My Tummy + News Alert (x2)!

Okay people, it’s about to get grumbly…in my tumbly.

If you’ve ever met me in person, you would know that I am always. eating. Like, I am pretty sure it’s not normal but what can I say, I like my food! The problem (or lack thereof) is that some days I just am insatiably hungry. Like eating-a-whole-CK-size-container-of-hummus (and still hungry) kind of hungry.

Recently, Hollie posted about this and well I thought, what a better time to talk about my raging appetite! We can all band together and make a day of the year where all we do is eat all day. And then go on a run right after. Plus a sleepover filled with Never Have I Ever (and juice spritzers) Smile Sound good?

Kay good.

I’m not going to go into HUGE detail, but it usually involves a cookie dough bowl, ten larabars, a container of hummus (w/ raisins and balsamic obvs), and some more raisins for dessert. And then I get hungry again later. It never stopsssss

….I love being an athlete:) What better excuse to eat your own body weight in Quinoa-Hummus-Raisin-Balsamic bowls?

Strangely though, this usually only happens on days I DON’T work out. Which is totally fine because then I can just eat all day:)

I’m a walking holiday!

Good (afternoon) bloggy boos! How are you?

I am currently noshing on a cookie dough bowl because um I woke up after eleven. Whaddafuh people this NEVER happens to me! I am usually the girl that can’t sleep past eight. This is abnormal but I am embracing the need for sleep, a girl’s gotta do what a girl’s gotta do!

So anywho, yesterday as I was driving to din din with Hollie, I noticed that a. every single bar was packed, and b. everyone was decked out in St. Patty’s day wear. People, St. Patty’s Day isn’t until Thursday, couldn’t you have waited at least until Thirsty Thursday?!

The Jersey Shore-esque title comes from a. The fact that I am the bubbliest person you will ever meet, and b. This guy:

Hahaha I was laughing really hard. He was just dancing on the sidewalk, I am pretty sure he was blamin’ it on the juice (name that song!).

Hollie and I met for din din at Natural Oasis, aka the place I go with ALL of my bloggy best friends, since the food is delicious, cheap, healthy, and the staff all know me. They even know my order and the fact that I prefer herbal tea, they don’t even have to ask. It is not unusual for them to ask “How’s the family?” I love being a regular Winking smile

We started off with two Coconut Milk Chai Teas (herbal) with agave.

IMG_4245

When Lisa and I went last weekend, we didn’t get these and I have NO idea why. This was so good!! I went a little heavy-handed with the agave, but it was still delicious nonetheless:)

Then, we ordered two Ethiopian Spiced Green Lentils (below) along with Brussels Sprouts + Cauliflower + Potatoes and Kale + Collard Greens. It obvs came with tons of injera. Not many photographs people, I apologize. I was too caught up in chatting! Smile

IMG_4247

Then we went back to mi Casa for cookies and Biggest Loser watching. Guys I am unhealthily obsessed with this show now. Jillian and Bob are my idols, I would love to spend every day making people healthier and (yelling at them) and talking with them about emotional issues.

Because in all honesty, morbid obesity (and obesity in general) is an eating disorder. Although it is not the stereotypical eating disorder, it is one. Instead of depriving themselves to slowly die, they are  overfeeding themselves. It is just as dangerous and emotional as what is thought of to be a more “classic” eating disorder (anorexia, bulimia, etc.).

So, we semi-stuffed our faces with cookies, raw chocolate mousse, granola (more on that soonSmile) and a Quinoa-Hummus-Raisin-Balsamic Bowl for my homegirl!

IMG_4249

In my classic doggy bowl. Lurve<3

I think it is safe to say she loved it.

A picture together before she left:

Untitled

Please ignore my scraggly hair. I desperately need a haircut! Slash a hairbrush. Ya know.

Her boyfran then picked her up and I went to sleep. I am pretty sure I slept an inhumane amount last night, but what can I say I love to snooze:) Besides, I have to save up my lack-of-sleep abilities for the school week!

See you in the morning lovelies!! Until then, you can wonder how on Earth one tiny person can eat this giant container of hummus in three days. Yup people that just happened.

IMG_4166

I am pretty sure it’s bigger than my head. Bee tee dubs this is a quadruple batch of my homemade hummus. You know you have a problem when you go through that much hummus in three days…with no help.

Anyone interested in having a hummus-raisin-balsamic lovers party?! I will gladly host Smile

Don’t forget to send in your Mission: I Feel Pretty pictures! These always make my day:)

Do you watch Jersey Shore?

Only while I’m working out:) Trash tv is only allowed while you’re doing something productive!

Are you a hummus-lover too?

I think the pictures speak for themselves;)

How are you being a walking holiday today?

Being as bubbly as Perrier and spreading smilessss:)

Wordyless Wednesday + Mission: I Feel Pretty!

Good morning chickadees! Happy Hump Day! How are you?

Today’s post is going to start out wordy, and then it is gonna go wordless. Get ready for a post that is moody mood!

I am so glad you all loved the recipe yesterday! Looks like quick and simple meals are your thang;)

Anywhos, yesterday I came home super tired, so I ate a quinoa-hummus-raisin-balsamic bowl and took a napsky with my neck heater pillow.

I am somewhat obsessed. It smells so. good. I am pretty sure it is filled with magic beads?

Lately my neck/shoulders have been SO tight! Can you say shoulder massage?! (preferable by a tall, dark, and handsome man that likes long walks on the beach, cooking, watching the Bachelor, and giving massages:))

I. freaking. love. naps.

As a student, I have learned to embrace the afternoon siesta with open arms. If you haven’t tried it, you should. Way better than using carbs/chocolate/caffeine to stay awake.

Oh, and remember when a friend of mine thought I was eating a bowl of cheese?

Yesterday he thought that my quinoa-lentil-raisin-balsamic bowl was Cocoa Krispies. When I told him what it was, he thought it was so cool that my food was exotic.

I told him only if exotic means not WonderBread:)

Hahahaha he liked that joke.

Would you like some hummus with your bowl of raisins?

Good evening bloggy boos!! How are you?

This is an odd time for me to be blogging…it feels so weird. Rooooooarr.

So, I am going to make this a quick one because I am starting writing this post at 8:41 PM and I am very tired aka I am going to bed as soon as I hit publish. Let’s see how fast I can write this post. Okay ready set GO!

Firstly, I have to thank you all so so so much for all of your beautiful comments on my last post!! You have no idea how much it means to me, I cried while I read every single one of your comments, and I will be responding to them as soon as I have a free moment and am not asleepy weepy in my warm bed:)

My Dad read the post and absolutely loved it, and he loved every single one of your comments. I bet you a million bucks he cried while he read them but he would never admit that to me so thank you for making my Daddy’s heart smile🙂

After he read it, he came downstairs and we had the most special daddy-daughter hug moment there ever was. I cried obviously and we talked about our upcoming college trip to D.C. and all of the fun things we will do together like run past the White House every morning. But more on that at the end:)

Also, keep the Mission: I Feel Pretty pictures coming!! You are all so beautiful, I cannot even tell you how happy it makes me that y’all are realizing how beautiful you really are and celebrating it! Can we all be best friends and have a sleepover please and talk about food and makeup and men and watch Mean Girls?

p.s. If you are ever feeling down about yourself, not being kind to the Little You in you, or feeling downright sad or bad about you or your body, do NOT hesitate to send me an e-mail!

I love receiving e-mails from you guys and helping you through hard times, it helps me to keep myself thinking good thoughts and it makes my heart so warm and fuzzy to help others! The beautiful thing about blogging is that we can all support each other, we never have to be alone:)

IMG_3726

Also, if you ever come to New York State or the East Coast at all for that matter it will happen, I will be sure of it, we will all teleport to the same location and party hardy with tons and tons of candy and raisins.

SPEAKING OF RAISINS the shortage has been replenished!! You can just imagine how skipdiddlydoo happy I am:)

BUT, unforch I have been having tummy problems and my Madre thinks it is from the sulfites in the redonk amounts of balsamic vinegar I consume every day, which is a valid point I googled it (thank you WebMD). So, I will be going without balsamic vinegar for the next few days and I do not know what I am going to do with myself.

Does anyone know of a balsamic vinegar that does not contain any sulfites?? Please let me know because I am dying, I do not think you understand, I put balsamic vinegar on EVERYTHING. Hummus, salads, grains, beans, anything with raisins, you get the idea.

Oh, and the title came about because as I was eating my third bowl of hummus, buckwheat, and raisins tonight, I realized that it was mostly raisins.

I think I have an addiction people, I need to find a Raisins Anonymous or something this could get dangerous.

—————————————————————————————————

Okay, first things first.

I made popped amaranth!

IMG_3774

Yeahhhhhh boiiiii

Shmelled just like popcorn!:) And I love the shmell of popcorn. Yumshky.

(That is what I would sound like if I had a lithp that made “sh” sounds instead of “th”, except I don’t have a lisp I just like to talk like that)

And chickadees, this was embarrassingly easy. I was really intimidated by the idea after reading about it in Brendan Brazier’s Thrive and on The Edible Perspective, but you will laugh when you see how easy it was.

First, heat up a saucepan on medium-high heat. Bee tee dubs, make sure you have a lid or your amaranth will pop all ova tha place, but Imeann if you’re into that kind of thing and cleaning up messes then don’t bother.

Measure out a couple of tablespoons (do it 2 or so tablespoons at a time, it burns easily), pour it in, pop on the lid, and shake the pan back and forth for about 15 seconds.

At this point I turn off the heat and check them to see if they need to pop more, if they do then I turn the heat back on and do another five seconds or so. Usually this is enough time though if the heat is on high enough.

Pour into a tupperware and refrigerate for up to a week!

About to be popped.

IMG_3767

Success!

IMG_3768

In my cereal bowl, duh.

IMG_3777

I mixed some up with chia seed gel, cinnamon, stevia, and hemp milk. And topped with rasps, as per usual.

IMG_3782

I really did not like the texture of this. Maybe it was the chia seed gel or the fact that I used hemp milk?

I am used to a more thick, chewy breakfast mixture (I’m looking at you, cookie dough), and this was WAY too liquidy. Icky! Made my tummy feel gross.

But, if you are a cereal person which I SOMETIMES am, but only if it is not soggy, then this is for you:)

I also had the popped amaranth with my lunch, coated in delicious balsamic vinegar (sad face) and tons of hummus and raisins.

It was delicious and crunchy, and added a fun toasty flavor to the mixture that reminded me of sushi rice! Which is weird, but maybe the balsamic added a soy-sauce like flavor.

—————————————————————————————————

Next up, today’s outfit! I actually put effort into my outfit today, surprise surprise, and I even washed my hair. Holy moly wait I made an effort to look good today?!

Don’t get too excited though, this is not going to happen every day;) I had an internship interview after school for nutrition and it went really well:) I am so excited to start it this summer and tell you all about it!

Anywho, the outfit. It will be in the form of more classy MySpace-esque pictures, get used to it people:)

IMG_3793

Why I always make this face when I take pictures of myself, I honestly don’t know. I like the way it makes my face muscles feel though, I know I am weird.

IMG_3796

Kneeling because my mirror is not up on the wall, it is propped on the floor because I am too cheapo/lazy to mount it on the wall:)

Everything is Forever21 except for the tank top which is Delia’s, and the fuzzy socks which are a la mi Madre🙂 I think she got them at Old Navy though, they are so cute and fuzzy and have hearts on them! They keep my feetsies very toasty in the winter.

Wait breaking news…TODAY IS WAS A WHOLE 48 DEGREES OUTSIDE!! You have no idea how happy this made me…it smelled like spring. You know the shmell that is just so fresh and skippidy and makes you think of Easter bunnies and skirts and sandals? Yep, I smelled the good smell today and it made my day a million times better:)

—————————————————————————————————

Nextly, look at the adorable Valentime’s Day gifts my parents gave me! They are so cute, I was smiling ear to ear when I found these on my placemat in the morning wrapped up in pink wrapping paper. They know me too well:)

Loofah on a stick.

IMG_3730

Remember when my loofah broke? Uh yeah, I have been in dire need of a new one ever since. Madre to the rescue!! I love this, and it is eco-friendly which rocks too:)

Dr. Bronner’s!

IMG_3734

This guy is a soap genius, and this smells so minty fresh and wakes me up first thing in the morning! Plus the ingredients are natural and fresh, except for the sodium hydroxide, I do not know how I feel about putting an NaOH2 compound on my body because I have no idea what it does but at least I know its formula (thank you AP Biology!).

And lastly, the best. gift. ever.

IMG_3758

Yes, those are PINK travel utensils that snap together. I did not know how to contain my excitement, when I brought them to school Tuesday I was showing them off to anyone and everyone. Obviously it is my job to spread the snap-together excitement.

IMG_3759

I have no idea how the ‘rents found these, but if you would really like to know just shoot me an e-mail and I will gladly ask the Madre for you:)

—————————————————————————————————

And LASTLY, this is what I found in my pocket yesterday:

IMG_3789

That would be a shriveled Carrot Candy Corn.

Remember Carrot Balls and Baseball Barrots?

Well, this was a carrot that was shaped EXACTLY like a candy corn, and I put it in my pocket to remember to take a picture of it, but instead the jeans went in the wash with the carrot and it ended up like this.

Hahahhahaha, bad blogger:)

But lezzbehonest, this is way more humorous than an oddly shaped carrot. Maybe this is what a carrot would look like if you dehydrated it or raisin-ified it?

—————————————————————————————————

Okay, lastly….

Calling All Bloggers!

The Padre and I will be in the Washington D.C. area on Sunday, Monday, and Tuesday of this weekend/coming week for college visits, so if you are in the D.C. area and want to have a bloggy meetup, I would love to have a blogger dinner at Café Green or someplace equally delicious!

If you’re interested, shoot me an email at chefkatelynblog@gmail.com🙂

—————————————————————————————————

That’s all for tonight lovlies! Have an amazing evening, and come back for tomorrow’s Indulgence Friday recipe! I will be recreating this chocolate cake, aka I am drooling just thinking about it.

Fave cereal = oat bran, but I used to love shredded wheat and Grape Nuts before I was gluten-free! Slash fave popcorn topping = chocolate chips, cinnamon, nooch, and sea salt:)

How did you celebrate Valentine’s Day? Did you get any gifts?

I love my parents:) Slash I don’t need a man for Valentine’s Day! I spent it eating chocolate and feeling pretty:)

Three Things

Good morning bloggie babes! Thank you for all of the sweet comments on my last post, I love you guys like you wouldn’t believe:) If you haven’t had a chance to look yet, I highly recommend it. The discussion going on in the comments is highly uplifting, you all are so beautiful!

This morning’s post is a tribute to my girl Janae who requested that everyone do a tangent of three random/awkward/weird things about themselves on their blogs.

Here we go!

  1. I eat straight hummus and raisins mixed together. A LOT. (I make my own hummus because I can’t stand the saltiness of packaged business, you could never eat a whole cup of that stuff straight, now could you?)
It tastes good, don’t knock it till you try it;)

    +

    =

    Awesome

  2. When I listen to music on my own time, it’s always something slow and relaxing like Michael Buble, Norah Jones, you get the idea. I’m a bit of a sap. But when I work out, I listen to hard-core rap. When I run, don’t be surprised if you hear me singing about gettin’ Arab money.

  3. I drink tea. A LOT. I have a thermos that is SO cute that I carry around 24/7 with my collection of tea bags that goes on forever and ever (and a bag of Stevia that semi-looks like an illegal substance when I put it in my tea).

IMG_3291

That’s all for now loves! I have to head off to classSmile

Tell me three weird/awkward/random things about you!

Simplicity at its Finest

I love the farmer’s market. We picked up enough produce to sink a ship (aka, the usual 🙂 ), and got some beautiful heirloom tomatoes! I’ll put up a picture tomorrow, they are so photogenic. They sold them in a variety pint, so we have lots of fun shapes and patterns to choose from. I can hardly bring myself to eat them! I wonder if I could do that thing where they freeze people and keep them forever, but with heirlooms…? Wait, stop, that’s totally weird and creepy. Rewind!

After the farmer’s market, I went to the gym and logged in 2 miles on the tread, 30 minutes on the elliptical, then stretching, abs, and arm weights. I love running 🙂 Training for the 5K is going a bit slowly BUT I WILL NOT GIVE UP! That race ain’t got nothing on this girl.

And, of course, my after-workout snack was a yummy-ummy PB & J Larabar. I honestly think Larabars came from the work of a genius, or someone who was awfully hungry and messed up on a recipe, ending up with a sticky, delicious mess. Oh, how I love my Larabars. I always keep Apple Pie, Pecan Pie, and Peanut Butter and Jelly in my house. Don’t waste your money on Clif bars; always go for the raw energy bars! They almost always have 3-5 ingredients that are totally organic and unrefined. Nothing better than that.

Once I got home, I whipped up a ton of hummus. Probably enough to last a week or more. Did I mention I love hummus?

My quick recipe:

Hummus

(Adapted from 1000 Vegan Recipes by Robin Robertson)

Ingredients:

  • 3 cups cooked chickpeas, or 2 (15.5-oz.) cans
  • 6-8 garlic cloves, minced (I roll with eight)
  • 1/2 cup tahini
  • 1/2 tsp. sea salt
  • 1/3 cup water (may or may not be necessary)
  • 4 tbsp. lemon juice (I like more)
  • 4 tbsp. EVOO

Directions:

  1. Put everything in a food processor and puree until smooth. Enjoy! 🙂

So, why did I need to make so much hummus? I’ll tell you. Tonight we had 2 giant eggplants sitting, beckoning for me to cook them, so we made an almost-raw, super simple lasagna. But be warned, this is totally untraditional and can barely be called lasagna, but it was SO good!

My dinner:

Kale salad with avocado, leftover millet salad with cooked mushrooms, leftover roasted green beans, and the eggplant lasagna 🙂

For dessert, we had the Ooey Gooey Brownie Muffies from last night, nuked in the microwave for about 1 minute for ultimate gooeyness. They were so perfect and melty, and of course we had to have some vanilla nice cream with them. Mmm 🙂

But first, dinner!

Eggplant Hummus Lasagna

(Adapted from Opera Singer in the Kitchen’s Vegetable Lasagna)

Makes a casserole-dish sized lasagna

Ingredients:

  • 2 eggplants
  • 1 cup hummus

Directions:

  1. Slice each eggplant lengthwise into about 1/2-inch thick slices. Rub both sides of each with sea salt and let sit in a colander for about 30 minutes.
  2. Rinse slices and pat dry, then rub both sides of each with some olive oil.
  3. Grill slices until softened (grill pans and indoor grills work just as well), flipping after checking the underside and seeing grill marks.
  4. Arrange one layer of grilled eggplant on the bottom of the pan, then coat with the cup of hummus, spreading evenly. Lay the rest of the slices in another layer on top, then serve warm or cold.
  5. So simple but so yummy! Enjoy 🙂

Did I mention that we don’t have a grill? Well, not a real one anyways. The only one we have is an electric indoor one that’s completely old school, but I love it!

Kickin' it old school

Assembly: not so pretty, but so yummy 🙂

Question of the Day: What’s your favorite simple recipe?

I’m excited to hear your responses 🙂 One of mine definitely has to be almond butter and apple spread on Ezekiel bread. So quick, easy, yummy, and healthy! Whole grains, nuts, and fruit with no added sugar. Holla at that!

Time for me to go to sleep! I am so tired from my busy busy day today, and tomorrow I get to go to church and really unwind. It’s like yoga without a mat! Stretching out my spiritual muscles.

I’ve been working on a post about disordered eating, guilt, and other weight- and health-related matters, so keep an eye out for that 🙂

Also, one of my favorite bloggers, Chocolate Covered Katie, is having a recipe book giveaway, so this is me linking back to her blog and telling you to go check it out! Her posts are always so fun and always make my day a little more spectacular. Check her out!

Goodnight lovlies 🙂

xoxox,

Katelyn
