Cookie Dough in a Bowl

Good morning lovies! Hope everyone’s had a bright and shiny start to their daySmile

I have discovered the ULTIMATE in breakfast foods.

Usually I roll with cooked oats, oats/oat bran mixtures, quinoa flakes, buckwheat, you get the gist, but I haven’t tried overnight versions since the summer.

Which turned out nast.

I couldn’t handle the texture of the overnight oats, it made me feel slightly sick, so I tried a mixture of ground oats and oat bran that rocked my world!

This morning: Berry Chocolate Cookie Dough in a Bowl.

Why do I not call this “overnight oats”, you may ask? It’s because I make them with ground oats/oat bran and mixed with very little water, allowing for a very chewy, dough-like texture. Major yum.

Mine may be green, but it is green with PRIDE.

Berry Chocolate Cookie Dough in a Bowl

Ingredients:

  • 1 serving ground oats, oat bran, or a mixture
  • 1 scoop Vega Sport Vanilla protein powder
  • 1 tsp. Navitas Naturals raw maca powder
  • 1 scoop Amazing Grass Chocolate Superfood powder
  • 1/3 cup unsweetened vanilla almond milk or other liquid (water, milks, etc.), adding more as necessary to liquify just slightly (you still want it to be relatively thick)
  • Topped with: homemade raw almond butter (pictures to come!), cacao nibs, blueberries, raspberries, and blackberries.

Directions:

  1. Mix dry ingredients in your brekkie bowl.
  2. Add liquid slowly, stopping just as the liquid is no longer absorbed into the dry ingredients. You still want the texture to be thick, but have some unabsorbed liquid that will allow the mixture to expand and thicken over night.
  3. Cover and refrigerate overnight (or for 1-2 hours, I checked on mine after a little over one hour and it was already all thickenedSmile)
  4. Top to your liking and devour!

This is seriously JUST like cookie dough! I meann, if you add berries to your cookies Winking smile And, the cacao nibs were a perfect chocolate chip-like addition, sans the sugar!

 

IMG_3379You could add anything here, including more chocolate powder (cocoa or raw cacao), chocolate chips, fruits, nuts, other nut butters, flax seeds, chia seeds (for a “pudding”, etc.! Go crazy.

Best part, is this breakfast is completely raw. I’ve been going as raw as possible lately, and it makes me feel so good and have so much more energy!

Usually I make it sans chocolate, which tastes like regular cookie dough. You can certainly omit the maca and use other protein powders, those are just my preferences and are by no means required for cookie dough-ness Smile

You Spin Me Right Round

Good morning bloggies! I hope everyone has had a good weekend:)

When I woke up this morning I was HANGRY (despite my late-night noshing..almond butter, anyone?). So, I started my morning with this GLORIOUS bowl of oats. Nom nom nom.

  • oats
  • Unsweetened Vanilla Almond Breeze
  • an itty bitty banana
  • mixed up with Vega Sport vanilla protein powder (after cooking)
  • topped with: almond buttah and LOTS of berries. I was craving them, can you tell?

Roooooarrr I love how green the Vega makes my oats:) It’s like a pop of color in my morning!

IMG_3243Thankfully, it’s a beauuutiful sunny day! It makes up for the obnoxious amount of work I have to do today.

During breakfast, I read another two chapters or so of Crazy Sexy Diet. I’m addicted! It is SO good, and it’s encouraging me to try out more raw foods. Did I mention that Kris Karr is hilarious? I love a girl with spunk!

IMG_3248I highly recommend it to anyone interested in a healthier life, being vegetarian, vegan, raw, preventing disease, or trying to cure disease.

Slash I recommend this book to EVERYONE. It’s like The China Study in layman’s terms, which is what our country (and our world) needs.

Did you know more than two-thirds of Americans are overweight or obese? The stats are even scarier for kids under the age of FIVE. Something needs to be done. Kris to the rescue! 🙂

Since my wisdom teeth have been KILLING me as of late (I’ve been needing to get them out for, what, 2 months now?), I’ve been up on the ibuprofen. I woke up at 4am to drilling pain in my mouth and sprinted downstairs to get the bottle.

The on-call surgeon offered to prescribe me narcotics but I didn’t want to get loopy. Instead, he’s letting me up the ibuprofen and add Tylenol, but I’m just sticking with the regular dose of the ‘profen. Less chemicals in my body = the better.

So, oatmeal, quinoa flakes, and soft fruit have been my food of choice. And sweet potaters. I can never get enough;)

Last night I tried to make a pizza-like quinoa flakes combo, but it tasted AWFUL. I added nooch, tomato paste, and italian seasoning, hoping for a pizza-like flavor.

Smelled awesome, tasted foul. Too much tomato paste! Lesson learned: a little goes a long way.

That’s avocado and beans for healthy fats + more protein. I was sad when all of the ‘cado was covered in my nasty concoction. Boooo, at least that was most of what I scarfed down!

To make up for my experiment, I cooked up another pot of quinoa flakes and added my mama’s pear-sauce, raisins, and beans. Ahhh, much better:)

Before that, I took an AMAZING spin class. I’m addicted to spinning, and it’s been my favorite group class along with Body Pump since last year. The teacher was adorable, must have been in her fifties or sixties, and she was a POWERHOUSE. From a little lady, you would not expect such spunk. Love it.

Among the benefits of Spinning are:

  • It’s calorie-torching
  • Improve your cardiovascular endurance and health
  • Time flies
  • It’s low impact
  • You can take it at your own pace
  • Leg tonage Winking smile
  • Lowering your body’s workout breaking point (becoming more efficient, and releasing endorphins more quickly)
  • It works your core
  • Group mentality – it’s fun!
  • Improved mental stamina
  • Improve overall strength

If you haven’t tried spinning yet, I highly recommend it! It’s so much fun, and it makes me feel like supawomannnnn;)

That’s all for now! Time for me to go to church:) Today’s a rest day (at least that’s the plan), and I didn’t bother to shower this morning. At least I did my makeup and put on a cute oufit, right? Sorry God, it’s not you, it’s me.

On another note, one of my New Year’s rezzies is to improve my relationship with God. During this trying time, I’ve been finding a lot of comfort in prayer and in the prayers of others. I’m hoping to read the Bible this year, from cover to cover:)

Gluten Free Orange-Cranberry Cookies

Good morning bloggie babes! I have a busy day ahead of me, so this post is going to be a quickie.

First of all, you all should know how much of a messy eater I am. I’m talking food drippage in my hair, on my clothes (one of the many reasons I wear scarves..but then it just gets on those?), on my face, and on all of my class notes.

Anywho, this morning I devoured a delicious [jar] of protein oats! Unforch, I forgot to take a picture (still getting back into the blogging thing..I was hungry). Into the jar went:

  • 1/2 cup GF rolled oats
  • 1 1/2 cups unsweetened vanilla almond breeze
  • 1 melted banana
  • ~ 1 scoop Vega Sport vanilla protein powder (I am OBSESSED. Turns your oats green! Roarrr green power)
  • Topped with: blueberries, raspberries, and a good 2 tbsp. or so of almond buttah from the jar

Same oat-USVAB-banana combo as above, just with a toonnnn of PB and cacao nibs. Wassup, Elvis bowl!

Besides that, I’ve been snackety snacking on micro muffies. A microwaved muffin! Doesn’t get any better than that:)

Micro Muffie

In a normal bowl, mix:

  • 3 tbsp. flour, oats, oat bran, etc.
  • a pinch of sea salt
  • 1 tbsp. applesauce or oil
  • 1 tbsp. plus 1 tsp.  liquid (water, milk, etc.)
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. baking powder
  • your choice of sweetener (I use stevia)
  • handful of mix-ins (raisins, chocolate chips, cacao nibs)
  • spices if desired (I used about 1/4 tsp. or so of cinnamon)

Mix it all together and nuke in a greased mug for 90 seconds, then pop out and let it cool, bottom side up (bottums up, bottums up…). It will firm up and not be so gooey, I promise:)

Top with nut butter or whateva you’re feeling, and devour! Nom nom 🙂

Okay, now for the cookies! I’ve been gluten-free since about September or October. It gives me awwwwful migraines and digestive and muscle pains, and since I’ve been off  of it, my symptoms have gone away. So, I’ve been experimenting with gluten-free baking as of late, and recently came up with these babies!

Gluten-Free Orange Cranberry Cookies

Makes about 14 cookies (it can easily be doubled)

Ingredients:

  • 1/3 cup almond flour (almond meal)
  • 1/3 cup quinoa flour
  • 1/4 cup quinoa flakes
  • 1/2 cup applesauce
  • 1/4 cup NuStevia baking blend (or sweetener of choice)
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 tbsp. vanilla extract
  • 1/2 tbsp. orange extract
  • about 3 tsp. orange zest
  • 1/2 cup dried cranberries (I used dehydrated Whole Foods brand cranberries and soaked them in hot water for about 5-10 minutes)
  • about 2-3 tbsp. Unsweetened Vanilla Almond Breeze (eyeball this based on dryness/wetness of the batter)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients together in one bowl (except cranberries), and wet ingredients in another.
  3. Mix wet and dry together thoroughly, then fold in cranberries (if you followed my method of dehydrated-and-soaked, make sure you drain the water out well).
  4. Drop by the tablespoon onto greased cookie sheets, and flatten with the palm of your hand.
  5. Bake for about 7 to 12 minutes, or until the cookies are slightly golden on the edges.
  6. Try to not burn your tongue by eating one fresh outta the oven.

These were perfectly moist and delicious🙂 I froze about half of them so that I can pop one in the microwave every night and have a cookie “fresh out of the oven”. Soooo good! Last night I needed a snackety snack and topped one with almond butter…do it. Now.

I’m off to work on my Econ paper! I’ll be squeezing in a workout a bit later. Hopefully it’ll be a bit more organized than my hodgepodge from yesterday!

I think I have workout ADD…I kept going from elliptical to stair climber to treadmill and back around. Maybe today will be a spinning class🙂

OIAJ & Time to De-Stress

This morning, I had Oats In a Jar.

And they were good.

Pre-stirrage

Post-stirrage goodness..nom nom nom 🙂

Into the pot went:

  • 1/2 cup oats
  • 1 cup unsweetened vanilla almond milk
  • melted banana mixed in 🙂

Into the jar went:

  • steaming oats
  • 2 tbsp. almond buttah from the jar
  • a handful of raisins
  • cinnamon (obv)

I can’t get enough of the banana-nut-butter oats combo. I’ve been having it every morning for the last week, and it has not once gotten old (way to have some variety, Katelyn!). It’s fine.

If you haven’t tried Katie’s melted banana trick, hon, you are missing out. Try it. Now. (not to be bossy or anything 😉 )

You know that feeling where there’s just so much to do, but somehow not enough time in the day to do it? Or that weighted-down feeling you carry around when you’re just stressed?

I’ve been feeling ultra stressed lately, so I’ve been looking for some ways to de-stress. Such as:

Yoga (especially Power Vinyasa! still have to try hot yoga)

 

 

(yes, I know it’s not a yoga picture, but it came up in my Bing search and it made me laugh! 😉 )

Hot chocolate 🙂 The reason for the season, lovies!

…and more tea.

 

 

I am such a tea girl. I always have some tea in my favorite thermos! My favorites currently are Yogi teas and Tazo teas – especially their Refresh, Honeybush, and Vanilla Rooibos varieties. Keeps me nice and warm 🙂

 

And baking! Especially these Oatcakes:

Expect a recipe soon! They were to die for – reminiscent of my childhood and perfectly moist. They were delicious by themselves (I scarfed them down, notabigdeal), but I discovered they were even more out-of-this-world with some good pb and apple butter. Mmm 🙂

The Start of Something New…

Okay, seriously dorky title. First thing that came to mind – not joking. High School Musical should definitely leave my memory, now!

Even though it is sort of relative…High School Musical, senior year – since Tuesday was my first day of senior year 🙂

But anywho, I’m here to assure all of you lovely readers that I have not vanished or stopped cooking – instead, I’ve been so busy.

With what, you might ask? Here’s a visual:

Too bad these classes are fascinating! I just don’t always appreciate the 20-pound textbooks I had to carry home, but I think we’ll become good friends 🙂

That’s right – 25 page bio outline, 10 page econ outline, an essay to read and annotate and write an essay on, an article to find, driver’s ed papers to finish, and more bindahs to get.

Question: What did you wish you knew before your senior year of high school?

My answer would be:

  • That I would actually get this far. It’s crazy! In kindergarten, I would think to myself, ughhhh 12 more years of school?! But…
  • Time flies. It truly does. I don’t know where the years went – it seems like only yesterday I was freaking out about getting my 3 pages of homework done in the fourth grade.
  • Boys should treat you well and not have boobs as the first thing on their minds. I think this pretty much goes along with common sense, but as any naive, young girl does, I wanted the boys I liked to like me back. So we have all had some time where we’ve tried to be more beautiful, bigger-boobed, or just different to get a boy’s attention – but it’s not worth it. No boy is. If he’s a good guy, he’ll love you for you. I’ve learned this the hard way – through many bad boyfriends and a couple of good ones.
  • High school changes people. I’ve seen people become consumed in the high school dynamic, doing anything for attention, getting too drunk, doing something stupid, getting too stressed over school, not getting enough sleep, and throwing friendships away on a whim. Don’t be that person. Stick to your values, be good to yourself, and remember the important things in life – love, loyalty, and friendship.
  • You first, always. Many people say “family first” or “school first”, but if you don’t take care of yourself, nothing else in your life will follow. Get your sleep, eat well, get in some exercise (for your body and for stress relief), and then attend to the rest of your life. Especially if that means setting a cut-off time for yourself. My most useful habit has been setting a bed time for myself – 10 on school nights. That’s the time I would say, self, it’s time for you to get your sleep. Because one of the most important things I’ve learned is that if I’m not rested and don’t have something nutritious in my tummy, there is no way that the extra 3 hours I forced myself to study is going to make any difference. Zoning out during a test is no good when you can be well-rested and knock out the answers that clearly don’t make sense! Sleep and nutrients are magical things.

So, back to my first day!

How did I get through this? First day of school power brekkie 🙂

Half of a Plum Pie Katebar (recipe to come in another post) mixed in ooey-gooey style with my buckwheat, topped with bluebs and blackburries – a pear and cherries on the side.

We also had some Ethiopian food, courtesy of my favorite local vegan restaurant, leftover from my lunch date with my sister on her first day of freshman year 🙂

There may have been a few of my Signature Oatmeal Cookies (on cacao-cinnamon-raisin crazy juice) in the mix… (p.s. recipe to come in another post 🙂 )

Ohhhh dang. I may have had a few of these….

I am a lovesick puppy

Not for a boy…oh no, not this time. For almond butter.

After my morning workout (20 mins running, stretching, abs, arm weights), I whipped up the most delicious brekkie I’ve had in a hot long time:

It ain’t very pretty, but it was delicious, let me tell you. Gluten-free rolled oats with a ton of cinnamon, a chopped up cameo apple (my favorite apple), and a giant spoonful of crunchy almond butter. Mmmm 🙂

Now, mind you, I was an almond butter virgin until this morning. I couldn’t take it any longer. I had to try it! So I did.

The goods.

It was amazing. I licked every last bit off of the spoon from the jar. And it was great in the oatmeal! I think I’ll start adding some almond buttah to my morning oaties 🙂 I didn’t completely enjoy the ton of apple in my oats though..I think from now on I’ll stick with big fruit on the side, and tiny chopped or dried fruits in my oats. I like mine creamy, not with giant chunks! So I ended up eating all of the apple pieces first, and then my precious oaties. Delish.

I ate every last bite.

Backtracking a little bit, I got to read some of Chi Running before beddie bye last night. It’s different from all of the running books that are super serious and talk about it like it’s a science – which it is, in many senses – but I prefer the style of this book. It’s much more laid-back, conceptual, and tangible to fit everyone’s fitness and skill levels. I guess that’s what puts the Chi in Chi Running 🙂

This guy is also an ultramarathoner who’s crazy good at what he does, training athletes and doing T’ai Chi while he’s at it. No, this guy doesn’t do crazy weight training, cross-training, or Body Pump. He runs and does T’ai Chi. This guy might have the key to the universe.

I’ve begun to really enjoy running, an activity that I used to grind my teeth through and continuously think to myself, One more mile, Katelyn, just one more minute…just 100 more calories and then you can be done. It was all about calories, mileage, and making sure I always ran exactly an hour and 15 minutes.

Now, I run with my body. If my body needs a break, I’ll walk for a minute. If I’m thirsty, I’ll take a sip. If my lungs are working too hard, I slow down a bit. If I wake up one day and feel like I need a day off, I’ll take it.

Because I don’t feel guilty anymore.

It’s a beautiful feeling. I’ve come to just enjoy getting up early when the house is quiet, enjoying some fresh water while I check my email and read blogs, and then enjoying the feeling of waking myself up with some running and the Today show (and I’ll admit, Sesame Street and Arthur some days 🙂 ).

I always leave my run feeling awake, refreshed, energized, and ready for a yummy, hearty brekkie 🙂 There’s no better feeling in the world.

Busy Bee

Good morning lovlies! Hope everyone had a nice evening 🙂

I had a pretty relaxed one filled with leftover kabocha squash with azuki beans, savory quinoa, and roasted brussels sprouts, my favorite! (halve brussels, preheat to 350F, place cut-side down on EVOO’d baking sheet, drizzle with EVOO and sea salt, roast for 15 minutes) Mmm 🙂

This morning I woke up bright and early – at 6:15 am! – to check email, hydrate, and go for my run. At first I was kind of sluggy and not motivated, but then I turned on the Today show and started my workout. Since I’m training for a 5K (hopefully I’ll be able to do 5K by the race!), I did an endurance workout I saw online last night, but tailored it to make it a bit harder.

I did a 5 minute jogging warmup, stretching before and after, then repeats of 5 minutes running and 1 minute powerwalking, then a 5-minute walking cooldown. Total, I logged 30 minutes and 2.25 miles. Not bad! I felt good, so I’m going to keep up with the running/walking workouts and build up my endurance. Of course I stretched forever and then did my abs!

By the way, I do not have any fancy workout gear. I don’t like spending money on much other than a good pair of sneakers and running shorts, so this is my daily attire 🙂

The usual

On the Today show this morning, I was shocked by one of the stories – a girl named Phoebe Prince who had recently moved to a new town was being harassed by a group of kids in her high school, and couldn’t take it anymore, so she committed suicide. Sad, right? I felt awful for this girl, and couldn’t believe that kids could be so cruel. Normal emotions, right?

Well, a reporter came onto the show and talked about how a giant story had emerged that Phoebe had been a giant bully/harasser at her previous private school in Ireland, and had been on antidepressants for a long time, somehow making the harassment not as bad since she “already had problems”.

Now, where do people get off talking about a poor girl who just killed herself like that? Phoebe’s friends and family are probably completely distraught, and in all this madness, the people harassing her are looking for a way out with use of this story. It’s terrible.

What do you think of the way they’re handling this story?

I’m honestly pretty disgusted that people would try to compensate what they did by “victimizing the victim”. Read more about Phoebe’s story here.

Okay, enough with the sad. Onto happier things! 🙂 My brekkie this morning was so yummy, filled with 1/2 a grapefruit, oatmeal, and tons of berries since I love them so much 🙂

Of course, no morning is complete without some Yogi tea.

Time for me to go get ready for the day! I have a long list of things to do (yes, I make a list for myself every night before bed 🙂 )
