Made With Love [Indulgence Friday!]

Top o’ the mornin to ya, bloggy boos, and happy Indulgence Friday! How are you?

I am rockin because it is FRIDAY and I am currently munchity munching on some goodies :) Slash later on I will be at the gymsky doing my thang and then going out to dinner with my friend Mickey who I have not seen in forEVER. He is probs reading this right now, so hey, hey, hey  Mickey! (name that song!)

His Madre is going vegan for Lent, so you know how happy that makes me. What a wise woman.

Anywho, yesterday was THE most gorgeous day I have seen in the last million years of this nuclear winter. (The Day After Tomorrow, anyone?) So obviously with sunshine and 64 degree weather (say whaaaa?) I was basically jumping out of my seat in class waiting to go outside and run in the sunshine!!

It was gorg, I was sweaty, it was awesome.

The Padre kicked my bootay. My total for the day: 8 miles. Feel the burn!

I was still majorly sore from the Kettlebells class that Lisa and I took Tuesday night (HOLY MUSCLES) so it was not exactly my fastest run. It’s aight though, I am pretty sure I got a tad less pale.

Oh and I may have gotten new kicks immediately afterwards. I was going to get the updated version of my Asics, but I decided to try on some new shoes as well because my arches/footstrike have changed over the last year.

I decided to go with the Nike Zoom Structures. I like them MUCH better because they are leveled off more towards the front of the foot, which makes it much easier to move my footstrike to near the middle and front of my foot rather than my heel.

And I obviously had to try the Nike Free’s. The rock in case you wanted to know. I am most likely going to make these a birthday present to myself when July rolls around. I would be so super speedy in these!!

It’s sideways, I can’t figs out how to fix it and I’m a tech whiz so that’s unusual. You’ll  probs have to turn your head.

Oh and since you all know about my obsession with Darren Criss (is he gay or is he not gay? That is the question), here is a song that will make you dancy wancy:

Okay so besides the fact that Darren was clearly made with love….I have something else for you that is as well. And even more delicious. Wait, Mrs. Hall did you hear that?! Double-entendre up in this jointtt!

Anywhos, a few weeks ago (yes, weeks…bad blogger, bad blogger) I got a hugh jass package of granola from Love Grown Foods.

When Laura from Love Grown contacted me asking if I would be interested in trying some, I jumped right on that! We all know that I am about the crunch. (hello carrots)

So, I opened it right away and found a sweet note from Laura and the Love Grown Team. Awe:)

Anyway, onto the flava flavs! I was sent Raisin Almond Crunch, Sweet Cranberry Pecan, and Cocoa Goodness. They obviously knew what they were getting at when they put “goodness” in the name. Hooked immediately.

The best part about this granola is that it is made with no artificial sweeteners or sugar. It is made completely with Agave Nectar, which I love but do not use very often because, in my mind, sugar is sugar no matter where you find it. However, there was not an overpowering sweetness in any of them.

Gluten-free and vegan? Say no more.

I will start off with my personal favorite, which is a dead giveaway because it has raisins in it. You knew this was coming, people!

Raisin Almond Crunch:

I absolutely loved this flavor. Cinnamon-y, crunchy, and filled with almonds, coconut, and RAISINS! The star of the show:)

I had a few issues keeping my hand out of the cookie jar bag. Give me da crunch!

Next up was the Sweet Cranberry Pecan.

I am not a HUGE fan of cranberries, but I love pecans, so I loved this. I think I may be a cranberry lover now!:)

Next up was Cocoa Goodness.

I am not going to lie, this did not disappoint. I love all things chocolate and this was no different. Let’s just say this one is the most empty bag in the house. Even though Raisin Almond Crunch will always have my heart:)

The coconut in all of them made me super happy, because as you know, lately I  have been addicted to coconut. I used to hate it because all I knew existed was the sugary, processed jank. But real coconut, I like:)

  • Lisa’s in the morning for a raw brunch and girl talk
  • Spending the afternoon and evening with a girlfriend of mine who I have not seen in way too long. There will be plenty of bonding, including Hot Tub Time Machine. Best movie ever, if you have not seen it go do it now, you can thank me later.

Going out to din din and going to a get-together! Going out to dinner is definitely and indulgence..I am a broke student, it happens.

Brunch: The Mama of all Meals, Inspired by Autumn

As you know from my last post, I ran my first 5K today! It was so fun, challenging, and left me with a monster appetite.

And since it’s Sunday, it had to be a Sunday Brunch – no no, just plain ol’ brekkie would not cut it today (even though my brekkies are never ever plain..it’s the best meal of the day! I like to live it up).

Lately it’s been chilly chilly! I’m talkin’ 60 degrees. I love this weather so much. The crispness of autumn is one of my favorite things – it makes me want to cozy up by the fire with some apple ciderpumpkin pie, and watch Halloween and Thanksgiving movies like Hocus Pocus (which I watched last night! couldn’t help myself) and Halloween Town (I am obsessed with this movie. childhood favorite).

Plus, who doesn’t want to jump around in a pile of leaves?! I would any day :)

So, this was inspired by my absolute love for autumn and the weather change – it was nostalgic and delicious.

Isn’t it amazing how food, its taste, its smell, its textures…can bring back so many memories? That’s one of my favorite parts about food – it’s an experience; a work of art.

So, I came home and made these babies :)

Pumpkin Apple Cinnamon Pancakes :) Mmmmm.

Topped generously with almond buttah, Apple Spread, bluebs, blackburries, and cherries on the side. I love my berries :) And cherries. Very cherry…it all rhymes! I should be a poet..

It was the perfect post-race fuel. My muscles (and my tummy!) were incredibly happy :)

The process:

Ohhh yes. At this point, they smell amazing :) Flippage!

The first few:

…..Aaaaaaand served.

And now, the goods.

Pumpkin Apple Cinnamon Pancakes

Makes 6 servings

Ingredients:

  • 2 2/3 cups spelt flour
  • 2 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 tsp. nutmeg
  • pinch of salt
  • 4 tbsp. NuStevia Baking Blend (or agave, maple syrup, suga, whatever floats your boat! this one’s my fave)
  • 2 cups pumpkin puree (or mashed sweet potato/any other sweet orange tuber/squash)
  • 2 cups unsweetened vanilla non-dairy milk (I roll with rice milk)
  • 1 large, or 2 small/medium, apples (cored and chopped tiny)

Directions:

  1. Mix pumpkin, apple pieces, and non-dairy milk in a small bowl. Mix all other ingredients in another, larger bowl.
  2. Combine wet and dry in the largest bowl, then heat a large skillet (whatever one you like for pancakes) over medium-high heat and spray with canola oil (or whatever oil you roll with, it’s cool!).
  3. Pour into pan with a large spoon or ladel, and be sure to spread out these pancakes! The batter will be thick, so spreading by hand is important so they cook all the way through.
  4. Flip once there are lots of bubbles around the edges and on top/in the middle and the edges begin to brown. Be sure to re-spray the pan in between flips – we don’t want any stuck pancakes!
  5. Cook until both sides are well-cooked and browned to your liking, then serve warm :)

Tips on How to Eat a Pancake:

Yes, these tips are fo’ real.

  • With maple syrup, agave nectar, your fave liquid sweetener
  • Topped with Banana Soft Serve!
  • Slathered with almond buttah, various nut butters, Earth Balance
  • With Apple Spread :]
  • Sprinkled (or covered) with raisins, other dried fruit, various fruits including berries, more chopped apples, tropical fruits…go crazy!
  • As a brekkie-style PB&J: spread your fave nut buttah (mine’s almond) and apple spread, or sliced apples/pears, between two pancakes and eat like a sammie! That’s what I like to call: pro. Pancake champ!

Question: What’s your favorite way to eat a pancake?

Mine would definitely have to be the way I rolled today – tons of  almond buttah, apple spread, and fresh fruit :] Alllll the way!

Reason to Celebrate

Well, for one..it’s Friday! Hello weekend :) And two…I LANDED MY FIRST JOB! This is particularly exciting for a few reasons: a. It’s my first job, b. I’ll be making good money, c. It was one of TWO jobs I was offered today, and d. It was landed in under ten minutes. No joke. The lady just said, “Okay, I am definitely going to hire you! Orientation is sldkfugeios….” It. was. magical. My mom literally dropped me off, drove halfway down the street, and then had to come back. Ahh, the joys of Friday the 13th :)

I had a job interview this morning at 8 (which I also landed), then came home and had some oatmeal with a TON of fresh berries. I’m actually really liking this grains-at-every-meal thing that The Kind Diet has me going on.

So for lunch, we had leftovers with salad:

Above you see my famous Spinach Pie, roasted asparagus, and a kale salad with some limon-wataa. Yum :)

Then I headed over to my second job interview and now I am “employed”! So tonight we planned an outdoor celebration dinner that wasn’t too fancy, but the patio was beautiful tonight. And the REAL celebration was marked by our first batch of vegan brownies! Or vegan brownie muffins I should say. They were so perfect and ooey and gooey…Rebecca and I had to split a second! I couldn’t help myself :)

Din din :) Kale salad, roast green beans, great northern beans with scallions and mushrooms (LOVE mushrooms!), and millet salad with veggies, raisins, and lemon juice.

Oh. my. god. The ooey gooey brownies

Ooey Gooey Brownie Muffies

Makes 8 Muffies

Ingredients:

  • 3/4 cup whole-wheat flour
  • 1/3 cup cacao powder
  • 1/2 cup NuStevia Powder Baking Blend
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1/2 cup vegan chocolate chips
  • 2/3 cup + 2 tbsp natural, unsweetened applesauce
  • 2 tsp. vanilla extract
  • 1/2 tsp. cinnamon

Directions:

  1. Preheat oven to 350F and grease 8 muffin cups.
  2. Combine wet ingredients in one bowl, dry ingredients in another. Combine each separately then pour wet into dry and mix completely.
  3. Batter should be very thick, but keep stirring; it will thoroughly combine, I promise! The thickness makes them gooey.
  4. Spoon into muffin cups with an ice-cream scooper and then bake for 15-20 minutes, or until the tops are just firm but inside feels gooey when you press down.
  5. Cool for 10 minutes and then serve warm. They’re best this way because the chocolate chips are still gooey – mmmm :)

We also had some of my homemade kombucha with dessert! It was the perfect compliment, and made a perfect celebration evening. Who ever said Friday the 13th was always bad?

Also, during my blog reading today I discovered this treasure. This blog has so many inspiring posts, I kept finding more to read! Start with that post and then look at the others. They are so incredibly enlightening and really gave me the spiritual uplift I was looking for.

Ahhh, now time for bed! Running and farmer’s market in the morning :) Goodnight lovies!

Question: What’s your favorite thing about your local farmer’s market?

Mine is the environment; the quality and vibe that you get from so many people being so friendly :) There’s the Spice Guy, the Corn Guy, the Quinoa and Rice Guy, and the Guy I Get All My Fruit From. It’s the perfect start to my Saturdays.
