

(meeting Grete Waitz at the Boston Marathon Expo!)

My first race was a 5K with the Padre. You will be hearing a lot about him and the Madre, and the Baby Sister. They are my one and only family, and I love them to death do us part. Through every hard time in my life, they have been there to pick me back up when I couldn’t do it myself. When I go off to college in the fall, goodness knows I will be calling home at least once a month. Okay probably once a week.

My Baby Sister is my best friend, and it makes me so incredibly happy that we got rid of our childhood immaturity and finally manned up and started getting along during my last year home. I love you Baby Sister!

One of the biggest parts of my life has been my travels to Nicaragua. I have gone twice, and they are the most amazing experiences I have ever had, finding the love of God in the shining faces of beautiful children and families that have literally nothing. They have served as an inspiration to me, and the force behind my dream of healing the world through research in public health and nutrition around the world. I plan on returning every year for the rest of my life. It has become my second home<3

If you would like to learn more about Project Chacocente, you can visit their website here.

As stated on their website, “Project Chacocente moves families from the city dump of Managua, Nicaragua to the clean air and fertile soil of Masaya, where the people learn skills for living independently.  Chacocente is a non-profit, integrating project that aims to transform people, not just give them food and/or housing.”

My daughters, basically.

It is a beautiful mission, and I encourage you to donate money or even visit there yourself:)

All of the recipes posted here are healthy, made with whole-grains (mostly gluten-free), filled with protein, and filled with healthy fats. But nothing you see here will have sugar in it. It just won’t. My belief is that sugar is one of the most dangerous, addictive drugs. Have you ever heard of the obesity epidemic? I rest my case.

I am a vegan, and I take that label loosely 1. Because I hate labels, and 2. The word “vegan” comes with a certain connotation that I really don’t appreciate. Like people that go around yelling animal rights anger in other peoples’ faces. Yeah, not my thing. I’d rather talk about the awesome benefits like clear skin, shiny hair, and hot legs. Did I mention the washboard abs? Those aren’t too shabby either.

So, I usually go with “plant-based” and a mostly raw approach. I am not exactly a raw foodie, but I follow the Brendan Brazier Thrive Diet in order to fuel my performance. Plus, the food is really good. And I like energy. So ya know, it all works:)

I’m not here to tell you to change your way of living, but maybe to encourage you to make your life a little bit healthier. This may be through taking some stress out of your life, eating an extra veggie a day, going for a walk with your dog to get some exercise, or getting yourself a pedicure. Whatever floats your boat, as long as it helps you to love and appreciate yourself and the life you live in.

If you have any questions or want to give me a holler, don’t hesitate to e-mail me at chefkatelynblog [at] gmail [dot] com. (

or Tweet me! My username is katelynblock.

Thank you for stopping by, and I hope you’ll become a regular around here!:)

I love your story Katelyn! I just found your blog and its absolutely incredible. I actually laughed out loud when I saw that guys are so chill…”I should be one.” I’m the exact same way. I live in a sorority house, but I’m so much more comfortable just pal-ing around with my guy friends.

  18. I just found your blog… I had no idea you were 17! (You look older in your main pic) I am 19, going to the University of Florida right now. Love your energy and view on life… I found it coincidentally awesome that I went to Colombia last year on a service (not mission) trip and worked with kids aged 11-17 who have the biggest hearts I have ever seen/met. They didn’t speak any English either… talk about a crash course in Spanish. I’m trying to start up my blog right now, it’s still a major work in progress, but I’ve been trying to post regularly. If you have time, it would be amazing if you could check it out and let me know what you think!

    Hey girlie,
I just discovered your blog about a week ago, and have been looking through your site since then. I love it!
You have a great outlook on life, and you seem just so happy and healthy.
Anyway, I was wondering if you wouldn’t mind giving us maybe a list of books you’d recommend. For instance, I had totally forgotten I wanted to read Alicia Silverstone’s book until you mentioned it here on your site!
So if you wouldn’t mind, I would love to hear some of your book recommendations!
