I Found My Twinnie! [Indulgence Friday]

Good (afternoon) chickadees! How are you on this gloomy oomy Saturday?

Despite the gloom/rain/mush, I am j’adoring the warmth:) Yes, 47 degrees is a BIG DEAL in Upstate New York!

So yesterday was a bit crazy craze, sorry for no post loves! I had a sleepy day on Thursday, and then slept in a bit on Friday. I finally got to catch up on your bloggity blogs this morning! My Google Reader was full to the BRIM.

Anywhos, yesterday I cranked out another one of these spinning workouts at the gym, and then met my new bloggy friend Lisa for dinner at one of my favorite restaurants, Natural Oasis!

They have some of the best Ethiopian food I have ever tasted, and it is dirt cheap. And since we all know I am a cheapo, this is the perfect place for me:)

Since I am a seasoned eater at Natural Oasis, she had me order for the table. I chose the Risotto, Ethiopian Spiced Lentils, Curried Red Lentils, Sauteed Kale and Collard Greens, and Brussels Sprouts with Cauliflower.

It all came with a giant pile of Injera, which is so. good. If you have never had Injera before, I urge you to go out to Ethiopian food tonight and try some. It is made of teff flour, which is crazy high in protein, and it is like gluten-free and vegan sourdough that you use as a plate/mop up stuff with. I could live on this stuff basically.

For dessert, we ordered some carroty deliciousness that involved raisins, so that is all I have to say about that:)

Okay, enough with the food. I am not going to lie, this was the most fun I have had in a LONG time. Me and Lisa are basically twinnies just not the same age. Our birthdays are four days apart, we have the same philosophy about food, and have the same interests in regards to public health/nutrition/where our interests lie.

We were talking for so long that we actually got kicked out of the restaurant. They had cleaned everything up, put on their coats ready to close, and turned off the lights. “Goooodniiiight!” <—In their saweet Ethiopian accents

Hahahaha they pretty much gave us every hint to PLEASE LEAVE NOW.

But not before we got a picture together, obvs.

Isn’t she gorg?! Go check out her bloggity blog, she is a culinary genius and just so fun to talk to. We are already planning on going to some crazy sounding classes that our gym has, so keep your eyes out for that:)

Hahahaha it is going to be so funny, did you know that our gym has a HULA HOOPING class?! It sounds crazy craze but the Madre took it awhile back and was crazy sore, so I am going to be laughing the whole time and then pay for it later by being sore. Karma people, karma:)

Slash we will also be making some raw deliciousness at her casa so get excited to see some yummy food in the near future! And hopefully running the Marine Core Half next year if I end up going to school in DC:)

That is all for today love bugs, I am off to the gymmy gym gym and then working on some papers before din din, and hopefully heading off to see some of my girls tonight! If not, more of an excuse to make some Raw Chocolate Mousse🙂

Eeples and Baneenies: DC Food

Did you ever learn that song when you were a kiddo? I still have it memorized! I like to oat, oat, oat, oples and banonos…

Anywho, how are you?! I had an awesome hump day, and I loved hearing about all of your favorite road trip foods and activities! I will be sure to keep them in mind for today’s road trip to Vermont:)

I spent my Wednesday with my bestie Sarah eating hummus-raisin-quinoa balsamic bowls (yes I got her to try them and she loved), and watching Get Him to the Greek.

So funny, we actually peed and laughed ourselves silly during this entire movie, go rent it if you have not seen it, you will DIE.

Self-explanatory:)

Then we watched every episode of Glee ever made and said we were both going to marry Blaine and Puck and Sam…or a combination of all three.

Them combined would be the perfect man:

Tall, dark, and handsome with an amazing voice and amazing hair and an amazingly beautiful but huge mouth:)

Then she left and I packed food forever for the road trip and read blogs for the first time since the weekend. Oh and ate more hummus and raisins.

And now I am blogging and it is WAY too late at night, aka past my bedtime and we are leaving bright and early tomorrow morning, so I will leave you to your drooling at the pictures of my DC eats:)

Okay, onto Part II of my trip with the Padre! The FOOD:)

Can I just say that Washington DC food is amazing. I have been there a million times before, but this is my first time as a veg and it was spectacular. I obviously brought tons of food with me (Lara’s, the rest of the Raw Chocolate Fudge Cake,  veg, fruit, salad dressing, quinoa, beans, sunflower + hemp + pumpkin seeds), but no raisins.

I FORGOT RAISINS.

I literally did the cliché slap-to-the-forehead UGH I am such an idiot move. People, it is honestly a feat of bravery/courage/strength/stamina that I went two whole days without raisins.

If it weren’t for my genius, loving, amazing Dad who was way smarter than me and brought some dried fruit (see above container of prunes), I might have shriveled up and died right there. No fear dearies, Padre to the rescue!

Don’t worry, I am still alive.

Dinner:

Dinner on night #1 was at Café Green.

The atmostphere was gorgeous. Very modern, clean, comfortable, and a few of the tables  were couches/lounge chairs around a small table, making it a great place to get together with friends.

Salads and raw food. SO GOOD.

Our first course was the Seaweed Salad (A mix of marinated sea vegetables tossed in a sweet soy dressing and topped with cucumber, carrot, bell peppers and onion).

This was delicious, and certainly a nice change from more typical spinach/mixed greens salads:)

It was chewy (not in a gross way), and had a wonderful flavor that was brought out well by the dressing and sesame seeds.

Next were our entrées!

I ordered the Raw Venetian Pizza (An entirely raw pizza layered with cashew cheese, Roma tomato spread, mushroom, bell peppers and fresh basil all on our raw sunflower-flax crust) with Kale Chips on the side.

This baby was delicious, nutritious, and packed a serious punch! I loved the crust, and especially the cashew cheese. I have never met a cashew cheese I didn’t like!

And HOLY MOSES, why have I never had kale chips before?! I am making these ASAP in my oven, do any of you have or know of an oven kale chip recipe that I could take for a spin? If so, copy and paste it into a comment and I will try it out!

They were so good, cheezy, and reminded me of healthier Cheez-Its:) I used to eat those babies like they were going out of business before I was veg! Let’s just say it all went to my booty.

Padre ordered the Raw California Pizza (Our raw sunflower-flax crust with cashew cheese, Roma tomato spread and fresh guacamole, topped with tomato, cucumber, carrot, onion and peppers) with Kale Chips, but no guac:( They were all out! It’s okay, I got my avocado fix later on.

Needless to say, he loved it:) And he also loved the seaweed salad, and is willing to splurge on some seaweed to eat at home! Love my Padre ❤

We each had a piece of each others’ pizzas (came with four each), and I loved both! There was not a huge difference between the two, besides the toppings.

Even though we were sufficiently stuffed, there is always room for dessert!

We chose the Raw Lemon Cheesecake (Our agave-sweetened cheesecakes use a cashew-almond-coconut base) to split, since we didn’t have much room left.

It was perfect. Creamy, cool, and with a perfect touch of lemon. This fugly picture cannot do it justice!

It was all gone in two seconds flat.

Stuffed stomachs who? See, our philosophy is that you don’t have to leave room, you have to make room🙂

Lunch and Dinner:

Lunch on Monday was eaten at Leo’s (the dining hall on Georgetown University campus). I got yelled at, twice, for getting more toppings from my salad. Um, did I not spend $12 for an “all you can eat” buffet? Um yeah, I will eat ALL that I can eat, mmk?

It went unphotographed since I did not want to get yelled at yet again (the dining service workers are on strike, they were already pissed basically).

BUT, dinner was grabbed after our second college visit of the day at George Washington University. We were hungry, it was raining, we wanted to go to bed. We grabbed a taxi and stopped at Sweetgreen for a quickie dinner.

Spinach, mixed greens, broc, peppers, onions (I LOVE ONIONS), carrot, cucumber, broc, chickpeas, quinoa, and sunflower seeds. Topped with lemon and olive oil.

Is anyone else ever disappointed at the teeny tiny size of salads from restaurants? This was teeny weeny! I added more quinoa, beans, and sunflower seeds when I got back to the hotel room. This sucker was NOT big enough to fill up my belly!

Breakfast:

Breakfast the next morning was had at Le Pain Quotidien!

I had the Organic Steel Cut Oats along with a cup of berries.

As soon as I snapped this picture, I took a bite and then stirred in my Cookie Dough Bowl dry mixture, sans the uncooked grains: Vega Vanilla Sport Protein, maca, acai, chia seeds, and ground flax seeds.

Padre had the Harvest Farro Cereal, but I forgot to take a picture; I was too busy eating:)

Then we hit the road, made fun of other drivers a bit more, compared driving skills, and jammed to some more iPod goodies. We came home and hit the gym, and I cranked out this spinning workout.

Then I watched Glee and absolutely peed myself. Okay not really, but did anyone else fall head over heels in love with that episode?! I am marrying Blaine and every single Glee character, I would go mechanical bull riding with Mr. Shue any day. Imeann……..blame it on the a-a-a-a-alcohol.

This pizza tops the list, but I would have to say the Lentil Burger at the Owl House was so. freaking. good. I need to get there recipe, or steal it is more like it.

It Snowed on my Cookie Dough + Raw Chocolate Fudge Cake!

Good morning friends!! How are you?

I hope your Sattyday was glorious🙂

Mine was spent eating everything in sight (I was so hungry, I swear to goodness it is ALWAYS my time of the month), watching Hulu, and gymming it up with a sweaty 60 minutes on the elliptical.

I was so sore from my run with the Padre! Running outside is NOT the same as running outside, especially when the wind is blowing so hard it is going up your nose sideways🙂

My Sattyday started with a glorious Cookie Dough Bowl, con a tablespoon of raw cacao, a teaspoon of acai, chia seeds, and flax meal..oh and tons of coconut, it was snowing outside (BOOOOO!), therefore it snowed on my cookie dough.

If I tried to Latin-ify that, it would go something like “It snowed outside, ergo my cookie dough was snowed upon.” <– See what I did there?? I am a genius I tell you, that whole year of Latin I took really did the trick:)

Have you ever had coconut on your morning cereal, it is so good, I think this is going to have to happen every single morning. Some of you may think I am crazy for being late on the coconut train, but I used to hate the stuff (do not ask me why, I could not tell you). This stuff is delicious.

SNOW:) Love it on my cookie dough, but I could do without it on my grassy green lawn that is now wet, brown, dead, and covered in slushy white “snow”. I am saying it as “snow” because Upstate New York weather means it is never fluffy snow, it is either slushy or frozen.

If any of you are interested in a tropical vacation where it is warm and sunny and there is sand, feel free to book plane tickets!!

Raw Chocolate Fudge Cake:

And now the moment you have allll been waiting for!

RAW CHOCOLATE FUDGE CAKE!

Remember when I devoured my piece and the piece of the lady next to me?!

That was a good day🙂

Now, I have recreated that bad boy!

It was perfect. Not to sweet, and very chocolatey. And fudgy wudgy, just the way I like it:)

I love it when the flavor of the cacao really stands out, and isn’t overpowered by sweetness!

On a Pooh plate, obvs. Gift from the ‘rents:)

Oh, wait, you wanted the recipe? My bad;)

Raw Chocolate Fudge Cake

Ingredients:

  • 1 cup packed and pitted dates (I use Medjool)
  • 2/3 cup walnuts
  • 2/3 cup raw cacao powder (or unsweetened cocoa powder)

Directions:

  1. In your food processor, process walnuts to a flour and then add dates.
  2. Process until dates have formed into a paste, and it all balls up in your food processor.
  3. Add cocoa powder and process until fully incorporated.
  4. Transfer to a container/small pie or cake pan (I used a round tupperware), flatten the top, and refrigerate overnight.
  5. Pop out, garnish, slice, and enjoy!!

Next time I am going to use my Raw Chocolate Mousse as frosting. Which is going to be very soon, since more than half of it is already gone🙂

I would have done that this time (‘twas the plansky), but I got caught up in packing food for my trip to D.C. with the Padre! (ahhhh I am so excited!!)

You could also sub another nut for the walnuts. For a Chocolate Cookie Cake, sub cashews and add chocolate chips! I will be doing this for the Baby Sister’s birthday cake in May:)

I’m off to go have a slice of cake and finish packing! I am writing this Saturday night because Sunday morning will be busy busy!! I am hitting up the gym early in the morning with the Padre (boooo too cold to run outside!), then scarfing down breakfast and hitting the road!

As you read this I will either be shoving a Cookie Dough Bowl in my face or on the road on my way to D.C.! It is going to be a whole 70 DEGREES, I am so excited, I am going to wear shorts!! And FLIP FLOPS🙂 Guys this is a big deal, especially with the awful Upstate New York weather I deal with every single winter.

I love British accents.

Whaddup gangstas! How’s your Indulgence Friday been?

Mine has been AWESOME, it is sunny beautiful here in my neck of the woods again and I am in lurve with the smell of spring. It makes me think of flip flops, skirts, puddles, and drawing with chalk on the sidewalk (yes I know am I way too old to still be doing that:)).

But because it was so sunshiney beautiful, I could not resist going on a run outside with the Padre. It was sunshiney but incredibly windy, aka we went super slow but it is totally fine it rocked and my calves are screaming. my Dad whooped my butt, did I mention he is a marathoner? If you would like to hear about my idol, aka the best Dad in the world, check out this post. But grab the kleenex first.

Running Outfit #1:

Then Padre told me how ch-ch-ch-chilly it was, so I put on my Under Armour and the Padre’s Spibelt. This thing rocks, I put my Droid in it so we could use the My Tracks app (which is SO cool by the way, it is like a free Garmin:)), but I forgot to hit “record” so we had no idea how long we ran!

Groooarrr all I know is that is was a killer 67 minutes and it was awesome:) Enjoy these pictures, feel free to giggle and point at me showing off my Spibelt but just know that you are jealous you do not have a professional runner’s fanny pack too:)

The Indulgence Friday recipe will be up tomorrow, I was recruited for an emergency babysitting job (I am a saint I know), so unforch I cannot eat/finish the chocolatey deliciousness that is currently chilling in my fridge, but you will have a delicious fudgy chocolate recipe tomorrow just you wait:)

So I am currently sitting on the giant gorgeous white couch con a million afghan blankets, the lappytop, and a remote that gives me access to any and every channel that exists. And watching Two and a Half Men. Anyone know a good show on Friday nights? I have every channel in the world and I do not know what to do with myself!

Wait that is a lie, now I am watching Wizards of Waverly Place, I am a sucker for all things Disney, it’s fine I’m a child inside. Maybe that’s why I am such a good babysitter?

I love babysitting:)

Did I mention the people I am babysitting for are British? Listening to them speak is like liquid gold flowing through your ears, it lulls my pretty little self to sleep like a lullaby (in a good way). I could literally listen to them talk all day, if ears could eat, British accents would be chocolate🙂

And they are my next door neighbors, which means that our houses are almost identically laid out. it is freaky deaky, it is like walking into my own house. The entire upstairs is the exact same format as mine, so it is tempting to walk into my “room” on the way to the bathroom but I resist:)

Mission: I Feel Pretty

Good morning bloggy boos! How are you?

I’m feeling pretty snazzy myself:)

I had a different post planned for today (bee tee dubs, sorry for no post yesterday! I am a busy little munchkin), but this has been on the brain for awhile now. This is going to jump around a bit, but I promise in the end it will all make sense:)

It’s confession time.

Are you ready?

I’m not perfect. (gasp!)

I know, shocker. But seriously. None of us are, and that’s what makes us all so uniquely beautiful.

But some days, we all let this get us down too much. We don’t do the right thing, we get a bad grade, are a few minutes late to work, what have you.

More than likely, we beat ourselves up for not saying the right thing to the guy or for not straightening that one part of our hair, or like myself last night, I was fed up with how long my bangs had gotten so I trimmed them myself.

Fail. boat.

I began to start cursing myself with, “Ugh, Katelyn, why did you do that?! Look what you did! Now you look like a crazy idiot and all of your friends will think you are crazy because your bangs make you look like a nutjob.”

But then I caught myself.

Why do we say these things to ourselves?

At that moment I asked myself, “Would I say this to Little Me?”. In other words, would I say this to a little five-year-old version of me?

Of course not!

So why do we say such awful things to ourselves?

Let me tell you a little story.

Yesterday, I had the pleasure of having about four hours between my first and second classes of the day, so I came home and was so jumpy umpy that I decided to get my workout in then instead of later on in the day.

I hopped on the treadmill and did speedwork for a shweaty seven miles. It was awesome, to say the least.

But around 25 minutes, I felt my muscles starting to ache a little bit and I could feel that it was from not running in so long, but I wanted to keep pushing myself. I heard myself saying that if I slowed down or took a break, I wouldn’t be able to run a marathon, ever.

But then I took a second to remember how I felt when I saw my Dad approaching us after running the Boston Marathon for the first time, covered in salty sweat, a shiny silver blanket, and with Gu gel on his face.

I had never been so proud of my Dad in my entire life. I cried the happiest tears I can ever remember.

Then, on December 1st, he was out running at six in the morning, and it was rainy. It was pitch-dark, and I can remember the rain practically being sideways.

At 6:45, we got a call. He was in the emergency room and had been hit by a car. I had to go to school, and my Mom didn’t tell me everything she had been told on the phone; instead, she told me only that he had been hit and she was going to see him, but that he would be okay.

The thing was, he wasn’t going to be okay.

He was in the hospital for two weeks, and for the first few days could barely speak and almost didn’t remember who my sister and I were. He slept continuously, and was hardly himself.

He had sustained a terrible head injury, leading to bleeding in the part of his brain that deals with memory and thinking skills. They told us he might need brain surgery, but thank goodness he didn’t.

He spent two weeks in a rehabilitation facility, and is on disability from work possibly until August. We do not know if his brain function will ever be the same.

However, his recovery has been one of the speediest and most efficient that his doctors have ever seen. If he had not been taking such good care of his body his whole life, his body would not be repairing itself at the rate that it is.

So as I was running and feeling terrible about my future as a runner because of one little muscle cramp, I thought of my Dad.

Here is a man who was hit by a car, sustained a brain injury, but is able to recover so quickly and get back to running within two months of the accident.

I began to cry. The biggest feeling of pride and love welled up in my heart, and suddenly my muscle aches were meaningless. I was flying. My legs were propelling me so quickly on my treadmill that I could have sworn I was pushing the treadmill rather than it pushing me.

At that moment, I remembered why I had started running in the first place. It gives me such joy and pride to know that I have pushed my body to its limits, to move my body in the way that God intended, improving my mind, body, and soul all with steps on the pavement.

I realized that one muscle cramp wouldn’t kill my training. I realized that I was strong, beautiful, and so incredibly blessed to be given legs to walk on and a heart to love with.

And lastly, I realized that no one would give a shit that my bangs looked crazy because a. most likely no one would even notice, and b. it’s just appearance. No one really cares if you’re having a bad hair day! If you’ve got a on a smile, no one will even notice your crazy hair, and if they do, they won’t care because you love yourself.

After all of this, I took my glorious shower, got ready, looked in the mirror, and surprised myself by thinking, “Wow girl, you’re pretty!”.

What? I caught myself; I feel pretty?

Right then and there, I smiled at myself and realized how beautiful we all are, and that we beat ourselves up way too much about the little things.

So, I captured that moment with a dorky mirror picture of myself, and I encourage you to do the same.

This is incredibly weird to be putting up a MySpace-esque picture on the bloggity blog, but lezzbehonest, we’ve all done it and doesn’t it make you feel like a hot piece of bootay with every subsequent picture you take?

We all need to believe that a little bit more, so I encourage you to think some good thoughts, be kind to the Little You in you, and feel pretty.

I absolutely love her, she is so inspirational and has helped me to remind myself what my crazykins personality actually sounds like through all of this. It’s so easy to lose yourself in hard times.

DIY: For the Lazy-Loo in You!

Good morning bloggy boos! I hope everyone’s Sunday was as relaxing as mine:)

I woke up to a giant bowl of Cookie Dough and did my bloggy reading, as usual, and then headed off to the gymmy gym gym for an AWESOME 70-minute spin! Can I just say that I absolutely love having spin bikes in the cardio room, it makes my life ten times more fun when I can make my own spin class:)

The same playlist as usual (dubbed “Cardio Queen”…haSmile), but shuffleified. I love surprises!

  • Bottoms Up, Trey Songz and Nicki (jumps)

Then, I came home and ate a lot of food. I would show you the three split-pea-quinoa-raisin-balsamic bowls I had, but that would just be repetitive:) Hey, if it ain’t broke, don’t fix it!

Slash they always look disgusting so you are better off this way:)

Aaaaanywho, today I thought I would share some of my tricks of the trade with you guys. As you know, I hate showering/spending too much time on my appearance, so these are some the ways I “beat the system” Winking smile

 

CK’s Tricks of the Trade

  1. To avoid washing your hair, make your own dry shampoo

    Imeann, go into your kitchen cupboard and grab this stuff because it will make your life a million times better.

    No, this is not a joke. Put your head over the sink (or stand on a towel), put a bunch on your fingers, and massage it into your roots/scalp/wherever you are greasy grease. Leave it in for ten or so minutes, then brush it out really well. I promise, your hair will not look white after you brush it:)

  2. To beat the lip-chap blues, use a gluestick. Okay, that one was actually a joke..well, sorta.

    Above is Yours Truly’s favorite chapstick of all time. Palmer’s Cocoa Butter never lets me down. It costs approx. two bucks and lasts almost half a year.

    Everyone will think you are putting gluestick on your lips but then you will just laugh at them because your chapstick smells like chocolate and makes your lips look luscious-loo and delicious.

    Trust me, boys like a chapstick that smells like chocolate.

  3. To avoid the hectic-ness of student life, prep food ahead of time.

    That means chopping up veggies, cooking a giant batch of quinoa, and opening a million cans of beans. Oh, and make your hummus for the week, too:)I usually do all of this biznass on Sundays just because it’s the day before Monday, aka the start of the week, aka I pack redonk amounts of food with me at all times. Being a student ain’t easy, kiddos!
  4. If you are limited on time for an outline, use the glossary.

    Aka, when I have zero time to do a Bio outline, I scan for all of the vocab words and then write down the definitions from the glossary.Done, and done.

    This sometimes also works for the humanities, but not always.

  5. If you’re reading a book for a class, read the book and then review with online tools.

    My favorite websites for reviewing material and understanding it on a more in-depth level are LitCharts and SparkNotes.LitCharts is best for very specific (and extensive) information, and SparkNotes is better for reviewing general events of parts of the book.
  6. For soft and silky hands, moisturize every night before bed.

    Every night before bed, I slather on one and a half pumps of Curel Ultra Healing lotion. I rub it in, and then go straight to bed and let the rest soak into my hands. I wake up every morning with silky, soft hands!:)It’s fantastic in the winter because of the dryness and the freezing cold temps. However, I use this stuff year-round..who doesn’t love smooth hands?!
  7. Use a planner.

    Uh, self-explanatory. Planning is essential (except in the case of spontaneity, I wouldn’t mind an impromptu drive down the East Coast to Florida).I don’t think I can praise the use of planners well enough. I use my planner for EVERYTHING because I can sometimes be forgetful and it is awesome to have a cute little book with all of my appointments, dates, and assignments written out.

    Plus, if you write in the time you’re planning to work out, it feels more like a part of your life instead of something you have to “just squeeze in”. Shazam! Done, and done:)

And Then There Was Mousse. [Indulgence Friday]

Good morning bloggy boos! I hope everyone had a rockin’ Indulgence Friday🙂

Mine was a blasty! I had an awesome time do-si-do-ing through my half-day and then lunched it up before I read a ton of Thrive during my 60-minute elliptical power sesh.

How did I do that, you may ask? I brought the giantest (shut up there is no grammar this early in the morning) rubber band I could find and wrapped it around the elliptical to hold my book flat. I wish I had a picture but I don’t so I will leave you to your imagination:)

After my workout, I didn’t even bother to shower (I know I am gross) so I used my favorite trick…HOMEMADE DRY SHAMPOO🙂

I use this stuff way too often to reveal (showering is for wusses), and there will soon be a recipe for that dry shampoo:) Actually, it isn’t really a recipe, just more of super simple secret trick that I will soon reveal to you and you will never have to wash your hair again.

Okay, that is a lie, you should shower because otherwise you will be stinky and greasy and no one likes a stinky person.

Just saying.

AAAANYwho, the Baby Sister and I headed out to a dinner date we’d had planned for a week or so, and took advantage of a gift certificate AND a buy-one-get-one-free coup that we had saved up for one of our favorite restaurants (we love our coupsSmile).

I know, we are cheapo but hey, who can refuse a free meal? Winking smile

Peanut butter + noodles = how much better can it get?!

We have been obsessed since we were itty bitty and knew what Asian food was, aka we would always demand peanut noodles because we were picky and to be honest that was  all we would eat.

Now we get it every time we go to this restaurant.

Which is every week.

Uh. Greed. Can I just say that fortune cookies are very very wise? Only a cookie could think of that;)

Then, we mosey’ed over to Sbux and didn’t buy anything, aka sat and chatted and shared jokes about the fun people that sit in the big comfy chairs with their laptops playing COD. Dream big, people, dream big:)

Then, in honor of Indulgence Friday, I recreated the foodgasmic Chocolate Mousse I had last weekend.

Oh, did I ever.

Quick, simple, and rich. This will be my birthday cake frosting this year…sprinkled in cacao nibs:)

And the best part? It is mostly raw, and can be made completely raw with the use of raw cacao instead of cocoa powder (I am a compulsive “nothing goes to waste” person, so I was not about to open a new bag of raw cacao with a wide open can of Ghirardelli staring at me). Tadaa!

Raw Chocolate Mousse

Makes about 1 cup (2 large servings)

Ingredients:

  • 1 ripe avocado
  • 3 tbsp. cocoa powder, or 3-5 tbsp. raw cacao
  • 3 tbsp. agave nectar, more if desired (I prefer a more bitter-tasting chocolate, so I used no more than 3, although I didn’t really measure)

Directions:

  1. Open avocado by cutting in half, removing the pit, and then scooping the flesh out.
  2. Process avocado in a food processor until creamy.
  3. Add in cocoa/cacao powder, then agave nectar (this order is important in order for the powder to not go all over the inside of your food processor). Alternatively, you could do all of this in a bowl by mashing the avocado and then mixing in the rest of the ingredients thoroughly once the avocado is creamed.
  4. Chill in the fridge (or the freezer is even better, if you like it super thick like I do) for at least 15-30 minutes.
  5. Serve topped with cacao nibs, fruit, chocolate chips, chocolate syrup, agave nectar, or whatever you fancy! Swedish Fish would work too:)

I topped mine with bloobs, raspberries, and cacao nibs. Love me some chocolatey endorphins🙂

I. love. this. thing. Perfect for blending up oats, aka this thing was my fifth appendage when I got my wisdom teeth out. All of my food = blenderized in this sucker.

Process until creamy, like so:

Hahahaha I love Amanda Bynes🙂 Did anyone else watch What I Like About You back in the day? It was my favorite. show. Literally had to come home from school by three every day in order to watch this show or the world would end.

My plansky for the rest of the day? I’mma go make some protein pancakes and then get back to you with that recipe asap:)

After that? No idea, but I LIVE for the weekend and something fun will go down:)
