PJ Sattyday + The Most Glorious Pancakes I Have Ever Eaten

Good morning lovelies! I hope everyone had a rockin’ Sattyday!

I sure did:)

I slept in until about 9 (a big deal for me), and then I had my usual green smoothie while dreaming about the pancakes I was about to make while I did my morning blog stalking reading.

Then, I whipped out my handy dandy whisk and got a-whiskin’!

The result? My house smelled like cookies and my sister literally ran into the kitchen wondering why I was baking cookies so early in the morning.

Not that I haven’t done that before.

I had been dreaming of chocolate because of Friday night’s Raw Chocolate Mousse (which by the way is SO much thicker and more delicious when left in the fridgy fridge overnight), so obviously my pancakes had to be full of chocolatey deliciousness.

I mean, since it’s never too early for chocolate…obviously.

And since it was the glorious morning and we have perfect windows in our dining room, I didn’t even have to venture out into the snow for natural light! Food blogger WIN🙂

I have to point out that these were the thickest, doughiest, most ginormous pancakes I have ever inhaled. If this is not the most epic plate of pancakes you have ever seen, I seriously question your sanity (I would say I’m joking, but that would be a lie…these suckers filled me UP).

So, since it’s the freakin weekend, you should probably make these pancakes. Just sayin;)

Bee tee tubs, these were rockin slightly undercooked and doughy…I love me some fudgy fudge🙂

Chocolate Cookie Dough Protein Pancakes

Makes 2 large pancakes, or a million small ones.

Ingredients:

Directions:

  1. Mix dry ingredients, then add banana and mix. Add wet ingredients and combine thoroughly.
  2. Heat a frying pan over medium heat for 3-5 minutes, then add a dab of coconut oil (or canola oil, olive oil) and allow to melt and heat for a few minutes.
  3. Add batter to the pan to desired pancake size, and allow to cook for about 5 minutes (or until bubbles appear in the middle) and then flip and cook for an additional 5 minutes. Repeat for each pancake, adding more oil in between pancakes.
  4. Serve topped with Chocolate Protein Frudding (recipe below), cacao nibs, and fruit. Or, if you’re feeling extra adventurous, plop some chocolate chips and maple syrup or agave nectar on those babies!
  5. Devour.

My first thought: “Ooh, baby, baby! La la la la la la la…” (name that song!)

Yeah, they were that good.

Who said you shouldn’t have dessert for breakfast?

They were certainly on crack(ers).

Topped with blueberries, raspberries, cacao nibs, and Chocolate Protein Frudding.

And yes, I took the words “frosting” and “pudding” and smooshed them together. I told you I like to make up words😉

Chocolate Protein Frudding

Ingredients:

Directions:

  1. Combine in a bowl and chill in the fridge for at least one hour.
  2. Remove and stir, adding more liquid if necessary to desired consistency.
  3. Use as a topping for pancakes, waffles, oats, overnight oats, on cake/brownies/cookies, or by itself! The possibilities are endless:)

This yields a very pudding-like texture. I love it, and it was the perfect spread for my pannycakes!

To make into a frosting, I would recommend processing it in a food processor to give it a smoother texture.

Then, I proceeded to NOT change out of my PJ’s and watch four hours of Hulu with the Baby Sister.

In a nutshell, I was in my pajamas all day.

It was AWESOME.

That’s all for now, lovies! I’m off to church and then to the gymmy gym gym to laugh my ass off at all of the superbowl commercials and then eat lots of chocolate mousse🙂

SUPERBOWL COMMERCIALS WILL BE ON HULU TODAY! Aka, I don’t even have to watch sweaty men jump on each other in order to get my Superbowl commercial fix:) But my faves are Lie to Me, Greek, Desperate Housewives, Glee, Buffy, and LOST. But mostly Lie to Me, I am obsessed:)

What is your favorite kind of pancake? What do you top them with?

Uh, chocolate chocolate chip, banana pancakes, and anything loaded with fruit. Slash I love topping mine with almond butter and apple butter and tons of fruit, it makes them taste like a PB+B sandwich, almond-apple style:)

Tangent Tuesday

Good morning lovies, and Happy Bunny Bunny Day! I hope everyone had an awesome Monday:)

Thank you all so much for your thoughtful comments on my last post! I loved hearing your stories and opinions about “supporting the troops”, whether it be through supporting someone you love, being a soldier yourself, or simply supporting the humanity of our men and women in uniform.

Additionally, I cannot be more thankful for all of you who are praying for my family. The last few months have been a trying time, which I will talk about on CK eventually, but for now needs to remain a family matter.

It warms my heart that we are in your thoughts and prayers! Please also keep Allie’s grandmother and family in your thoughts and prayers. Together, we can all get through the best of times and the worst of times! That is one of the reasons I love blogging so much, all of YOU:)

You really are the sweetest readers in the world, and I cannot even tell you how much it means to me to read your sweet comments and e-mails every day. Sorry to get all sappy on yous, but I just love you guys so much!! Let’s all have a bloggy meetup and talk about our deepest darkest secrets and eat lots of cookies and pizza and chocolate, mmmk?:)

I really wanted to blog yesterday, but I was just too busy! The start of being a second semester senior is both stressful and exciting. Preparations for and decisions about the end of the year (and next year!) are being made, and I cannot wait to get a head start on my life:)

So, now for Tangent Tuesday! My girl Janae started Three Tangent Tuesday a week or two back, and I caught on with the tradition, but today I am just going to go on a tangent instead of telling you three random things because I like to talk too much🙂

Firstly, I got this son-of-a-gunster in the mail yesterday, and I cannot put it down. Can I just say that Brendan Brazier is a genius, aka my idol, aka reading this book is going to make me super speedy:)

If you have not tried Vega products or heard about Brendan, you clearly live under a rock (just kidding…kind of) and need to go check it out now (the funk soul brotha…name that song!). He will make you an athletic MONSTA:)

Also, I started two new classes! Psychology and Law & Government.

Psych I just love, and Mr. Hiller is bomb. He has incredible dry humor that makes me want to be his best friend. Because it’s TOTALLY not weird to want to be friends with your psych teacher.

Law & Government is a riot because it is taught by my main man, DWilson. And yes, I call him DWilson. Last year, I had a serious boyfriend (a story for another day), and he would bring me to his Law & Government class on occasion to show me off and just basically be a riot (he was the “funny guy”). So, DWilson and I are tight. We chat about wisdom teeth and all things hilarious like Jersey Shore and whoopie cushions.

You know, normal stuff.

In P.E. we started our square dancing unit, which is like a BIG DEAL at our school. First of all, everyone loves it because we don’t have to change, and everyone gets super into it and wears cowboy hats and boots. At the end, there’s a square-dance-off that is televised throughout our district and people actually care about winning this thing. And no, there is no prize like a giant jar of pickles or anything.

HALT, QUICK NOTE!!

This is really really important. So listen up.

I discovered that Cookie Dough Bowls are even better with a tablespoon of chia seeds and a tablespoon of ground flax mixed in pre-soaking (ew, soak is such an icky word!), if it is even possible to make these any better.

Well technically, you could add a bucketful of Swedish Fish and Twizzlers and chocolate chips and marshmallows and chocolate sauce, but that is only allowed on Sundays.

So, if you haven’t had one yet, I am here to inform you that you have not lived and must go mix one up right now. Yeah, right now as in get off your tooshie, missy!

 

That is a recycled picture because I blog too early in the morning and there is no such thing as natural light in Upstate New York.

Sorry, kiddos, you would NOT want to see one of these bowls in fluorescent lighting and all mixed up, it is not a pretty sight. But then again, fugly food always tastes the best, right?;)
