It Snowed on my Cookie Dough + Raw Chocolate Fudge Cake!

Good morning friends!! How are you?

I hope your Sattyday was glorious🙂

Mine was spent eating everything in sight (I was so hungry, I swear to goodness it is ALWAYS my time of the month), watching Hulu, and gymming it up with a sweaty 60 minutes on the elliptical.

I was so sore from my run with the Padre! Running outside is NOT the same as running outside, especially when the wind is blowing so hard it is going up your nose sideways🙂

My Sattyday started with a glorious Cookie Dough Bowl, con a tablespoon of raw cacao, a teaspoon of acai, chia seeds, and flax meal..oh and tons of coconut, it was snowing outside (BOOOOO!), therefore it snowed on my cookie dough.

If I tried to Latin-ify that, it would go something like “It snowed outside, ergo my cookie dough was snowed upon.” <– See what I did there?? I am a genius I tell you, that whole year of Latin I took really did the trick:)

IMG_3845

Have you ever had coconut on your morning cereal, it is so good, I think this is going to have to happen every single morning. Some of you may think I am crazy for being late on the coconut train, but I used to hate the stuff (do not ask me why, I could not tell you). This stuff is delicious.

IMG_3846

SNOW:) Love it on my cookie dough, but I could do without it on my grassy green lawn that is now wet, brown, dead, and covered in slushy white “snow”. I am saying it as “snow” because Upstate New York weather means it is never fluffy snow, it is either slushy or frozen.

If any of you are interested in a tropical vacation where it is warm and sunny and there is sand, feel free to book plane tickets!!

Until then, I’ll be eating lots more of these:)

Delicious, nutritious. Gett @ m3 <— I was a gangsta rapper in a previous life

Raw Chocolate Fudge Cake:

And now the moment you have allll been waiting for!

RAW CHOCOLATE FUDGE CAKE!

Remember when I devoured my piece and the piece of the lady next to me?!

That was a good day🙂

Now, I have recreated that bad boy!

Feel free to drool, no shame here at CK.

IMG_3859

It was perfect. Not to sweet, and very chocolatey. And fudgy wudgy, just the way I like it:)

I love it when the flavor of the cacao really stands out, and isn’t overpowered by sweetness!

IMG_3853

On a Pooh plate, obvs. Gift from the ‘rents:)

Oh, wait, you wanted the recipe? My bad;)

Raw Chocolate Fudge Cake

Ingredients:

  • 1 cup packed and pitted dates (I use Medjool)
  • 2/3 cup walnuts
  • 2/3 cup raw cacao powder (or unsweetened cocoa powder)

Directions:

  1. In your food processor, process walnuts to a flour and then add dates.
  2. Process until dates have formed into a paste, and it all balls up in your food processor.
  3. Add cocoa powder and process until fully incorporated.
  4. Transfer to a container/small pie or cake pan (I used a round tupperware), flatten the top, and refrigerate overnight.
  5. Pop out, garnish, slice, and enjoy!!

IMG_3858

Garnished with rasps and cacao nibs.

Perfection.

IMG_3862

Next time I am going to use my Raw Chocolate Mousse as frosting. Which is going to be very soon, since more than half of it is already gone🙂

I would have done that this time (‘twas the plansky), but I got caught up in packing food for my trip to D.C. with the Padre! (ahhhh I am so excited!!)

You could also sub another nut for the walnuts. For a Chocolate Cookie Cake, sub cashews and add chocolate chips! I will be doing this for the Baby Sister’s birthday cake in May:)

—————————————————————————————————

I’m off to go have a slice of cake and finish packing! I am writing this Saturday night because Sunday morning will be busy busy!! I am hitting up the gym early in the morning with the Padre (boooo too cold to run outside!), then scarfing down breakfast and hitting the road!

As you read this I will either be shoving a Cookie Dough Bowl in my face or on the road on my way to D.C.! It is going to be a whole 70 DEGREES, I am so excited, I am going to wear shorts!! And FLIP FLOPS🙂 Guys this is a big deal, especially with the awful Upstate New York weather I deal with every single winter.

Send me some sunshine in a bottle? Please and thanks:)

Don’t forget to send in your Mission: I Feel Pretty pictures!

And, if you are in the D.C. area and would like to meet up, shoot me an e-mail! There are some D.C. bloggers that have expressed an interest already, so hopefully you could join us!:)

Have an awesome Sunday, love doves!! See you from D.C.!

Is it snowing where you are? If not, make me jealous of your sunshine!!

YES, do not remind me, if you send me some sunshine I will melt the snow here and love you forever:)

Do you like the co-co-nut? What is your favorite way to eat it? I need ideas!

So far, just on top of cookie dough, but I think I need to get creative:)

Are you a fellow fudge-lover? What’s your favorite fudgy dessert?

CAKE, and brownies!! And fudge, obviously. Can’t go wrong.

Zucchini Noodles + Raw V-Day Lunch + CGB Bathroom

Good morning love doves, and Happy Valentine’s Day! How was your weekend?

Mine was fun and jam-packed, hence the name of this post, which is quite the mouthful:)

I’m so glad you chickadees loved the Indulgence Friday recipe! If you missed it, have a look and make it now, mmk?

So in the spirit of my love for all things quick-and-dirty (get your minds out of the gutter people), I am going to TRY to ramble a tad less than usual. But only a little.

Okay, number one!

Saturday Night:

Zucchini Noodles.

IMG_3622

Quick, delicious. I don’t have a spiralizer because I am a cheapo so I used my vegetable peeler and ate the middle part that wouldn’t noodlify:).

That part I just ate like a pretzel rod…or a stick..or a microphone. I don’t know, what kinds of foods are in stick-form? (out of the gutter, people!)

IMG_3623

Topped with Amy’s Low Sodium Marinara, nooch, and raisins obv.

Then for dessert, I whipped up a double batch of my Raw Chocolate Mousse, and it was gone by the end of the night, I think that says everything mmk.

IMG_3632

The night was spent eating lots of that and watching Greek on Hulu. Ob. sessed.

IMG_3635

Con banana slices, bloobs, rasps, and cacao nibs.

IMG_3639

Sunday:

I woke up, made a delicious Brendan Brazier Thrive energy pudding, and then went to the gym to kick some surrious Dreadmill bootay with an easy seven-miler, it was glorious.

I am thanking lord baby Jesus right now that my hammie is no longer a-killin me. I CAN RUN AGAIN🙂

Then I came home, showered, did my makeup, did my hair, got changed, and packed my breakfast all in half an hour. I think it is safe to say I am a PRO.

34638_1492005950558_1546298846_1210856_2751468_n

That is an actual license plate that I found when I was at my lake house, I was so ecstatic jumpy umpy that I had to take a picture:)

And yes, I ate my cookie dough breakfast in church. Priorities, people.

Then I went to another raw event hosted by the lovely Damaris! It was a scrumdiddlyumptious raw Valentine’s Day lunch, and I left with the happiest belly ever in the whole world.

Course #1:

IMG_3641

Beet It juice (beets, carrots, swiss chard, apple, and ginger) alongside the Apple Curry Salad in a Collard Wrap (apple, carrots, celery, avocado, tomato, cucumber, sunflower seeds, raisins in an orange curry sauce) and a Carrot, Beet, Raisin salad.

IMG_3644

This was to. die. Give me anything with sunflower seeds and raisins and I will love you forever.

IMG_3645

Devoured and sufficiently made a giant mess out of. I am a messy eater🙂

Course #2:

IMG_3646

Almond Ginger Nori Roll (almonds, ginger, marinated veggies in Tamari (wheat-free soy sauce), garlic, miso, spinach, avocado, sprouts).

IMG_3649

Beautiful, delicious. I absolutely hated it;)

IMG_3653

I told you I’m a messy eater!

If you don’t believe me my sister took a picture, don’t look at my face I look icky that is not my good side.

IMG_3654

I am sorry you had to see that. But let’s be honest you guys love pictures of me stuffing my face🙂

Then came DESSERT!

Course #3

Raspberry Ganache Cake and Strawberry Macaroons.

IMG_3657

Words cannot even express. Why have I not had raw macaroons sooner?! These were so good, I usually am not a big fan of the co-co-nut, but these turned me from a coco hater to a coco LOVA.

So freaking good, it was like a strawberry milkshake on crack but better because it is solid.

And this Raspberry Ganache Cake…can I just say my life has been changed forever. This was the most delicious, rich, and perfectly chocolatey cake I have ever had.

Perfectly sweet, and perfectly bitter.

Fudgy, thick, and scrumdiddlyumptious. I swear she put crack in this cake, the lady next to me couldn’t finish hers so I finished it for her:)

IMG_3663

I am recreating this cake for next weekend’s Indulgence Friday, so get excited:)

CGB Bathroom:

Okay the bathroom at the brunchy brunch was creepy, ghetto, and in a basement. Hence, CGB.

IT WAS SO COOL.

Have you ever seen the Blair Witch Project? You should. The corner the guy stands in at the end…yeah, this basement looked exactly like the house. I swear to bejeezus it was filmed here.

Normally this would freak the sugar out of people, but instead I was basically hopping up and down as Sacha was warning me about the creep factor.

Little did she know, I am a crazyins and this was like Christmas Morning. I am a sucker for crazy stuff.

Yesterday’s Look:

Then, I came home and whooped some schoolwork, then headed off to a new youth group with my sister, and it was so. much. fun. These people are as crazykins as I am, so you can imagine how skipdiddlydoo happy I was.

One kid hugs everyone, gave me candy, and counted the number of colors on my shirt with me.

By the way, yesterday’s outfit was ADORABLE, but I was too busy eating at the lunch to get a picture of myself besides the one of me stuffing my face, so here is a mirror shot:

IMG_3690

Everything is from Forever21, I am obsessed. It is all cheap and cute, aka the perfect place for a cheapo like me🙂

Then I came home and ate food bigger than my house, and watched the Grammys. Did anyone else giggle when they saw Lady Gaga’s outfit? I did:)

Go wish Janae a Happy Late Birthday!! She got a crazy hot treadmill, one day I will find a man that will buy me awesome toys like that.

If you happen to find one, feel free to forward him over to chefkatelynsmanofherdreamssweepstakes@valentinefinder.com. Please and thanks:)

That’s all for today lovies! Have a rockin’ Valentine’s Day, whether you’re single and mingling (like me) or spending time with your significant other🙂

I leave you with this, my friends:

mawwiage-mawwiage-princess-bride-demotivational-poster-1226681640

Hahahhaha. Kaybye:)

How are celebrating Valentine’s Day? Or if you hate Valentine’s Day, tell me why you absolutely hate it and we will curse all men together:)

LUNCH, and I love Valentine’s Day, it reminds me of elementary school when we would make “mailboxes” out of shoe boxes and decorate them and get tons of valentines and candy:)

Did you watch the Grammys? Thoughts?

Yes, I am never going to see Never Say Never. Justin Bieber used to be adorable when he was still YouTube’ing and undiscovered, but now it is just toomuch. SLash I love Lady Antebellum:)

Do you eat in church too?

Yes, I cannot go more than 2 hours without food, I would start gnawing on the Bible.

My Milkshake Brings All the Boys to the Yard

Good morning booboos! I hope everyone had a rockin’ Indulgence Friday Smile

(ew, sorry for the baby talk, I am writing this at approx. 11:45 PM because I am all chocolateified-up from the recipe I am going to reveal to you, but of course I will schedule this to post in the morning so you all don’t think I’m a crazykins even though you know I am one) <—my grammar is really good, can you tell?

Mine was spent eating and watching Lie to Me and Glee on Hulu.

Can I just say that Hulu is the best invention ever, I think if I could pick one birthday present it would be to have unlimited access to Hulu and all shows on demand fo FREE because I am a cheapo.

Actually that is a lie, I would want a lifetime supply of raisins and a juicer because I am too cheapo to buy one for myself.

Slash I think I will have to do a whole post on my obsession with Hulu and all of the wonderful things it brings into my life, keep your eye out for that one, I have a feeling it will be a this-will-make-you-pee-your-pants kind of post.

—————————————————————————————————

First of all, I have to say that my Grandma is the cutest thing in the world, I love her and it makes me all warm and fuzzy inside when she sends me cards (especially when she sends me a whole dollar, that makes me jump for joy because I can buy penny candy at Walgreens:)).

IMG_3613IMG_3614

It makes my heart smile:)

If you imagine me with my excited face you will understand the emotion that comes with cards from my Grandma, she is the cutest woman alive, I mean look at her!

IMG_0386

Just TRY and tell me that is not the most adorable woman you have ever seen, I dare you. She is even more of a munchkin than I am clocking in at about four foot something or other and it makes me feel tall:)

IMG_0387

What a cutie patootie!

—————————————————————————————————

So, since it was Indulgence Friday, I obviously had to make some yummy deliciousness. This time it came in the form of an old frosty favorite, healthified.

IMG_3602IMG_3604

As a kid, did you ever have the McDonald’s chocolate milkshakes? I used to LOVE those things, but they were so sugar-laden and full of fat that my smart parents only let me have one once every few years (yes, years).

As a child, I didn’t exactly appreciate this lack of ice creamy deliciousness, but now my cholesterol can thank them:)

And now, your cholesterol can thank me!

IMG_3601

Healthified Chocolate Milkshake

Slightly sweet with a mild banana flavor, this milkshake tastes just like (and better!) than its not-so-healthy counterpart.

Makes one large shake.

Ingredients:

  • 1 cup unsweetened vanilla almond milk (or milk of choice)
  • 1 frozen banana
  • 1 heaping tablespoon raw cacao (or cocoa/carob powder)
  • 1 tsp. vanilla extract
  • 1/4 tsp. stevia
  • 2 giant handfuls of ice
  • Cacao nibs, chocolate chips, more cacao powder (for garnish)

Directions:

  1. Combine milk, banana, cacao, stevia, and vanilla in your blender on its highest power.
  2. Add ice cubes, a few at a time, while the blender is running.
  3. Pour into a (large) glass, and serve immediately.

I garnished mine with more cacao nibs, but chocolate chips, cacao/cocoa/carob powder, or fruit would also be delicious!

IMG_3603

And the best part? If you use raw cacao, the entire smoothie is completely raw!

Chocolate craving: satisfied.

—————————————————————————————————

I have been getting some questions lately about my raw habits as of late, and I’m not going all dehydrator on you guys (even though I would absolutely love to have one, but then again I am too cheapo to buy one), but I am eating all of my fruits and veggies raw (besides brussels sprouts, which I lightly steam), as well as eating sprouted grains and beans.

However, I am also eating lots of cooked goodness like beans (hummus!) and quinoa and amaranth. And surprisingly, it’s so much easier than eating all cooked food! The prep time is so much smaller, and I feel so rejuvenated every time I eat:)

Also, please do not be offended if I do not respond to comments very quickly! I have addressed this before, but I just feel so bad and I love you all so much! I am getting back to comments and e-mails as quickly as possible, but the student life ain’t easy:) I’m a busy bee, chickadees!

On another note, it made me giggle and smile ear to ear to hear that some of you are catching onto my catch-phrases! (like bloggity blog, lazy-loo, snackety snack, sprouty sprouts..you get the idea) Keep spreadin’ the CK Vocab love, boos!

That’s all for this morning love doves! I’m off to hit the gym and then get some work done. Have an awesome Sattyday! Smile

Does chocolate make you hyper?

Yes, do not get around me after I have had some chocolate unless you are looking for a party.

Are you obsessed with Hulu? What are your favorite shows?

Lie to Me, Glee, Greek, Desperate Housewives, and Grey’s. And OCCASIONALLY The Bachelor if I’m feeling extra indulgent:)

What is your favorite flavor of milkshake?

Chocolate, hands down. Vanilla and strawberry are just gross.

Do your grandparents send you cute cards?

Yes, I keep every single one of them, they make me smile:)

Survival 101

Good morning chickadees, and HAPPY INDULGENCE FRIDAY🙂 I hope you’re all as excited for the weekend as I am!

I loved hearing about all of your gardening skills (or lack thereof;)), as well as all of your favorite foods!

Update: my sprouty sprouts have sprouted! The quinoa is absolutely delicious and fresh-tasting, and the beans are crunchy crunch. Success!

So, I’ve had a couple of crises over the last couple of days.

Allow me to explain.

Crisis #1:

Most of you probably heard my distress call on Twitter recently:

twitter

Uh yeah, at approx. 9 PM, my furnace decided to kick the bucket.

So, what do you do when your thermostat says 62 degrees Fahrenheit and the Isaac heating guy won’t be getting there until after midnight?

You make yourself a hugh jass pot of tea and put your redonkulously thick sleeping bag under your sheets and two blankets.

IMG_3600

That would be the BEST sleeping bag known to man. Go find it, it is made by Coleman and the inside is made of flannel:) Yeah, flannel.

This thing is so comfy and warm I had absolutely no problem NOT taking it back up to the attic once the furnace was fixed. It is like a cocoon. You do not mess with something that comfy.

Crisis #1: averted.

Crisis #2:

Mother Nature’s monthly gift was having me craving carbs and chocolate like a beeyotch.

So, what do I do?

Eat a million bananas and have a Hot Chocolate Cookie Dough Bowl for breakfast.

Duh.

IMG_3598

Whoever said chocolate was a dessert was seriously misinformed. Chocolate for breakfast is ALWAYS okay:)

I made the usual mix with a serving of sprouted quinoa instead of the oats, raw cacao instead of the Chocolate Amazing Grass, and added a teaspoon of freeze-dried acai powder.

Topped with bloobs, rasps, and tons of cacao nibs.

Chocolate craving: satisfied:)

Crisis #3:

We were all out of raisins. For a WHOLE TWO DAYS.

If you’re new to the bloggity blog, I have a raisin addiction. They are more of a staple in my diet than vegetables.

I literally eat redonk amounts of them every single day, typically at every meal and usually combined with hummus, quinoa, and balsamic (try that combo now, you can thank me later).

I don’t think I have ever been in such dire need of a certain ingredient in my entire life, I was freaking out and quite sure that the world was going to end on the day that I ran out of raisins (since having three giant containers of them in my pantry is never enough).

So, I tried to sub chopped prunes for the raisins in my usual quinoa-hummus-balsamic bowls.

It was awful.

DO NOT TRY THIS AT HOME PEOPLE!

But it’s not like that stopped me from going to town on a container of prunes (not mixed with quinoa, hummus, or balsamic, no worries:)).

Lesson learned: nothing can ever replace raisins, do not be fooled by the dried-fruit nature of prunes and dates, they are posers.

Crisis #4:

Having the sniffles and being tired is no bueno.

So, what do I do?

Make a hugh jass green smoothie (tutorial coming soon!) and a salad beasty, add some delicious hummus-quinoa bowls, and call it a day.

IMG_3363

IMG_3340

Sorry kiddos, ugly picture but at least it tasted good:) Besides, fugly food is always the yummiest, right?;)

Topped with hummus because it is the best salad dressing.

Spinach topped with artichoke hearts, red pepper, carrots, and hummus.

Oh, and that napsky I took might have helped a little too:)

Did I mention I love my vaporizer?

IMG_3218

Steaaaaam:)

Lesson learned: a green smoothie and a salad beast a day keep the doctor away:)

—————————————————————————————————

That’s all for this morning lovlies! Indulge big tonight, and I’ll bring you a deliciously decadent recipe, so stay tuned!

Has your furnace ever broken? Did you layer a million blankets like I did?

Yes, please do NOT remind me, I was cuddling with my space heater basically.

What’s your favorite way to tame a chocolate craving?

Hot chocolate, chocolate mousse, anything topped with chocolate chips:)

How do you beat the Mother Nature’s Monthly Gift blues? Or if you’re a guy, how do you treat your girlfriend like a princess when she is acting like a poopy grumplekins?

CHOCOLATE, tea, sleep, and Hulu!

Let Your Garden Grow

Good morning love doves! Happy almost-FridaySmile

I’m so glad that y’all love carbs as much as I do! In case you missed it, I wrote a poem for carbs. You should probably check it out. You might pee yourself.

Just sayin’.

AAANYwho, ever since I’ve been going high-raw, I’ve been interested in funky sounding things like…sprouting.

So, I decided to take it for a whirl and try it for myself!

IMG_3567

Black quinoa and azuki beans.

IMG_3568

First, I soaked them both (uncovered) in their jars overnight.

Then, I covered each jar with a piece of cheesecloth, rinsed the quinoa and beans (to get rid of the digestive inhibitors that are released during soaking), and then propped the jars up at a 45-degree angle in a pan.

About every few hours, I rinse them and invert them again. This keeps them moist so the sprouty sprouts do their growing! Smile

IMG_3571

See the little bean sprout? ^^

Can I just say that sprouting is SO fun. I love seeing the little sprouties do their thang!

WAY more entertaining than cooking in a pot, let me tell you.

I feel like a gardener:)

And I love the crunch of sprouts – it’s so refreshing.

IMG_3569

IMG_3578IMG_3583IMG_3586

Want to try sprouting?

Here are some tips to get you started!

IMG_3588

Sprouting is a great method for the lazy-loos (like me), and those that like crunchiness.

The main appeal of sprouting, however, comes from the fact that everything remains raw and it much more easily assimilated in the raw, sprouted form.

The digestive inhibitors are released and washed away, and the starches, fats, and proteins are converted into their simplest, most easily digestible and usable forms.

That means less stress on your digestive system, and more energy for you to kick toosh on the Dreadmill!

Plus, I can never get enough crunchy goodness.

Have you ever tried sprouting?

YES, this is fun:)

Do you have a garden, or do you grow any of your own plants?

No, I am a lazy-loo, but in the spring I might bust one out:)

What are your favorite grains/beans/nuts?

For grains, I luuurve quinoa and amaranth. Garbanzos because of hummus, but azuki because they are yummy. And almonds are my favorite!:)

That’s all for this morning loves! Have a great Thursday Smile

My Healthy Dose of Awkward

Okay so before I get to my recap of the SCRUMDIDDLYUMPTIOUS raw brunch, I must let this out.

Three awkward things I did today:

  1. In the shower, I accidentally put conditioner on my face, thinking it was face wash. No bueno. I mean, how does that even happen? Maybe it was because I was singing Raise Your Glass at the top of my lungs and hair was the last thing on my mind? Oh, and I was singing it just like this:

I love Pink, she is a MONSTA

  2. After said musical distraction, I proceeded to blast that very song as well as Hey Baby and Like a G6 (somehow I never get sick of either of those songs). And I danced. My hair is now dry, THANK YOU awesome dancing skills of mine. I wish I had a picture of this but no one on the internet needs to see me pop lock and droppin’ it!
  3. I licked my plate clean. Which caused some of my lovely new friends to laugh hysterically and announce they need to take a picture IMMEDIATELY!

IMG_3417Me and all of my friends. Actually, they were all crowded around the photographer and laughing. I am toomuch:)

Wait, I like this picture better.

    IMG_3418

    Yurp, HOTTAY

Why am I so pale? Summer, please come back!! I don’t believe in paying for skin cancer so I refuse to use tanning beds. Bronzer is no longer sufficient. Anyone want to go someplace obnoxiously sunny and warm? It is cold in New York and I would like some sun.

  4. Okay, I lied. Number four is that I am typing this while still in my bathrobe because I absolutely had to write this post right now. Face it people, rambling just can’t wait!

Okay, now onto WHY I was licking my plate!

Firstly, I have to thank Christine, the owner of Wellness Within, for hosting this awesome event! She is a sweetheart, I can’t wait to work with her more!

IMG_3400Sorry, Color Pop on LiveWriter makes us look orange. At least I look less pale:)

She has such a great business going, and is expanding soon! If you are in the area, definitely take the snowy drive out to her store on the beautiful (and hoppin’) Park Avenue. I wish I could get out there more! (p.s. if you’re in the area and want an awesome restaurant, GO TO PARK AVENUE!)

Onto the FOOD.

Despite my full belly from breakfast, I was more than happy to stuff my face with raw goodness.

Crepe #1.

IMG_3414

Amazeballs.

Above is the apple crepe with peaches, blueberries, and a vanilla crème. And a cinnamon roll🙂

Both were delicious, I scarfed this down in about 0.2 seconds, along with a small bowl of fruit, resulting in this:

IMG_3416

Devoured and licked clean with a big smile on my face:)

I LOVE FOOD.

And green juice. This was absolutely amazing, I wish I wasn’t so cheap and would buy a juicer but hey at least my birthday is coming up soon! (aka this summer, not soon, but EVERY DAY is my birthday in my mind since every day is awesome)

IMG_3391

I might be wrong, but I believe this was romaine, celery, cucumber, and parsley. SO good, I love veggies, this was sweet enough it didn’t even need anything else:)

Next up was the banana crepe con a chocolate hazelnut crème sauce, banana slices, cacao nibs, and chocolate hazelnut milk.

IMG_3389

I praise the chocolate gods for this one. And the lovely and amazing Damaris! She is an incredibly talented chef.

IMG_3410

Chocolate banana crepe also enjoyed by Dakota! I am so glad I met this girl, she is a sweetheart and is gorgeous, she should model! (and I heard she makes a mean raw lasagna…cook make food for me please?)

IMG_3383

And the adorable Autumn Ray! (I think that’s how you spell it? Sorry if I butchered it!!).

IMG_3390

I got her mid-bite! Sorry girl;)

Next up were more cinnamon buns and a blueberry pancake! Ahhhhh holy yumsky.

IMG_3397Plus a crème sauce that I wish I knew what was in it but it was so good I could care less. Another plate LICKED clean.

IMG_3403

If I could eat pancakes every single day of my life I SO would. In math class two years ago on Pi Day (yes it’s an actual day), we had pie WEEK and every single day someone brought a pie or some amazingly delicious dessert that somehow turned into my lunch every day that week.

In honor of Pie Week and my love for pancakes, we should have a national blogger pancake week with crazy creative pancake recipes for ALL meals! Who’s in?

Behind the scenes:

IMG_3406Damaris and Sasha (or Sacha?) making pure MAGIC. Magicians, I tell you.

IMG_3408Dehydrator action.

Group shot!

IMG_3419Such beautiful ladies! I can’t wait for the next event, apparently they have them twice a month! I can’t wait for my fill of yummy raw food to devour:)

Again, sorry about looking like carrots… I hated the pale version so deal;)

Damaris, Sasha, Dakota, Autumn, or any of yous that attended, if you want the original picture (aka not carrot-y), shoot me a comment and I’ll e-mail it to you:)

p.s. Damaris, if you’re looking into being a personal chef PLEASE COME BE MINE. I’ll pay you in smiles and lots of licked plates. Deal?

Okay now I am going to go curl up in my turtleneck and granny sweater by my space heater and study my brains out, making this face:

IMG_3324

Please say a prayer for me, I might not make it through the sea of heavy textbooks, notebooks, and flashcards that I am currently drowning in. I HATE midterms week. Did you know that teachers hate it as much as we do? Yeah, let’s abolish it.

What awkward thing did you do today?

I licked my plate clean. Shoo, I do that every day! Except it’s usually a bowl because I hate plates, bowls are awesome and can be filled high with lots of delicious goodness.

Do you pledge to make a [crazy awesome] pancake recipe? (please say yes) If you do it, post the recipe in a comment or on your blog and link back!

YES now I have to post a crazy awesome pancake recipe, good thing breakfast is my favorite meal of the day!

What’s your favorite way to eat pancakes?

With almond butter, fruit, apple spread, and some sort of chocolate. Cacao nibs, please:)

What’s your take on raw food?

I’m in love. Raw food has made me feel even more energetic than usual and everything tastes better than it used to!

Slash I may have eaten a king’s sized meal (read: this brunch plus snackage) and then attempted to bust out an awesome work out but totally failed with an achey tummy. Too much fat and protein all at once, my stomach is not happy with me. But it was so good that I don’t even curr, I’d take food over exercise any day:)

p.s. I have eaten 100% raw so far today, I am super pleased with myself.

See you later boos!

Simplicity at its Finest

I love the farmer’s market. We picked up enough produce to sink a ship (aka, the usual 🙂 ), and got some beautiful heirloom tomatoes! I’ll put up a picture tomorrow, they are so photogenic. They sold them in a variety pint, so we have lots of fun shapes and patterns to choose from. I can hardly bring myself to eat them! I wonder if I could do that thing where they freeze people and keep them forever, but with heirlooms…? Wait, stop, that’s totally weird and creepy. Rewind!

After the farmer’s market, I went to the gym and logged in 2 miles on the tread, 30 minutes on the elliptical, then stretching, abs, and arm weights. I love running 🙂 Training for the 5K is going a bit slowly BUT I WILL NOT GIVE UP! That race ain’t got nothing on this girl.

And, of course, my after-workout snack was a yummy-ummy PB & J Larabar. I honestly think Larabars came from the work of a genius, or someone who was awfully hungry and messed up on a recipe, ending up with a sticky, delicious mess. Oh, how I love my Larabars. I always keep Apple Pie, Pecan Pie, and Peanut Butter and Jelly in my house. Don’t waste your money on Clif bars; always go for the raw energy bars! They almost always have 3-5 ingredients that are totally organic and unrefined. Nothing better than that.

Once I got home, I whipped up a ton of hummus. Probably enough to last a week or more. Did I mention I love hummus?

My quick recipe:

Hummus

(Adapted from 1000 Vegan Recipes by Robin Robertson)

Ingredients:

  • 3 cups cooked chickpeas, or 2 (15.5-oz.) cans
  • 6-8 garlic cloves, minced (I roll with eight)
  • 1/2 cup tahini
  • 1/2 tsp. sea salt
  • 1/3 cup water (may or may not be necessary)
  • 4 tbsp. lemon juice (I like more)
  • 4 tbsp. EVOO

Directions:

  1. Put everything in a food processor and puree until smooth. Enjoy! 🙂

So, why did I need to make so much hummus? I’ll tell you. Tonight we had 2 giant eggplants sitting, beckoning for me to cook them, so we made an almost-raw, super simple lasagna. But be warned, this is totally untraditional and can barely be called lasagna, but it was SO good!

My dinner:

Kale salad with avocado, leftover millet salad with cooked mushrooms, leftover roasted green beans, and the eggplant lasagna 🙂

For dessert, we had the Ooey Gooey Brownie Muffies from last night, nuked in the microwave for about 1 minute for ultimate gooeyness. They were so perfect and melty, and of course we had to have some vanilla nice cream with them. Mmm 🙂

But first, dinner!

Eggplant Hummus Lasagna

(Adapted from Opera Singer in the Kitchen’s Vegetable Lasagna)

Makes a casserole-dish sized lasagna

Ingredients:

  • 2 eggplants
  • 1 cup hummus

Directions:

  1. Slice each eggplant lengthwise into about 1/2-inch thick slices. Rub both sides of each with sea salt and let sit in a colander for about 30 minutes.
  2. Rinse slices and pat dry, then rub both sides of each with some olive oil.
  3. Grill slices until softened (grill pans and indoor grills work just as well), flipping after checking the underside and seeing grill marks.
  4. Arrange one layer of grilled eggplant on the bottom of the pan, then coat with the cup of hummus, spreading evenly. Lay the rest of the slices in another layer on top, then serve warm or cold.
  5. So simple but so yummy! Enjoy 🙂

Did I mention that we don’t have a grill? Well, not a real one anyways. The only one we have is an electric indoor one that’s completely old school, but I love it!

Kickin' it old school

Assembly: not so pretty, but so yummy 🙂

Question of the Day: What’s your favorite simple recipe?

I’m excited to hear your responses 🙂 One of mine definitely has to be almond butter and apple spread on Ezekiel bread. So quick, easy, yummy, and healthy! Whole grains, nuts, and fruit with no added sugar. Holla at that!

Time for me to go to sleep! I am so tired from my busy busy day today, and tomorrow I get to go to church and really unwind. It’s like yoga without a mat! Stretching out my spiritual muscles.

I’ve been working on a post about disordered eating, guilt, and other weight- and health-related matters, so keep an eye out for that 🙂

Also, one of my favorite bloggers, Chocolate Covered Katie, is having a recipe book giveaway, so this is me linking back to her blog and telling you to go check it out! Her posts are always so fun and always make my day a little more spectacular. Check her out!

Goodnight lovlies 🙂

Katelyn
