Like an Animal

Good morning loves!! How are you?

I am excited/nervous/confident all at the same time. Why? Because my road test is at 11 a.m. So at that time please say a prayer and cross your fingers for me:)

Since I am SWAMPED with work and dying to make some squeezy (my word for juice), I leave you with this:

Run easy is an oxymoron. What is it about running that scares people so much? Why do people feel they have to put friendly modifiers next to running so everyone can feel good about it? Well, here’s the ugly truth. Everyone shouldn’t feel good about running. It’s hard. It hurts. Running requires sacrifice and heart and guts. Any attempt to water it down with feel-good adjectives is a slap in the face to those of us who still hold running sacred. In fact, if you’re running easy, odds are you’re not running at all. You’re jogging. So do us all a favor, don’t run easy. Run hard. Run like an animal.”

I’m going to run like an animal today. Are you?

Sun Warrior Protein Socca + Carrot-Almond Macaroons!

Gooooood morning bloggy boos! How are you?

I am sleepy weepy. Thank GOODNESS third quarter is over, I can now offich say I am a fourth quarter senior! It is allll smooth sailing from here:)

Thank you for all of your college stories and tips on going to college and roomies! You guys are so insightful, and it’s making me even more excited to go off to school in the fall!! (and meet my roommate on FridaySmile)

Yesterday was spent in an awesome workout at the gym where I ran into a couple of friends and Lisa (haha as per the Friday uge). We talked for about an hour and a half on the bikes. Time flies when you’re having fun:)

Anywhos, since yesterday was Indulgence Friday, I indulged in a little of sitting on my batooty. Aka, I came home, ate, watched Biggest Loser and House (any fans out there? Holllaaa at me!), then went to sleep.

This morning will be spent on a gorgeous canal run, crossing my fingers that it does not rain/snow/hail/cats and dogs! Gotta love Upstate New York. <— Do you sense my sarcasm?

So as you read this, I will be hitting the pavement with my new baby (who is still yet to be named). Any suggestions?? The first new baby has been affectionately named Darren. Ob. sessed.

But since you all are most likely tumbly grumbling for a new recipe, here are TWO. One is super simple, and the other requires some fun ingredients.

Last week, Lisa and I got together for a food date before our kick-toosh spin class (we have agreed that if we were guys, we would completely have a crush on our spin teacher. weird? don’t answer that).

First we made jooooose…

Yes, that is a whole Vita-Mix full of juice. And yes, it is completely poss to drink all of that (except we didn’t…they should make juice-drinking competitions for health champs like usSmile).

Served in wine glasses, as uge.

It’s like looking for animals in the clouds, except juice tastes way better than air. Just saying:)

‘Twas a kitchen sink juice with carrots, cilantro, lemons, celery, kale stalks, dandelion greens, ginger, red pepper, and lawd knows what else. It was delish and hit the spotsky Smile

Then we made Sun Warrior Protein Socca with sprouted LENTIL flour. Socca without garbanzo beans?! Say whaaaa?

You heard me right, and chickadees it was so good. Topped with Sunflower Seed Butter (my obsession) and leftover Acai Pomegranate Chia Seed Jam.

Oh and coconut, coconut butter, and cacao nibs because it was completely necessary.

Ob. sessed.

Sun Warrior Protein Socca

Makes 2 small servings, or one large portion.

Ingredients:

  • 1/2 cup sprouted lentil flour, or other bean flour (a la vitamix)
  • 2 scoops vanilla Sun Warrior
  • 20 drops vanilla stevia
  • 1 cup water (not sure on this measurement–best to go by texture and add gradually)

Directions:

  1. Mix all ingredients in a bowl or Vita-Mix.
  2. Heat a frying pan and add a tablespoon or so of extra-virgin coconut oil. Add batter in small amounts at a time.
  3. Cook like pancakes until cooked through.
  4. Top with your toppin’s and enjoy!

I think we downed this whole batch in two minutes flat and then ate some ‘roons later.

Roons say whaaaa? Get at me kiddos because this is the simplest, healthiest thing in the world. You’re going to wonder why you didn’t think of this biznazz.

I present to you,

ALMOND Carrot Balls!

Or if you want to sound fancy you can call them ‘roons. Whatever floats you boat:)

Carrot-Almond Macaroons

Ingredients:

  • 3 cups of carrot pulp (or squeezed, blended/shredded/processed carrots)
  • 2 cups ground raw almonds
  • stevia or other sweetener to taste (if desired)

Directions:

  1. Make your carrot pulp, and grind your almonds.
  2. Combine the two in a large bowl and pack down. Add sweetener to taste(such as stevia, yacon, lucama, agave, maple syrup, or blackstrap molasses).
  3. Shape into balls or macaroons (with a melon baller). Eat straight up, or dehydrate for a few hours and enjoy as macaroons.
  4. Enjoy!

First, you take some carrot pulp (from your juicer), or simply put carrots in the blender and then squeeze out the moisture with a cheesecloth.

Then you grind up a ton of almonds, and combine the two! Shape them into balls and eat them that way (absolutely delicious) or dehydrate for a few hours and eat them as macaroons.

Our next project is to dip them in dark chocolate and melted coconut butter!:)

Bressert Kale Chips + My New Baby!

Good morning love doves!! How are you?

I have had the best. weekend. ever so far. Started off with a gorgeous run, a get-together that MAY have lasted past two a.m. and involved Chubby Bunny, brunch with this lady including tons of juice, waffles, and our new food revolution:

In case you were wondering, it’s breakfast and dessert put together. And these are amazing. As we were discussing what to make for brunch, I said, “I wonder if anyone has ever made sweet kale chips?”

So both of our jaws dropped and Bressert Kale Chips were born.

We decided on making Vanilla Cinnamon-Raisin Bressert Kale Chips…

Vanilla Cinnamon-Raisin Bressert Kale Chips

Ingredients:

  • Kale
  • 1.25 cups cashews, soaked overnight
  • 1 cup water
  • Cinnamon (1-2 tsp.)
  • Raisins
  • Vanilla Stevia drops (about 20)
  • Maple syrup or agave to taste

Directions:

  1. Blend cashews and water, then add all ingredients but raisins.
  2. Add raisins and stir to combine after blending.
  3. Completely massage into chopped kale with mixture and dehydrate overnight.
  4. Devour.

You cannot even taste the kale in these. It is absolutely redonk, and absolutely delicious. I have no idea why this has never been done before, but I have to say I have never been more impressed with a recipe idea in my entire life.

Oh and we also ate the entire batch of the Chocolate Bressert Kale Chips. Chocolatey deliciousness? Yezzir:)

Chocolate Bressert Kale Chips

Instructions:

  • 1 cup water
  • 1 cup cashews (soaked for a few hours)
  • 20 drops Cocoa Bean Extract (I love NuNaturals)
  • 1tbsp cacao powder (or you could use carob)
  • 1/4 cup maple syrup (local!)

Directions:

  1. Blend cashews and water, then add all other ingredients.
  2. Completely massage into chopped kale with mixture and dehydrate overnight.
  3. Devour.

Smiles all around:) We ate the entirety of both batches.

Why we are such culinary geniuses, I have no idea.

So besides the fact that we both ate our own weight in kale chips (at least a cup of cashoos each..I wish I was joking), we also had to have some spritzers (no, madre and padre, no need to worry about alcohol).

She made juice in her rockstar GREEN STAR juicer, it is gorg. It included beet greens, dandelion greens, beets, lemon, parsley, green apple, carrot, and celery.

We combined it with Ginger Ale Zevia for bubbliness and to cut the bitterness:) But I am pretty sure it was just another excuse for us to use Zevia.

Most people would say this looks narsty but I would like to disagree and say it looks scrumdidlyumptious. I espech love the bubblies that the Zevia makes. Doesn’t it look like chia seed gel?!

But no brunch is complete without breakfast foods. Like waffles that taste like cake.

Sprouted buckwheat pancakes with sun warrior, cashoo cream, dehydrated buckwheat/coconut/chia cereal, raspberries and blueberries, and pomegranate juice chia seed gel.

Delicious. Very filling. But not for long:) Lisa and I have the same appetite clock, we both were “mouth hungry” as we like to say, and so we had a second brunchy brunch. Another waffle each, except it started as only half:)

We can never eat just one!

Oh and in case you were wondering, kale chips are REALLY good on top of waffles. Like the kind of good when you would put potato chips in your sandwich as a kid. Except WAY healthier!

The Big Surprise: My new baby!

The other day, Lisa tweeted that she had a surprise for me. And when it comes to surprises I absolutely LOVE them but I hate waiting to find out what it is!! It drives me semi-crazy, but in a good way.

And Lisa completely made my day year. My babygirl gave me a JUICER!

Lisa has officially won her spot as a bridesmaid in my future wedding. I have never been so happy in my life:)

I have not yet decided what to name her. My Droid is named Lulu, my computer Adele, and my iPod is Celeste. Any name suggestions?

Yup it’s love. Ignore the hair, it may have to do with the fact that I was out until two last night and didn’t exactly shower this morning. No comment.

At least I brushed my hair🙂

Anywho, with this new baby I had to do some juicin’. And it was delicious. I am in love, it is so much simpler than my blender and much quieter. My blender sounds like a monster waking up every morning.

Don’t come within 100 feet of my house any morning between the hours of five and nine, your ears may weep.

The afternoon and evening was spent with one of my biffs chatting and eating salads and a Quinoa-Hummus-Raisin-Balsamic bowl. Praise sweet baby Jesus, I had not had one all day and it tasted SO good:)

Get ready for some more surprises coming soon:) I have exciting things coming in the mail for me and I cannot sit still in my seat, I can’t wait for them to come!!
