Cookie Dough in a Bowl

Good morning lovies! Hope everyone’s had a bright and shiny start to their daySmile

I have discovered the ULTIMATE in breakfast foods.

Usually I roll with cooked oats, oats/oat bran mixtures, quinoa flakes, buckwheat, you get the gist, but I haven’t tried overnight versions since the summer.

Which turned out nast.

I couldn’t handle the texture of the overnight oats, it made me feel slightly sick, so I tried a mixture of ground oats and oat bran that rocked my world!

This morning: Berry Chocolate Cookie Dough in a Bowl.

Why do I not call this “overnight oats”, you may ask? It’s because I make them with ground oats/oat bran and mixed with very little water, allowing for a very chewy, dough-like texture. Major yum.

Mine may be green, but it is green with PRIDE.

Berry Chocolate Cookie Dough in a Bowl

Ingredients:

  • 1 serving ground oats, oat bran, or a mixture
  • 1 scoop Vega Sport Vanilla protein powder
  • 1 tsp. Navitas Naturals raw maca powder
  • 1 scoop Amazing Grass Chocolate Superfood powder
  • 1/3 cup unsweetened vanilla almond milk or other liquid (water, milks, etc.), adding more as necessary to liquify just slightly (you still want it to be relatively thick)
  • Topped with: homemade raw almond butter (pictures to come!), cacao nibs, blueberries, raspberries, and blackberries.

Directions:

  1. Mix dry ingredients in your brekkie bowl.
  2. Add liquid slowly, stopping just as the liquid is no longer absorbed into the dry ingredients. You still want the texture to be thick, but have some unabsorbed liquid that will allow the mixture to expand and thicken over night.
  3. Cover and refrigerate overnight (or for 1-2 hours, I checked on mine after a little over one hour and it was already all thickenedSmile)
  4. Top to your liking and devour!

Mixed as dry:

This is seriously JUST like cookie dough! I meann, if you add berries to your cookies Winking smile And, the cacao nibs were a perfect chocolate chip-like addition, sans the sugar!

IMG_3379You could add anything here, including more chocolate powder (cocoa or raw cacao), chocolate chips, fruits, nuts, other nut butters, flax seeds, chia seeds (for a “pudding”, etc.! Go crazy.

Best part, is this breakfast is completely raw. I’ve been going as raw as possible lately, and it makes me feel so good and have so much more energy!

Usually I make it sans chocolate, which tastes like regular cookie dough. You can certainly omit the maca and use other protein powders, those are just my preferences and are by no means required for cookie dough-ness Smile

I had this con a GLORIOUS green smoothie:

Pumpkin Pie for Breakfast

Okay, not real pumpkin pie, but pumpkin pie vegan overnight oats! I’m a follower of the blog http://www.ohsheglows.com, and she has VOO every morning for breakfast, always adding in interesting things, so I thought I would give it a try. I usually just have fruit for breakfast (and don’t eat until my stomach grumbles), but since I’m trying out the Kind Diet “Superhero” style, I thought I would give grains at breakfast a try.

Night-before prep:

pumpkin! yum yum 🙂

not very pretty 🙂 but tastes delicious!

How did I prepare my Vegan Overnight Oats? I’ll tell you! (ps I was so excited last night for my overnight oats that I could nearly sleep..no joke. I wanted to go check on them! and I was brainstorming for future overnight oats 🙂 )

Pumpkin Pie Vegan Overnight Oats

Ingredients:

  • 1/3 cup old-fashioned oats
  • 1 tbsp. chia seeds
  • a lot of cinnamon sprinkled in 🙂
  • 2 tbsp. pumpkin puree
  • 2 tbsp. raisins
  • 1 cup almond milk (I used unsweetened vanilla)

Directions:

  1. Mix it all together and then cover and refrigerate overnight. However, I checked on these after about an hour and they were almost ready!! Yum 🙂 I may have tried an eensy bit, too…
  2. In the morning, add whatever you want!

I added more raisins and a pinch of stevia, which was perfect. Angela (from Oh She Glows) usually adds nut butter, cacao nibs, maple syrup, fruit, etc. but today I thought I would go sans a ton of toppings so I could taste the pumpkin.

good mowning 🙂

Tomorrow I’m thinking I’m gonna make an Apple-Cinnamon-Raisin Muffie Overnight Oats, as kind of an adaptation from my Muffie recipe. Yum 🙂

These were super filling (I couldn’t finish it! the rest is in my fridge), so next time I might do less almond milk but more of the pureed/smashed fruits. But, I do feel super energized! My tummy just hurts a little from not being used to anything but fruits and vegetables before 6pm (usually I just have a salad at lunch).

Also, next time I’m gonna try to work out before having any grains for breakfast! My plan for today was to have breakfast and then work out around 11 or noon, but I am so. full. This would be a great post-workout breakfast though, or if you don’t do much vigorous exercise within a few hours of eating.

Question of the morning: What’s your favorite breakfast? Have you tried Vegan Overnight Oats? What’s your favorite VOO recipe?

That’s all for now lovlies! Have an energizing day 🙂

xoxox,

Katelyn
