Power Protein Pan-CAKES

Good morning bloggy boos!! How are you?!

I am having such a dandy morning sitting in my new college sweatshirt and sweatpants – next to my college lanyard and reusable BPA-free juice slurping container.

If you missed it yesterday, I stopped being such a tease and revealed my new home for next year – COLLEGE. But which one?

The other day I promised you a protein pancake recipe. Not so fast though, first I have to warn you:

Lisa and I tried this stuff. It was nasty. Don’t waste your money on this unless you plan I spitting it all over your significant other’s face. (hahaha)

IMG_4407

Just don’t do it.

Anywho.

There was the GREATEST salad I’ve ever tasted:

Kale, spinach, Vegan Cheezy salad booster, hemp seeds, balsamic vinegar, and the most delicious olive oil on the planet. Props to Lisa for finding this delicious goodness.

And then there were pancakes.

Protein pancakes actually…

That tasted like cake.

In a few words, we couldn’t stop eating these.

Power Protein Pan-CAKES

Makes 2 servings

Ingredients:

  • 1/2 cup garbanzo bean flour
  • 1/2 cup buckwheat flour
  • 3 scoops vanilla sun warrior, or 2 servings protein powder
  • 1/2 tsp. baking soda
  • 1/4 cup NuStevia baking blend (or sweetener of choice)
  • 4 tsp. chia seeds (I would recommend 1-2 flax or chia eggs, all we had were teaspoons)
  • water (add until a batter-y consistency is formed)

Directions:

  1. Heat a pancake pan on medium heat and add oil (we used MacaNut oil, but I recommend either that or coconut oil).
  2. Mix dry ingredients in a large bowl.
  3. Add water and combine until a batter-like consistency is formed, about 1.5 to 2 cups.
  4. Cook your pancakes in your pan, and serve warm with Pom Acai Chia Jam!

Delicious?

Devoured.

Make these..today. We had them for dinner and you should too. Whoever invented breakfast for dinner has a special place in my heart.

—————————————————————————————————

That’s all for today chickadees!! See you tomorrow:)

Favorite pancake recipe – GO!

This one ❤

Nastiest “new” food/drink you have tried lately?

That nasty beet drink pictured above.

What is your Monday workout?

SPINNING with Lisa and our awesome teacher Nancy – going to kick. my. butt.

  2. Most times listened to “What the Hell” cover by Michael Henry and Justin Robinett: five whole hours. Not kidding. And you thought we were cray cray…

An Ode to Carbs

Good morning loves! Happy Hump Day! (aka, the almost best day of the week because you know that Thursday..and then Friday..is right around the corner:))

Yesterday, I told y’all about my love for carbs and how I’ve been craving them like a lady with a baby. (and no, I am not preggo)

Anyone ever think that sometimes we crave carbs because our body needs them?

Lately I’ve been hearing a lot of jank about carbs and noticing how much girls at school fear them.

And it absolutely stumps me.

I don’t know about you, but all of this fear of carbs goin’ on is making me a little annoyed.

Poor carbs! I think they could use a little pick-me-up, don’t you?

So, I thought I would write a little poem for carbs, to help them feel better.

No hatin’ on my carbs, please and thanks.

Inspired by Sir William Shakespeare’s Sonnet 116

Ode to Carbs:

Let me not to the marriage of true minds

Admit impediments. Love is not thy low-carb bar,

aba0fe7df5734ffd87a2cb6b0fed5ae6

Which alters when it alteration finds,
Or bends with the remover to remove:
O no! it is an
ever-fixed deliciousness
That looks on tempests and is never shaken;

It is the star to every wandering bark,
Whose worth’s unknown, although his height be taken.

Carbs are not Time’s fool, though low-carb diets
Within his bending sickle’s compass come:

Carbs alter not with his brief hours and weeks,
But bears it out even to the edge of doom.

If this be error and upon me proved,
I never writ, nor no man ever ate.

So friends, I leave you with this:

Eat they carbs, and love thyself.

Carbs were given to us for a reason; Mother Nature didn’t put fruit on the trees and grains from the ground by accident!

They’re there for us to enjoy, and eat lots of.

Carbs give us the energy to function every day; without them, our brains wouldn’t function, and our muscles certainly would NOT propel us on the Dreadmill.

Just make sure that they’re whole grain and not in the form of Wonder Bread, mmk? Winking smile

Bee tee tubs, it snowed on my Cookie Dough Bowl this morning! Aka, the best kind of carbs, co-co-nutified🙂

Have an awesome Hump Day boos, and enjoy thy carbs!🙂

PJ Sattyday + The Most Glorious Pancakes I Have Ever Eaten

Good morning lovelies! I hope everyone had a rockin’ Sattyday!

I sure did:)

I slept in until about 9 (a big deal for me), and then I had my usual green smoothie while dreaming about the pancakes I was about to make while I did my morning blog stalking reading.

Then, I whipped out my handy dandy whisk and got a-whiskin’!

The result? My house smelled like cookies and my sister literally ran into the kitchen wondering why I was baking cookies so early in the morning.

Not that I haven’t done that before.

I had been dreaming of chocolate because of Friday night’s Raw Chocolate Mousse (which by the way is SO much thicker and more delicious when left in the fridgy fridge overnight), so obviously my pancakes had to be full of chocolatey deliciousness.

I mean, since it’s never too early for chocolate…obviously.

IMG_3527

And since it was the glorious morning and we have perfect windows in our dining room, I didn’t even have to venture out into the snow for natural light! Food blogger WIN🙂

IMG_3533

I have to point out that these were the thickest, doughiest, most ginormous pancakes I have ever inhaled. If this is not the most epic plate of pancakes you have ever seen, I seriously question your sanity (I would say I’m joking, but that would be a lie…these suckers filled me UP).

IMG_3544

So, since it’s the freakin weekend, you should probably make these pancakes. Just sayin;)

Bee tee tubs, these were rockin slightly undercooked and doughy…I love me some fudgy fudge🙂

Chocolate Cookie Dough Protein Pancakes

Makes 2 large pancakes, or a million small ones.

Ingredients:

Directions:

  1. Mix dry ingredients, then add banana and mix. Add wet ingredients and combine thoroughly.
  2. Heat a frying pan over medium heat for 3-5 minutes, then add a dab of coconut oil (or canola oil, olive oil) and allow to melt and heat for a few minutes.
  3. Add batter to the pan to desired pancake size, and allow to cook for about 5 minutes (or until bubbles appear in the middle) and then flip and cook for an additional 5 minutes. Repeat for each pancake, adding more oil in between pancakes.
  4. Serve topped with Chocolate Protein Frudding (recipe below), cacao nibs, and fruit. Or, if you’re feeling extra adventurous, plop some chocolate chips and maple syrup or agave nectar on those babies!
  5. Devour.

IMG_3534

My first thought: “Ooh, baby, baby! La la la la la la la…” (name that song!)

Yeah, they were that good.

Who said you shouldn’t have dessert for breakfast?

They were certainly on crack(ers).

IMG_3536

Topped with blueberries, raspberries, cacao nibs, and Chocolate Protein Frudding.

And yes, I took the words “frosting” and “pudding” and smooshed them together. I told you I like to make up words😉

Chocolate Protein Frudding

Ingredients:

Directions:

  1. Combine in a bowl and chill in the fridge for at least one hour.
  2. Remove and stir, adding more liquid if necessary to desired consistency.
  3. Use as a topping for pancakes, waffles, oats, overnight oats, on cake/brownies/cookies, or by itself! The possibilities are endless:)

This yields a very pudding-like texture. I love it, and it was the perfect spread for my pannycakes!

To make into a frosting, I would recommend processing it in a food processor to give it a smoother texture.

IMG_3539

Stomach Status: satisfied.

IMG_3546

Then, I proceeded to NOT change out of my PJ’s and watch four hours of Hulu with the Baby Sister.

In a nutshell, I was in my pajamas all day.

It was AWESOME.

That’s all for now, lovies! I’m off to church and then to the gymmy gym gym to laugh my ass off at all of the superbowl commercials and then eat lots of chocolate mousse🙂

Have you ever had a PJ day?

Yes, I try to have at least one a week, it is good for the soul.

What is your favorite thing to watch on Hulu?

SUPERBOWL COMMERCIALS WILL BE ON HULU TODAY! Aka, I don’t even have to watch sweaty men jump on each other in order to get my Superbowl commercial fix:) But my faves are Lie to Me, Greek, Desperate Housewives, Glee, Buffy, and LOST. But mostly Lie to Me, I am obsessed:)

What is your favorite kind of pancake? What do you top them with?

Uh, chocolate chocolate chip, banana pancakes, and anything loaded with fruit. Slash I love topping mine with almond butter and apple butter and tons of fruit, it makes them taste like a PB+B sandwich, almond-apple style:)

My Healthy Dose of Awkward

Okay so before I get to my recap of the SCRUMDIDDLYUMPTIOUS raw brunch, I must let this out.

Three awkward things I did today:

  1. In the shower, I accidentally put conditioner on my face, thinking it was face wash. No bueno. I mean, how does that even happen? Maybe it was because I was singing Raise Your Glass at the top of my lungs and hair was the last thing on my mind? Oh, and I was singing it just like this:

I love Pink, she is a MONSTA

  2. After said musical distraction, I proceeded to blast that very song as well as Hey Baby and Like a G6 (somehow I never get sick of either of those songs). And I danced. My hair is now dry, THANK YOU awesome dancing skills of mine. I wish I had a picture of this but no one on the internet needs to see me pop lock and droppin’ it!
  3. I licked my plate clean. Which caused some of my lovely new friends to laugh hysterically and announce they need to take a picture IMMEDIATELY!

IMG_3417Me and all of my friends. Actually, they were all crowded around the photographer and laughing. I am toomuch:)

Wait, I like this picture better.

    IMG_3418

    Yurp, HOTTAY

Why am I so pale? Summer, please come back!! I don’t believe in paying for skin cancer so I refuse to use tanning beds. Bronzer is no longer sufficient. Anyone want to go someplace obnoxiously sunny and warm? It is cold in New York and I would like some sun.

  4. Okay, I lied. Number four is that I am typing this while still in my bathrobe because I absolutely had to write this post right now. Face it people, rambling just can’t wait!

Okay, now onto WHY I was licking my plate!

Firstly, I have to thank Christine, the owner of Wellness Within, for hosting this awesome event! She is a sweetheart, I can’t wait to work with her more!

IMG_3400Sorry, Color Pop on LiveWriter makes us look orange. At least I look less pale:)

She has such a great business going, and is expanding soon! If you are in the area, definitely take the snowy drive out to her store on the beautiful (and hoppin’) Park Avenue. I wish I could get out there more! (p.s. if you’re in the area and want an awesome restaurant, GO TO PARK AVENUE!)

Onto the FOOD.

Despite my full belly from breakfast, I was more than happy to stuff my face with raw goodness.

Crepe #1.

IMG_3414

Amazeballs.

Above is the apple crepe with peaches, blueberries, and a vanilla crème. And a cinnamon roll🙂

Both were delicious, I scarfed this down in about 0.2 seconds, along with a small bowl of fruit, resulting in this:

IMG_3416

Devoured and licked clean with a big smile on my face:)

I LOVE FOOD.

And green juice. This was absolutely amazing, I wish I wasn’t so cheap and would buy a juicer but hey at least my birthday is coming up soon! (aka this summer, not soon, but EVERY DAY is my birthday in my mind since every day is awesome)

IMG_3391

I might be wrong, but I believe this was romaine, celery, cucumber, and parsley. SO good, I love veggies, this was sweet enough it didn’t even need anything else:)

Next up was the banana crepe con a chocolate hazelnut crème sauce, banana slices, cacao nibs, and chocolate hazelnut milk.

IMG_3389

I praise the chocolate gods for this one. And the lovely and amazing Damaris! She is an incredibly talented chef.

IMG_3410

Chocolate banana crepe also enjoyed by Dakota! I am so glad I met this girl, she is a sweetheart and is gorgeous, she should model! (and I heard she makes a mean raw lasagna…cook make food for me please?)

IMG_3383

And the adorable Autumn Ray! (I think that’s how you spell it? Sorry if I butchered it!!).

IMG_3390

I got her mid-bite! Sorry girl;)

Next up were more cinnamon buns and a blueberry pancake! Ahhhhh holy yumsky.

IMG_3397Plus a crème sauce that I wish I knew what was in it but it was so good I could care less. Another plate LICKED clean.

IMG_3403

If I could eat pancakes every single day of my life I SO would. In math class two years ago on Pi Day (yes it’s an actual day), we had pie WEEK and every single day someone brought a pie or some amazingly delicious dessert that somehow turned into my lunch every day that week.

In honor of Pie Week and my love for pancakes, we should have a national blogger pancake week with crazy creative pancake recipes for ALL meals! Who’s in?

Behind the scenes:

IMG_3406Damaris and Sasha (or Sacha?) making pure MAGIC. Magicians, I tell you.

IMG_3408Dehydrator action.

Group shot!

IMG_3419Such beautiful ladies! I can’t wait for the next event, apparently they have them twice a month! I can’t wait for my fill of yummy raw food to devour:)

Again, sorry about looking like carrots… I hated the pale version so deal;)

Damaris, Sasha, Dakota, Autumn, or any of yous that attended, if you want the original picture (aka not carrot-y), shoot me a comment and I’ll e-mail it to you:)

p.s. Damaris, if you’re looking into being a personal chef PLEASE COME BE MINE. I’ll pay you in smiles and lots of licked plates. Deal?

Okay now I am going to go curl up in my turtleneck and granny sweater by my space heater and study my brains out, making this face:

IMG_3324

Please say a prayer for me, I might not make it through the sea of heavy textbooks, notebooks, and flashcards that I am currently drowning in. I HATE midterms week. Did you know that teachers hate it as much as we do? Yeah, let’s abolish it.

What awkward thing did you do today?

I licked my plate clean. Shoo, I do that every day! Except it’s usually a bowl because I hate plates, bowls are awesome and can be filled high with lots of delicious goodness.

Do you pledge to make a [crazy awesome] pancake recipe? (please say yes) If you do it, post the recipe in a comment or on your blog and link back!

YES now I have to post a crazy awesome pancake recipe, good thing breakfast is my favorite meal of the day!

What’s your favorite way to eat pancakes?

With almond butter, fruit, apple spread, and some sort of chocolate. Cacao nibs, please:)

What’s your take on raw food?

I’m in love. Raw food has made me feel even more energetic than usual and everything tastes better than it used to!

Slash I may have eaten a king’s sized meal (read: this brunch plus snackage) and then attempted to bust out an awesome work out but totally failed with an achey tummy. Too much fat and protein all at once, my stomach is not happy with me. But it was so good that I don’t even curr, I’d take food over exercise any day:)

p.s. I have eaten 100% raw so far today, I am super pleased with myself.

See you later boos!

Brunch: The Mama of all Meals, Inspired by Autumn

As you know from my last post, I ran my first 5K today! It was so fun, challenging, and left me with a monster appetite.

And since it’s Sunday, it had to be a Sunday Brunch – no no, just plain ol’ brekkie would not cut it today (even though my brekkies are never ever plain..it’s the best meal of the day! I like to live it up).

Lately it’s been chilly chilly! I’m talkin’ 60 degrees. I love this weather so much. The crispness of autumn is one of my favorite things – it makes me want to cozy up by the fire with some apple ciderpumpkin pie, and watch Halloween and Thanksgiving movies like Hocus Pocus (which I watched last night! couldn’t help myself) and Halloween Town (I am obsessed with this movie. childhood favorite).

Plus, who doesn’t want to jump around in a pile of leaves?! I would any day 🙂

So, this was inspired by my absolute love for autumn and the weather change – it was nostalgic and delicious.

Isn’t it amazing how food, its taste, its smell, its textures…can bring back so many memories? That’s one of my favorite parts about food – it’s an experience; a work of art.

So, I came home and made these babies 🙂

Pumpkin Apple Cinnamon Pancakes 🙂 Mmmmm.

Topped generously with almond buttah, Apple Spread, bluebs, blackburries, and cherries on the side. I love my berries 🙂 And cherries. Very cherry…it all rhymes! I should be a poet..

It was the perfect post-race fuel. My muscles (and my tummy!) were incredibly happy 🙂

The process:

Battah 🙂 I may have snuck a few tastes..

Ohhh yes. At this point, they smell amazing 🙂 Flippage!

The first few:

…..Aaaaaaand served.

And now, the goods.

Pumpkin Apple Cinnamon Pancakes

Makes 6 servings

Ingredients:

  • 2 2/3 cups spelt flour
  • 2 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 tsp. nutmeg
  • pinch of salt
  • 4 tbsp. NuStevia Baking Blend (or agave, maple syrup, suga, whatever floats your boat! this one’s my fave)
  • 2 cups pumpkin puree (or mashed sweet potato/any other sweet orange tuber/squash)
  • 2 cups unsweetened vanilla non-dairy milk (I roll with rice milk)
  • 1 large, or 2 small/medium, apples (cored and chopped tiny)

Directions:

  1. Mix pumpkin, apple pieces, and non-dairy milk in a small bowl. Mix all other ingredients in another, larger bowl.
  2. Combine wet and dry in the largest bowl, then heat a large skillet (whatever one you like for pancakes) over medium-high heat and spray with canola oil (or whatever oil you roll with, it’s cool!).
  3. Pour into pan with a large spoon or ladel, and be sure to spread out these pancakes! The batter will be thick, so spreading by hand is important so they cook all the way through.
  4. Flip once there are lots of bubbles around the edges and on top/in the middle and the edges begin to brown. Be sure to re-spray the pan in between flips – we don’t want any stuck pancakes!
  5. Cook until both sides are well-cooked and browned to your liking, then serve warm 🙂

Tips on How to Eat a Pancake:

Yes, these tips are fo’ real.

  • With maple syrup, agave nectar, your fave liquid sweetener
  • Topped with Banana Soft Serve!
  • Slathered with almond buttah, various nut butters, Earth Balance
  • With Apple Spread :]
  • Sprinkled (or covered) with raisins, other dried fruit, various fruits including berries, more chopped apples, tropical fruits…go crazy!
  • As a brekkie-style PB&J: spread your fave nut buttah (mine’s almond) and apple spread, or sliced apples/pears, between two pancakes and eat like a sammie! That’s what I like to call: pro. Pancake champ!

Question: What’s your favorite way to eat a pancake?

Mine would definitely have to be the way I rolled today – tons of  almond buttah, apple spread, and fresh fruit :] Alllll the way!

Time for me to go make din din, lovlies! It’s leftovers from last night, about which I have yet to post – expect more food porn and lots of recipes later tonight 🙂

On the agenda tonight we have:

  • Din din!
  • Watching Alice in Wonderland (the new one! holllla. but defs will not be as good on my tv as it was in the theater – 3D baby!)
  • Blogging
  • Reading Beowulf We’ll see.
  • Going to bed! Sleep is the best 🙂

See you after dinner!
